FRENCH ONION DIP SOUP WITH DIJON AND GRUYERE CROUTONS



French Onion Dip Soup with Dijon and Gruyere Croutons image

This American twist on French onion soup is inspired by the Lipton's Onion Soup Mix sour cream party dip.

4 tablespoons (1/2 stick) butter
4 large onions, thinly sliced
2 to 3 leeks, trimmed, split lengthwise, sliced into 1/2-inch pieces, cleaned and dried
4 shallots, halved and sliced
4 cloves garlic, finely chopped
1 large fresh bay leaf
About 1/2 teaspoon ground thyme
Salt and coarse black pepper
1/4 cup dry sherry
2 tablespoons Worcestershire sauce
5 cups beef stock
1 cup creme fraiche
Crusty French bread (grocery-store, soft-center, wider than baguette, about 3 to 4 inches cut into 1-inch-thick rounds/slices)
Grainy mustard or spicy mustard, such as Gulden's
Sliced Gruyere cheese, for melting
Thinly sliced scallions, for garnish

Steps:

  • Heat a soup pot over medium heat; add the butter and melt. When the butter foams, add the onions, leeks, shallots, garlic, bay leaf, thyme and salt and pepper. Partially cover and cook, stirring occasionally, until caramelized, about 35 minutes. Deglaze the pot with sherry, then add the Worcestershire and stock. Taste for seasoning when it comes to a bubble. Cool and store for a make-ahead meal.
  • Heat the soup and creme fraiche over medium heat until bubbly and thickened a bit. Toast the bread on the middle rack under the broiler; remove and top one side with the mustard and cheese. Return to the oven to melt the cheese.
  • Serve the soup in shallow bowls, topped with scallions and cheesy croutons.

This warm and cheesy dip has all the makings of a bowl of French Onion soup -- but with even more cheese! Serve with toasted bread for dipping, just like you'd find on top of the iconic soup.

6 tablespoons unsalted butter
2 large onions, halved and thinly sliced
1 clove garlic, minced
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1 demi baguette, cut on the bias into 1/4-inch thick slices
1 tablespoon dry sherry
1/2 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
8 ounces (1 bar) cream cheese, at room temperature
1 cup shredded whole milk mozzarella
1/4 cup sour cream
2 tablespoons finely grated Parmesan
1 tablespoon chopped chives

Steps:

  • Preheat the oven to broil.
  • Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the onions, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very tender and caramelized, about 15 minutes.
  • Meanwhile, melt the remaining 2 tablespoons of butter in a small saucepan over medium heat, then brush butter on both sides of the bread. Transfer to a baking sheet. Broil until lightly toasted and golden, about 1 minute per side. Set aside for serving.
  • Once the onions are caramelized, add the sherry and continue to cook until the liquid has reduced completely, about 1 minute. Pour in the beef broth and Worcestershire and scrape any brown bits from the bottom of the skillet with a wooden spoon. Simmer until the broth has reduced by half, about 2 minutes more. Remove from the heat.
  • Stir in the cream cheese, 1/2 cup of the mozzarella, sour cream and Parmesan until smooth and creamy. Top with the remaining 1/2 cup mozzarella. Broil until the mozzarella on top is lightly browned and the dip is bubbling at the edges, about 2 minutes. Top with chopped chives and serve with toasted bread.

1 tablespoon olive oil
2 Spanish onions, sliced thinly
Kosher salt and freshly cracked black pepper

1/2 cup beef stock
1/2 beef bouillon cube
1 teaspoon sherry vinegar
1/2 teaspoon finely minced fresh thyme
1 1/2 cups sour cream
1/2 cup cream cheese
2 tablespoons chopped chives
1 lemon, zested
12 baguette crostini

Steps:

  • In a medium pot, heat the olive oil and add the onions. Season with salt and pepper. Cook over medium heat until the onions start to brown, then reduce the heat to low and cook, stirring often, until the onions are caramelized; this will take between 30 and 40 minutes.
  • Add the beef stock and bouillon cube and simmer until the liquid has been absorbed into the onions. Stir in the sherry vinegar and thyme and season with salt and pepper. Transfer to a medium bowl and set aside to cool completely.
  • Add the sour cream and cream cheese to the onion mixture and stir to combine. Place the dip in a serving bowl and top with the chives and lemon zest. Serve with the crostini.

1 lb crusty bread (French or sourdough in your grocery bakery)
10 1/2 ounces condensed French onion soup
8 ounces cream cheese, softened
2 cups swiss cheese (shredded)

Steps:

  • Mix soup and cream cheese until smooth.
  • Stir in swiss cheese.
  • Spread in a 1 qrt baking dish.
  • Bake at 375 for 30 minutes.
  • Cut bread into chunks for dipping.
  • You can also toast the bread chunks in the oven and then use for dipping.
