FRENCH TOASTED HOT DOG BUNS
Whether you're out of loaf'ed bread or just want to make a special variation on this classic breakfast: hot dog buns are the bomb (at least according to one cool kid).

Steps:
- Pre-heat an oven to 150 - 175 degrees.
- Heat a pan & coat it in butter.
- Mix Eggs, Milk, Vanilla Extract in a square bowl (for dipping).
- Cut the buns on their seam, so you have 8 pieces of bread.
- Dip each bun half in the mix & then drip excess mix back in to bowl
- Place each bun half about an inch apart on your pan.
- Sprinkle Cinnamon Sugar on each side
- Then place the finished pieces on a cookie sheet in the oven (this will keep'em warm and make them nice and crispy).

CANNOLI-STUFFED FRENCH TOAST NUGGETS

Steps:
- In a small bowl, combine ricotta cheese, chocolate chips, and 1/2 teaspoon vanilla extract, and sweetener, and mix well.
- Split hot dog bun open lengthwise, without fully separating the 2 halves. Spoon ricotta mixture onto the bottom half of the bun. Gently press the top 1/2 down over the filling. Carefully slice into 4 "nuggets."
- Mix egg substitute, cinnamon, and remaining 1/2 teaspoon vanilla extract in a small bowl. Set aside.
- Bring a skillet sprayed with nonstick spray to medium-high heat. Add butter and allow to coat the bottom of the skillet. Meanwhile, coat each nugget on all sides with the egg mixture. (You won't need to use all of the egg mixture.)
- Once butter has melted, place nuggets in the skillet and, flipping occasionally, cook until golden brown on all sides, 3 to 4 minutes.
- Plate your nuggets and sprinkle with powdered sugar. Top with syrup, if using. Enjoy!

- In a shallow bowl, beat together all the ingredients except the buns with a fork until well blended. Dip both sides of buns in mixture (note: do not soak in mixture; just dip to cover lightly!).
- Spray a large nonstick skillet with cooking spray; heat over medium heat. Place the buns in the skillet and cook for 3-4 minutes on each side, until browned. Serve warm with syrup.
