STRAWBERRY JELLO SALAD



Strawberry Jello Salad image

This Strawberry Sunshine Jello Salad is a special sweet treat for the warm months ahead. Best of all, it's ready for the refrigerator with just 5 minutes of prep!

Number Of Ingredients 6

2 small boxes strawberry Jell-O (I used 0.3 ounce boxes of sugar-free Jell-O, but small boxes of regular Jell-O also work!)
2 cups boiling water
1 14 ounce pkg. frozen, sliced strawberries (or about 3 cups fresh sliced strawberries)
1 8 ounce can crushed pineapple, drained
1 15 ounce can sliced peaches, NOT drained
Frozen whipped topping (thawed (for serving))

Steps:

  • Spray a 9 x 13-inch dish* with cooking spray. Set aside.
  • Whisk together Jell-O and boiling water until Jell-O dissolves. Stir in berries, pineapple, and peaches (with peach juice).
  • Pour mixture into prepared dish.
  • Refrigerate for about 4 hours, or until set.
  • Cut into squares; dollop with whipped topping just before serving.

I don't know where Grandma got this recipe. It, and many like it, were popular back in the 1950's and 60's. It may have originated with the Jello Company. Every church supper and family gathering had a similar dish and everyone had their variations. This was one of my Grandma's favorites.

1 small package lemon jello
1 c boiling water
1 can(s) (8 ounces) crushed pineapple, in its own juice
2 Tbsp lemon juice
3 medium carrots, grated
1/2 c chopped pecans
1 pinch salt
mayonnaise, optional

Steps:

  • 1. Drain pineapple and set the pineapple aside for now. To the pineapple juice, add the lemon juice and enough cold water to equal one cup. Dissolve the jello with boiling water. Stir the pineapple juice mixture into the dissolved jello.
  • 2. Pour the jello into a mold or a small square baking dish. Place it in the refrigerator and chill until it begins to thicken (about 45 minutes to 1 hour).
  • 3. Add the reserved pineapple, shredded carrots, pecans and salt to the jello. Stir very well to combine the ingredients. Pour into a mold and chill until set (4 hours or overnight). To serve, cut into squares and top with a small dollop of mayonnaise (if desired).

FRENCH FRY DELUXE SALAD



French Fry Deluxe Salad image

3 cups frozen curly french fries (about 9 ounces)
4 strips bacon
1 tablespoon yellow mustard
3 tablespoons chopped dill pickle, plus a splash of pickle juice from the jar
1 1/2 tablespoons ketchup
3 tablespoons mayonnaise
1 1/2 tablespoons malt vinegar
1/4 teaspoon sugar
Kosher salt and freshly ground pepper
1 cup grape tomatoes, halved
1/4 cup thinly sliced red onion
2 romaine hearts, torn
1/4 cup shredded sharp cheddar cheese
Toasted sesame seeds, for topping (optional)

Steps:

  • Bake the french fries as the label directs until crisp. Let cool.
  • Meanwhile, heat a large skillet over medium heat. Add the bacon and cook until crisp, about 4 minutes per side; transfer to a paper towel-lined plate. Cool slightly, then break the bacon into pieces. Make the dressing: Whisk the mustard, pickle, pickle juice, ketchup, mayonnaise, vinegar, sugar and 2 tablespoons water in a large bowl. Add 1/4 teaspoon salt, and pepper to taste. Add the french fries, bacon, tomatoes, red onion, romaine and cheddar cheese to the bowl with the dressing and toss to combine. Season with salt and pepper. Divide the salad among bowls. Sprinkle with sesame seeds, if desired.

My Great Grandmother found this recipe in her mother's recipe box and made this for her family and my Grandmother as well, and now myself! it's such a refreshing salad. SINGLE SERVING
1 3 oz pkg of orange jello
1 c boiling water
1 can(s) small crushed pineapple (save the juice)
2 large grated carrots
DOUBLE BATCH
1 3 oz pkg of orange jello (can use just 2 pkg of orange instead of lemon)
1 3oz pkg of lemon jello
2 c boiling water
4 large grated carrots
2 can(s) small crushed pineapple (save the juice)

Steps:

  • 1. (single batch) Dissolve jello with boiling water,drain off juice into a measuring cup, add cold water into juice until it reaches 1 cup. Add to jello. Wait till jello is cooled, add carrots and pineapple, Stir well and refrigerate til firm.
  • 2. (double batch) Dissolve jello with boiling water,drain off juice into a measuring cup, add cold water into juice until it reaches 2 cups. Add to jello. Wait till jello is cooled, add carrots and pineapple, Stir well and refrigerate til firm.
