This is a great recipe given to me by my Mother in law. This is my husband's favorite pie and I love making it for him. Even if you don't like raisins too much, they are not overwhelming.

2 9 inch pie crusts, unbaked
6 granny smith apples, peeled,cored and sliced into 1/8 inch thin (or any tart apples)
1 cup raisins
1 tablespoon lemon juice
3/4-1 cup white sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons flour or 2 tablespoons cornstarch
1 teaspoon fresh lemon rind
1 cup confectioners' sugar
1 -2 tablespoon milk

Steps:

  • Preheat oven to 450 degrees.
  • Place one crust in a 9 inch pie pan.
  • Mix apple slices and raisins and place in pie shell.
  • Sprinkle with lemon juice.
  • Mix remaining ingredients (not Icing) and sprinkle on top of apples and raisins.
  • Dot with butter if desired and place 2nd crust on top.
  • Crimp or flute edges as desired.
  • Bake at 450 degrees for 10 minutes, then reduce heat to 375 degrees and Bake 40 more minutes.
  • When pie is cool, mix the icing and drizzle over the crust.

This recipe was one Mom used for holidays and special occasions. I love the topping. I have her handwritten version in my recipe box and it is a treasure to me.

PIE FILLING:
3/4 c sugar
1 tsp cinnamon
1/4 tsp nutmeg
3 Tbsp cornstarch
3 c sliced peeled baking apples
1 Tbsp plus 1 teaspoon cold butter
CRUMB TOPPING:
1 c flour
1/2 c brown sugar, firmly packed
1/2 c cold butter
PIE SHELL:
1 unbaked 8 or 9 inch pie shell

Steps:

  • 1. Preheat oven to 425 degrees. PIE FILLING: Stir together sugar, spices, and cornstarch. Mix with apples in a medium bowl and set aside while making topping. Measure 1 tablespoon plus 1 teaspoon cold butter and set aside in a separate small dish.
  • 2. TOPPING: Stir together flour and brown sugar. Using a fork cut cold butter into dry mixture to make crumbs.
  • 3. Pour apples into pie crust. Dot with small pieces of cold butter. Spoon topping over all. Bake for 50-60 minutes. Note: You can cover edges of crust with strips of aluminum foil to prevent over-browning.

However if you have a favorite baking apple, you could use that. If you don't wish to add the rum, use 1 teaspoon of vanilla extract in its place.

2 1/2 pounds (1.2kg) Golden Delicious apples
2 tablespoons unsalted butter
1/2 cup (100g) sugar
1/2 teaspoon ground cinnamon
3/4 cup (140g) dark raisins or currants
1 tablespoon dark rum
2 cups (280g) unbleached all-purpose flour
1/3 cup (65g) sugar
1 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (115g) unsalted butter (cold)
2 large eggs
1 cup (140g) confectioners' sugar
1 1/2 tablespoons water

Steps:

  • One 8-inch (20cm) round pan, 2 inches deep, buttered
  • For the apple filling, peel, halve, core, and cut the apples into thin wedges. Melt the butter in a wide saucepan or Dutch oven with a cover, and add all the remaining ingredients but the rum. Stir well and place on medium heat. Cook until the apples start to sizzle, then cover the pan and decrease the heat. Cook until the apples have exuded water, between 5 and 10 minutes. Uncover the pan and stir occasionally while the water evaporates. Remove from heat, add the rum, and spread the filling in a shallow bowl. Refrigerate the apple filling.
  • For the dough, combine the flour, sugar, baking powder, and salt in the bowl of a food processor and pulse to mix. (You can also make this by hand, in a bowl.) Cut the butter into 8 or 10 pieces and add. Pulse until the butter is no longer in visible pieces. Add the eggs and pulse until the dough starts to form a ball. Invert to a floured work surface and carefully remove the blade. Wrap and chill the dough.
  • When you are ready to assemble the pie, set a rack in the lowest level of the oven and preheat to 350ºF (180ºC) degrees.
  • Lightly knead the chilled dough to soften it. Roll a little more than half the dough on a floured surface and line the pan. Cut away excess dough at the rim of the pan. Spread the chilled apple filling in the crust. Roll the remaining dough and cut an 8-inch (20cm) disk. Set it atop the filling and fold the dough on the side of the pan over it to seal. Use a fork to press down the folded dough and to pierce some holes throughout.
  • Bake until the dough is baked through and dark golden, about 35 to 40 minutes. Cool on a rack.
  • Unmold the pie to a platter keeping the bottom of the pie as the top. Combine the confectioners' sugar and water in a small saucepan and stir well. Heat to lukewarm and quickly spread on the pie. Let the icing set before serving.

MOM'S APPLE PIE I

1 recipe pastry for a 9 inch double crust pie
¾ cup white sugar
2 tablespoons all-purpose flour
⅛ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
6 tart apples - peeled, cored and sliced
2 tablespoons butter
2 tablespoons whiskey

Steps:

  • Preheat oven to 450 degrees F (225 degrees C). Fit bottom crust into a 9 inch pie plate.
  • In a small bowl, mix together sugar, flour, salt, cinnamon, and nutmeg. Place sliced apples in a large bowl and sprinkle with sugar mixture. Toss until apples are thoroughly coated. Spoon apples into pan.
  • Dot apples with butter or margarine, then sprinkle with whiskey. Cover with top crust. Seal edges and cut steam vents in top.
  • Bake in preheated oven for 10 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake an additional 40 minutes. Serve warm.

Steps:

  • Heat oven to 325°F. Grease 9-inch glass pie plate. In medium bowl, mix apples, cinnamon and nutmeg; place in pie plate.
  • In medium bowl, stir remaining filling ingredients until well blended. Pour over apple mixture in pie plate. In small bowl, mix all streusel ingredients until crumbly; sprinkle over filling.
  • Bake 40 to 45 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Store in refrigerator.
