2 large onions, cut into 1/4-inch slices
1/4 cup butter, cubed
1 beef rump roast or bottom round roast (3 to 4 pounds)
5 cups water
1/2 cup soy sauce
1 envelope onion soup mix
1-1/2 teaspoons browning sauce, optional
1 garlic clove, minced
14 French rolls, split
2 cups shredded Swiss cheese

Steps:

  • In a large skillet, saute onions in butter until tender. Transfer to a 5-qt. slow cooker. Cut roast in half; place over onions., In a large bowl, combine the water, soy sauce, soup mix, browning sauce if desired and garlic; pour over roast. Cover and cook on low until meat is tender, 7-9 hours., Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice meat across the grain. Place on roll bottoms; sprinkle with Swiss cheese. Place on an ungreased baking sheet., Broil 3-4 in. from the heat until cheese is melted, about 1 minute. Replace tops. Skim fat from cooking juices; strain and serve as a dipping sauce if desired.

3 lb 1 chuck roast
kosher salt, to taste
freshly ground black pepper, to taste
1 tablespoon olive oil
1 medium yellow onion, sliced
3 cloves garlic
4 cups beef stock
1 tablespoon soy sauce
2 sprigs of fresh rosemary
8 French rolls
4 tablespoons 1/2 stick of unsalted butter, room temperature

Steps:

  • On a cutting board, pat the chuck roast dry with paper towels. Season on all sides with salt and pepper.
  • Set the Instant Pot to sauté and add the olive oil. Once the oil begins to shimmer, add the chuck roast and brown on all sides, about 5 minutes per side. Remove the chuck roast and set aside.
  • Add the onion to the Instant Pot and cook, stirring often, until softened and golden brown, about 3 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute.
  • Add the beef broth and scrape up any brown bits on the bottom of the pot. Add the soy sauce and rosemary and place the chuck roast on top. Place the lid on the Instant Pot and set to pressure cook on high for 1 hour. Let the pressure naturally release.
  • Transfer the chuck roast to a large bowl and shred with 2 forks.
  • Meanwhile, set the Instant Pot to sauteé. Remove the rosemary sprigs and cook until the sauce is reduced by half, about 15 minutes. Transfer the sauce to a bowl.
  • Slice the French rolls open and spread ½ tablespoon of butter over each side. Add ½ cup of beef to each sandwich.
  • Serve the sandwiches with the jus on the side for dipping.

3 lbs sirloin roast beef
freshly crushed pepper
1 (34 g) envelope knorr demi-glace gravy mix
3 (10 1/2 ounce) cans consomme
2 cups water
6 French rolls

Steps:

  • Add lots of pepper to roast.
  • Sprinkle with 1/2 of the Demi-glace mix.
  • Place roast uncovered in 400* preheated oven.
  • Cook for 1 hour. Turn oven off; let sit another hour in oven.
  • Remove from oven and let sit 1/2 hour.
  • Store drippings from the roast to add later.
  • Thinly slice the roast. If serving the next day, place covered in refrigerator.
  • Do not worry if your meat is no well done it will keep cooking in the broth.
  • To serve:.
  • In slow cooker heat up, consommé, water,remaining Demi-glace and drippings from roast on High. Add beef slices.Let it sit until it is ready to eat.
  • To serve remove beef from au jus and place in a bowl.
  • Ladle au jus in individual containers for each guest to dip his sandwich.

4 tablespoons dry onion soup mix (Liptons)
3 cups water
2 teaspoons instant beef bouillon
1 lb finely sliced deli roast beef or 1 lb of your own cooked beef
4 large italian buns or 4 large portuguese buns
2 tablespoons butter
2 tablespoons horseradish, freshly processed (or more)
salt and pepper

Steps:

  • Process dry onion soup mix in a coffee grinder until fine.
  • In a one quart microwave safe casserole dish or glass measure, add water, instant beef bouillon and dry onion soup mix.
  • Microwave on HIGH (full power) for 4 to 5 minutes until mixture has fully dissolved, stirring at least once.
  • Remove, cover and set aside to keep hot.
  • If you are using your own cooked roast beef, use an adjustable mandoline set on very thin, slice the amount of meat as required. You may also use a very sharp knife to slice the meat very thin.
  • If you desire the meat warm, place the thinly sliced meat on a micro-safe plate, cover with a paper towel and microwave on MEDIUM-HIGH for 1 to 2 minutes or until meat is just warm.
  • Cut buns partialy through lengthwise, leaving a hinge.
  • Butter each piece and spread some horseradish over each half.
  • Layer warmed sliced beef into buns; about 1/4 pound for each bun.
  • Salt and pepper to taste.
  • Close sandwich bun and place on individual plates and cut sandwich in half.
  • Pour beef broth mixture into individual small bowls.

I found this is a magazine years ago and I wish I could remember where. It is very simple and I admit to changing very little. Even though I have another Buffalo Wing Sauce sandwich on Zaar, I thought I would share this recipe. Make to make your own blue cheese and use good onions rolls which to me make the dish.

1/2 cup celery, diced fine
1/2 cup blue cheese, crumbled
1/2 cup mayonnaise
1/2 lemon, juice of

1/2 cup buffalo wing sauce (use your favorite, I like spicy)
1/2 cup chicken broth
2 tablespoons butter
chicken (You can pile it as high as you want. I just use a store bought rotisserie or leftovers from one that)
lettuce (I prefer romaine chopped)
4 onion rolls, buttered and toasted (or a french roll, or kaiser type of roll)

Steps:

  • Sauce -- Mix the cheese, mayonnaise, salt, pepper, lemon juice and celery. Cover and refrigerate until ready to serve.
  • Dip -- Just mix the wing sauce, butter and broth in a small pot on the stove. Heat over medium.
  • Sandwich -- Split your rolls and butter. Use a grill pan, broiler, oven or even a outdoor grill to toast the rolls.
  • Spread the sauce over the bottom of the toasted roll and then top with some of the shredded or sliced chicken. Then top with the lettuce and the top roll also slathered with the bleu cheese sauce.
  • Serve -- Just serve the sandwich with a small side of the warm dipping (wing sauce).

A great sandwich as an alternative to a traditional french dip. Deli turkey, sauteed onions and apples for a bit of a sweet flavor. A pretty traditional horseradish sauce, with a bit of a sweet honey and mustard and then a savory/sweet turkey au jus dipping sauce. The au jus and horseradish can easily be made ahead, which makes this just minutes to put together. Serve with some sweet potato fries or potato salad.

16 -20 slices roast turkey, thin sliced (no too thin)
1 large onion, cut in quarters and thin sliced
2 apples, thin sliced (I used Mcintosh, skin on)
8 slices gruyere cheese, 2 slices per sandwich (swiss will work fine)
4 hoagie rolls, they are soft and perfect for this sandwich (lightly toasted on the inside right before you make the sandwich)
1 teaspoon butter
salt
pepper
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon apple juice
1 teaspoon fresh thyme, chopped fine (1/2 teaspoon dried)
1 3/4 cups chicken broth
2/3 cup apple juice
2 teaspoons honey
1/2-1 envelope lipton recipe secretes savory herb and garlic (you can also add the Golden Onion or Onion. Add more if you want it more flavorful, but start with 1)

Steps:

  • Mustard Horseradish Sauce -- Just mix the mayo, horseradish, mustard, honey, apple juice, and thyme. Add to a small bowl, cover and refrigerate. Done. You can easily make this ahead.
  • Apple Au Jus -- In a small pot, add the broth, apple juice, honey, Lipton seasoning and bring to a boil. Stir well and immediately reduce and simmer until it naturally thickens. About 5 minutes. This can easily be made and ahead and just reheated right in the microwave on on the stove.
  • Onions and Apples -- In a small saute pan, add the butter and bring to medium heat. Add the onions, apples and pinch of salt and saute for 3-5 minutes until the onions and apples are soft, but not "mush." Season with a little pepper and set to the side as you make the sandwiches.
  • Rolls -- As the onions and apples saute, put the rolls inside facing up under the broiler and toast very lightly. Keep the broiler on.
  • Sandwich -- Spread the bottom bun with a little of the dressing. Then dip the turkey slices in the warm au jus, just to get a little juice on it and layer on the sandwich. Top with the warm onions and apples and 2 slices of the cheese. Put under the broiler for just a minute until the cheese melts. Top with the other roll, also slathered with the dressing.
  • Serve -- Cut in half and serve with the warm au jus, 1/4-1/3 cup per person. ENJOY!

1/2 lb whole mushrooms or 1/2 lb mushroom stems
6 garlic cloves, lightly crushed
1 1/2 tablespoons tamari
1/2 teaspoon olive oil
1 small shallot, minced
1/2 teaspoon minced garlic
1 tablespoon chopped fresh herbs (basil, thyme, parsley or chives) or 1 teaspoon dried herbs (basil, thyme, parsley or chives)
2 tablespoons white wine
1/4 lb unsalted butter (1 stick) or 1/4 lb vegan margarine, at room temperature (1 stick)
salt & freshly ground black pepper
3 tablespoons olive oil
2 teaspoons minced garlic
3 portabella mushrooms (reserve stems for au jus)
salt & freshly ground black pepper
1 large yellow onion, halved and sliced thinly
1 rustic baguette
4 slices mozzarella cheese (optional) or 4 slices provolone cheese (optional)

Steps:

  • Mushroom Essence: Combine the mushrooms, garlic, and 6 cups of water in a 3 quart saucepan. Bring to a boil, then lower the heat and simmer for about 1 1/2 hours, until the liquid has been reduced to 1 1/2 - 2 cups.
  • Strain the liquid and add the tamari. Keep warm if using immediately, or refrigerate/freeze.
  • French Dip Spread: Heat the olive oil in a small skillet over medium heat. Add the shallot, garlic, and herbs and cook for two minutes, stirring as you go. Add the wine and cook until mostly evaporated, but still moist. Remove from the heat and cool to room temperature. Add the cooled shallot mixture to the softened butter and mix well. Add salt and pepper to taste. Makes 1/2 cup.
  • The Sandwich: Preheat the oven to 350°F Mix 2 tbsp of the olive oil and the garlic together in a small bowl. Brush mixture on both sides of the portobello caps, and sprinkle with salt and pepper. Place them gill sides down on a baking sheet, and roast for 25 minutes.
  • When the mushrooms are cool enough to handle, slice each cap thinly at an angle, about 8-10 slices per cap.
  • While the portobello caps are in the oven, heat the remaining 1 tbsp oil in a pan over medium heat. Add the onion and cook for about 5 minutes, until it begins to soften. Turn the heat to low and cook the onion for 15-20 minutes, stirring occasionally. If it begins to stick, add 1-2 tbsp of sherry or water to the pan.
  • Cut the baguette into 4 equal portions 5-6 inches long, avoiding the rounded ends. Slice each in half lengthwise. Spread each of the 8 halves with 1 tbsp of the French Dip Spread. Heat a large skillet over medium heat. Place as many of the halves that will fit, spread-side down, for 3 minutes. Repeat for all the halves.
  • Place 4 baguette bottom-halves, griddled side up, on a baking sheet lined with parchment paper. Top each with 1/4 of the sliced mushrooms and grilled onions. Top with cheese.
  • Place in the 350°F oven for about 10 minutes, until heated through and cheese melts. Top with the remaining halves and bake for 3 minutes more.
  • Slice each sandwich in half at an angle and serve with about 1/3 cup of Mushroom Essence.

3 lb chuck roast, trimmed of excess fat
THE BASE
2 large sweet onions, (spanish, or vidalia)
2 Tbsp grapeseed oil
2 Tbsp sweet butter, unsalted
5 c beef consommé (more on this later)
4 oz white wine, dry and crisp
6 sprig(s) fresh italian parsley
2 sprig(s) fresh thyme
2 large bay leaves, dried
2 stalk(s) celery
1/4 tsp black pepper, freshly ground, or to taste
salt, kosher variety, to taste
ADDITIONAL ITEMS
creamy horseradish sauce
crusty bread
provolone cheese

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Cut the onions pole-to-pole and thinly slice.
  • 4. Chef's Tip: A good mandoline is excellent for generating consistent slices. But one word of caution, if you don't use a cutting guard, you need to be very careful or you just might wind up cutting more than the onions. OUCH!!!
  • 5. Add the oil and butter to a heavy-bottomed pot, over medium-high heat.
  • 6. Dust the roast with some salt and pepper.
  • 7. When the foaming subsides, add the chuck roast and brown on all sides, 2 - 3 minutes per side.
  • 8. Remove the roast, and place into the slow cooker.
  • 9. Reduce the heat to medium-low, add the onions, to the pot and stir to coat with the oil and butter.
  • 10. Cover, and allow to cook, for 5 minutes.
  • 11. Remove the cover, and increase the heat to medium-high.
  • 12. Cook the onions, stirring frequently, until they brown, but do not burn, about 12 - 15 minutes.
  • 13. Chef's Note: Don't skimp on the browning of the onions. Browning is necessary to give the broth its color and deep, rich flavor.
  • 14. Add the beef consommé and wine, and bring to a simmer.
  • 15. Chef's Note: I have never found a "store-bought" beef consommé that I could abide. And since making beef consommé is rather time consuming, you can always substitute a good beef stock. I would recommend against using any beef broth, because it is too salty. I don't want a salty au jus; I want it to be flavorful.
  • 16. Place the onions, and liquid into the slow cooker, and then add the thyme, bay leaves, and celery to the pot.
  • 17. If you wish, you can tie the herbs together with some cheesecloth, and make a bouquet garni. Then, at the end of the cooking process, all you need to do is remove the bundled spices, and toss into the trash.
  • 18. Chef's Note: Do a final tasting for proper seasoning, but watch out for the salt, because it will intensify during the cooking process.
  • 19. Cover the slow cooker, and cook on low for about 6 - 7 hours, or on high for about 4 - 5 hours.
  • 20. Remove the roast from the pot, and allow to rest for 10 minutes.
  • 21. Remove the thyme, bay leaves, and parsley, and then run the au jus through a fine-mesh strainer, pressing on the onions to extract as much flavor as possible.
  • 22. Chef's Note: Discard the onions.
  • 23. Use a very sharp knife to thinly slice the beef.
  • 24. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 25. Brush a bit of horseradish sauce on the bottom of your crusty bread.
  • 26. Pile on some beef.
  • 27. Cover with a few slices of provolone cheese.
  • 28. Stick in the oven until warm, and the cheese is melty.
  • 29. PLATE/PRESENT
  • 30. Serve with the au jus on the side. Enjoy.
  • 31. Keep the faith, and keep cooking.
  • 32. OPTIONAL METHOD
  • 33. If you want your sandwich to be outstanding, try the alternative method: When you remove the beef from the slow cooker, wrap in a piece of parchment paper, and tightly wrap in foil. Allow the roast to come to room temp, and then stick in the fridge overnight. Strain the au jus, place in a covered bowl, allow it to come to room temp, and then place in the fridge, overnight. In the morning, skim the congealed fat off the top of the au just, and warm up in a pan. Remove the cold beef, and slice as thinly as possible. Dip the slices in the warm au jus before putting them on the bread, and then bake in the oven as per the recipe. Yummy.

3 - 4 lb beef, top round roast
4 c beef stock, freshly made, if possible
2 stalk(s) celery, thickly chopped
1 1/2 Tbsp dehydrated onions
1/2 tsp white pepper, freshly ground
1/ tsp salt, kosher variety
1/4 tsp garlic powder
sliced provolone cheese, 1 slice per sandwich
crusty rolls, 1 per sandwich
OPTIONAL ITEMS
brown mustard, i prefer grey poupon
dill pickle wedges
chips or fries

Steps:

  • 1. PREP/PREPARE
  • 2. The top round is the largest muscle in the round, (top round, bottom round, eye of round). It is gristle-free when trimmed correctly, and will stand up to 8 hours in the slow cooker without falling apart. Rib eye is more traditional, but more expensive. After trying several cuts of beef, I think the top round does the best job for this recipe.

  • 4. Gather your ingredients (mise en place).
  • 5. Remove any excess fat, and thinly slice the beef.
  • 6. Chef's Tip: If you place the roast into the freezer for about 30 - 40 minutes, it will firm it up, and make it easier to slice.
  • 7. Roughly chop the celery.
  • 8. Add all of the ingredients, except the beef, into a pot, bring to the boil, then reduce to a simmer, and stir for about 5 minutes.
  • 9. Add the beef to the insert of your slow cooker, and pour the hot liquid over the top.
  • 10. Slow cook on low for 8 hours.
  • 11. When it cools, remove the beef from the broth, and pick out the celery bits.
  • 12. Chef's Tip: Thickly cutting up the celery, makes it easier to remove it from the beef.
  • 13. Use a fine-mesh strainer, to strain the au juice into a saucepan, then bring up to a simmer.
  • 14. Cut open a nice crusty bun, and add a smear of brown mustard (if using), and then add some beef. This is a rustic sandwich, so pile it on.
  • 15. Add a bit of hot au jus, slap on a piece of provolone, and stick it under the broiler for about a minute to melt the cheese.
  • 16. Chef's Note: I opted out of the broiler, and just used my brûlée torch.
  • 17. PLATE/PRESENT
  • 18. Serve while nice and warm with a bowl of the au jus (for dipping), and maybe a dill pickle wedge, and some chips. Enjoy.

1 whole wheat roll (scoop out some of the breading to make it lighter)
6 slices of oscar mayer slow roasted roast beef
1 small yellow onion
1 slice of 2% kraft swiss cheese
1/2 cup of college inn beef broth
1/4 teaspoon olive oil

Steps:

  • Thinly slice onion. Sautee onion in olive oil over low to medium heat until carmalized (about 10 minutes).
  • Shred roast beef slices and add to pan with onion. Stir to combine and mix until heated through, about 2-3 minutes.
  • Pile onion and roast beef in center of pan and top with cheese. Turn off heat and let the cheese melt slightly. Fold over mixture to combine cheese, onion and roast beef.
  • Put whole wheat roll under broiler until lightly crispy. Pile roast beef mixture onto roll.
  • Put beef broth into a small microwave safe bowl and heat on high for 1 minute, or until hot.
  • Dip sections of your delcious sandwhich into beef broth as you eat!

11/2 pounds sirloin, sliced across the grain on the diagonal bias until very thin
Salt and freshly ground pepper to taste
2 tablespoons olive oil, plus additional for sauteing
2 tablespoons unsalted butter
1/3 cup minced shallots
2 cloves garlic, minced fine
1 teaspoon minced fresh thyme
1/2 cup dry white wine
1 1/2 cups beef stock or canned beef broth
4 French rolls, split and lightly toasted

Steps:

  • Pat dry the meat and season with salt and pepper. In a large skillet heat oil over moderately high heat until hot. Add the meat, in batches, and cook for 1 to 2 minutes, or until browned on both sides. Transfer meat as it is cooked to a heatproof platter. Keep warm in a slow oven. Pour off fat from skillet. Add butter and melt over moderate heat. Add shallots, garlic and thyme to the skillet and cook, stirring, for 2 to 3 minutes, or until vegetables are softened. Add the wine and reduce by half. Add the stock and simmer for 5 minutes. Remove meat from oven and pour platter juices into simmering jus. Have rolls split and arranged on a platter. Drizzle some of jus over cut sides of rolls. Divide meat among 4 bottom halves and top with remaining bread. Transfer sandwiches to serving plates.
  • Transfer jus to individual dipping bowls and serve sandwiches with jus.

3 -4 lbs chuck roast, remove excess fat
2 -4 tablespoons McCormick's Montreal Brand steak seasoning (coat the roast)
2 tablespoons oil
1/4 cup soy sauce
1/4 cup water
4 whole black peppercorns
2 cups beef broth
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 tablespoon minced onion
2 teaspoons minced garlic
6 -8 French rolls
6 -8 slices cheese, I use provolone (=)

Steps:

  • Remove excess fat from roast. Sprinkle with Montreal Steak Seasoning.
  • Brown in heavy pan with 2 tbsp of oil. Brown on both sides.
  • Place in crock pot.
  • Mix together soy sauce, beef broth, water, peppercorns, rosemary, thyme, garlic, onion.
  • Pour mixture over roast.
  • Cook on low for 8-10 hours or high for 5-6. Cook until tender.
  • Shred or chop meat. I have done it both ways -- I prefer to just chop it up.
  • Strain remaining juice or don't (your preference).
  • *Note* I usually chop the meat up after 8 hours and then add it back to the juice to cook for another 2 hours. So juicy, tender and moist!
  • Assemble your sandwiches and enjoy!
