4 quarts fresh corn (cut from about 20 ears)
1 quart hot water
2/3 cup sugar
1/2 cup butter, cubed
2 teaspoons salt

Steps:

  • In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in airtight containers, allowing headspace for expansion.

18 cups fresh-cut sweet corn (36 ears)
2 cups half-and-half cream
1/2 cup butter
1/3 cup sugar
1 tablespoon salt (use white salt or seasoned salt)
fresh ground black pepper (optional and to taste)

Steps:

  • Set oven to 325 degrees F.
  • Butter an extra large baking dish (make certain that the baking dish is large enough to hold all the corn).
  • Place half of the corn in a food processor; cover and process until creamy.
  • Pour into large baking pan.
  • Add milk, butter, sugar, salt and remaining corn.
  • Cover and bake for 1 hour and 30 minutes, stirring frequently.
  • Cool then freeze in small plastic containers.

2 tablespoons water
2 tablespoons salt

Steps:

  • Mix corn, sugar, water, and salt in a large kettle.
  • Bring to a boil and cook for 10 minutes.
  • Stir often so it doesn't scorch.
  • Cool and put into freezer bags and stick them in the freezer.

3 tablespoons almond flour
1 teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder

6 cups chicken stock
¼ cup coconut milk
2 tablespoons ghee (clarified butter)

Steps:

  • Combine red potatoes, corn, almond flour, thyme, oregano, garlic powder, onion powder, salt, and pepper in a freezer bag. Freeze until ready to use.
  • Pour frozen red potato mixture into a slow cooker. Add chicken stock, coconut milk, and ghee.
  • Cook on Low until potatoes are tender and flavors combine, about 8 hours.

20 ears sweet corn on the cob, shucked and silks removed
1 tablespoon salt
1/2 cup sugar (mixed in at the end of the process)
water

Steps:

  • Using an electic knife or a serrated knife remove the corn kernels from the cob (I use an electric knife for this, it takes less time).
  • Place the corn kernels in a large pot; add in water to cover the corn then add in 1 tablespoon salt (add in more water to cover the kernels if needed).
  • Bring to a full boil, the reduce heat and boil ONLY until the kernels turn a darker yellow (about 2 minutes, this will not take long).
  • Place in a large strainer and rinse under very cold water or plunge into a bowl of ice water.
  • Shaking the strainer strain out as much water as possible.
  • Mix in 1/2 cup sugar using a wooden spoon until combined with the niblets (this creates a sugar-pac and helps preserve the corn and keeps the corn crisp while freezing).
  • Spread the sugar-coated kernels onto a large 15 x 10-inch baking sheet then freeze until completely frozen.
  • Place in freezer bags or vacum pac.

1 lb butter, cold
1 pt half and half

Steps:

  • 1. Mix ingredients together in a large roasting pan.
  • 2. Bake uncovered for one hour at 325 degrees. Stir every 15 minutes. Don't worry if it looks slightly curdled in the baking. It will be delicious.
  • 3. Let cool in pan on counter. When cool, package for the freezer. Add sugar and salt when ready to use.

"OFF-THE-COB" FREEZER CORN



This recipe allows you the fresh taste of sweet corn-on-the cob all year long. I've been making it for years and will today make it with Olathe corn I picked up at the market for 10 ears for $1. It stacks neatly in your freezer and is ready in a jiffy.

30 -40 ears sweet corn, cut raw off the cob
1 lb sweet butter
1 pint half-and-half
salt and pepper

Steps:

  • Preheat oven to 325°F.
  • Shuck ears of corn; rinse to remove silks; place on paper towels to drain.
  • Using an angel food cake pan and electric knife, stand each ear on tube part of pan and cut corn off cob.
  • Your cuttings will fall neatly into the pan.
  • As the cake pan fills, empty into large roaster pan.
  • Season with salt and pepper to your taste.
  • Cube butter and distribute onto corn in roaster pan.
  • Pour half and half throughout corn.
  • Roast for 1 hour, stirring gently every 15 minutes.
  • Allow to cool for half an hour.
  • Label freezer bags with contents, quantity and date.
  • Ladle into bags at portions suitable for your personal use.
  • Stack neatly in freezer for later use.

Instant Pot Black Bean Corn Salsa Chicken recipe is an easy dump-and-go pressure cooker dish that takes minutes from start to finish.

1 ½ pounds boneless, skinles chicken breast ((I used frozen))
15 ounces canned black beans (rinsed and drained)
14 ounces canned corn (drained)
1 cup salsa
1 ounce taco seasoning (1 packet)
½ cup water

Steps:

  • Place chicken breasts in the bottom of the Instant Pot.
  • Pour black beans, corn, salsa, and taco seasoning on top of chicken.
  • Add water to Instant Pot (pour on the side so it doesn't wash seasoning off of chicken).
  • Place the lid on top of the Instant Pot and move the valve to SEALING. Press the MANUAL (PRESSURE COOK) button and set timer for 25 minutes if chicken is frozen (or 18 minutes if chicken is thawed).
  • When the timer is done, do a QUICK RELEASE of the pressure.
  • Remove chicken from Instant Pot and shred with 2 forks (it should fall apart fairly easily).
  • Place chicken back into Instant Pot with salsa mixture and liquid. Mix together to incorporate the chicken.
