French Sodas (Blueberry, Strawberry or Raspberry) image

An Italian soda is a refreshing combination of flavored syrup and sparkling water mixed in a cup of ice. The addition of half-and-half turns an Italian soda into a cremosa/creamosa or French soda. Don't use milk because it will separate. If you've ever purchased either an Italian or French soda, you know how expensive they can be. Make your own!

1 cup sugar
1 cup water
1/2 cup raspberries or 2 cups strawberries
crushed ice
1/4 part berry syrup (recipe above)
sparkling water or seltzer water
half-and-half cream

Steps:

  • Boil the sugar and water until it begins to dissolve. Add the berries and simmer for an additional 15-20 minutes. The berries will turn to mush and the liquid will thicken.
  • Strain over a bowl keeping the juice and discarding the fruit. Cool completely and refrigerate until ready to use.
  • To make a French Soda: Fill a tall glass with crushed ice. Pour over 1/4 part of the berry syrup. Pour over with sparkling water. Add a splash of half-and-half (or to taste). Serve with as straw which is used to gently stir the mixture together.

1 lb strawberry
1 lb raspberries
7 ounces sugar
1/2 pint water (only if using fresh fruit, I use frozen berries, they don't need extra water, just don't drain them)
1 lemon, juice of

Steps:

  • Hull the fruit, save a dozen whole berries for garnish.
  • Liquidize or mash them and pass them through a fine sieve to remove pips.
  • Beat in the sugar until dissolved, add water (if using) and strained lemon juice and pour into a freezing container.
  • Freeze for 40 minutes.
  • Remove and beat with a "silver" or "wooden" spoon and freeze again for 4 hours.
  • Serve in tall glasses.
  • Garnish with whole berries.

1/3 cup sugar
1/2 cup plus 2 Tbsp. flour, divided
2 cups each sliced strawberries, blueberries and raspberries
5 graham crackers, coarsely crushed (about 3/4 cup)
3/4 cup quick-cooking oats
1/2 cup firmly packed light brown sugar
1/4 cup sliced almonds
1 tsp. ground cinnamon
1 Tbsp. butter, melted
1 Tbsp. canola oil
1 Tbsp. water

Steps:

  • Mix sugar and 2 Tbsp. of the flour in large bowl. Add berries; toss to coat. Place in 13x9-inch baking dish.
  • Mix remaining 1/2 cup flour, crushed grahams, oats, sugar, almonds, cinnamon, butter, oil and water. Sprinkle evenly over berry mixture.
  • Bake at 375°F for 35 to 40 minutes or until lightly browned. Cool slightly.
