FRENCH ONION BEEF AND NOODLES
A skillet ground beef dinner that's ready in a jiff

Steps:
- Heat a large deep skillet over medium-high heat. Add the oil to the pan.
- Now add the ground beef, onion and garlic and cook until the meat is browned.
- Add the cream cheese and stir until it's melted and well blended. Pour in the soup, stock, thyme (if using) and the egg noodles; stir well. Bring to a boil, reduce heat to medium-low and gently boil until the noodles are cooked and liquid is reduced by 50%.
- Stir in the sour cream and top with the French fried onions.

- Spray 3 1/2- to 4-quart slow cooker with cooking spray. Cut beef into 6 serving-size pieces. In cooker, layer half each of the beef, mushrooms and onion; repeat layers. Pour soup over top.
- Cover; cook on Low heat setting 8 to 10 hours.
- In medium bowl, mix stuffing mix, butter and 1/2 cup liquid from slow cooker; toss to mix. Place stuffing on top of mixture in cooker. Increase heat setting to High. Cover; cook 10 minutes longer or until stuffing is fluffy. Sprinkle with cheese. Cover; cook until cheese is melted.

SLOW-COOKER BEEF TIPS AND NOODLES
I don't normally like recipes with cream of ___ soup in them, but this one I came up with is delicious! Definitely easy comfort food! *** Update: I tried this with 1/4 cup Burgundy wine and 1/2 cup beef broth and it was delicious! For a change, try a mixture of wine and broth.

Steps:
- Place beef in the slow cooker.
- Combine mushroom soup, onion soup mix and gravy mix in a bowl until well blended. Stir in beef broth.
- Add mushrooms and onions to mixture, then pour over beef.
- Cover and cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours.
- Cook egg noodle according to directions on package.
- Spoon beef mixture over hot noodles and serve.
