Steps:
- Combine chicken, corn, olives, raisins, carrots, celery, and apple in a large bowl.
- Stir together cream and mustard in a cup and season with sugar, salt, and pepper. Pour dressing over salad and mix to combine. Season with salt and pepper and sprinkle with parsley.
- Arrange lettuce leaves and watercress on a platter and spoon salad in the middle. Sprinkle shoestring potato sticks on top and press into salad. Chill until serving.

FRANGO MINTS
Those wonderful, delectable, melt-in-your-mouth chocolates...those of you in the Northwest, especially, will recognize these candies. The recipe comes from a cookbook put out by volunteers and employees of a hospital in Washington state. Delish!! The number of mints you get, depends on how big you make them. I usually make them the size of a quarter or thereabouts. Refrigeration time is not listed.

- Melt the chololate over hot water, then cool.
- Cream butter.
- Add powdered sugar.
- Mix.
- Add eggs; beat well.

ERIKA'S "FRANGO" MINTS
This recipe was passed on to my mom from her dear friend Erika Brooks who was an amazing cook, baker, and cake decorator in 1984. This recipe is based on the famous Frango® candy that was sold at the Bon Marche in Seattle, WA. I have substituted other extracts for different flavors. If I want a pretty look, I pipe the chocolate into small candy papers with a pastry tip. The result is a soft smooth chocolate candy.

- Line a baking sheet or plate with waxed paper.
- Melt chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula.
- Beat confectioners' sugar, egg substitute, and butter together in a bowl with an electric mixer until smooth and creamy. Add melted chocolate and beat until incorporated. Beat mint extract and vanilla extract into chocolate mixture until light and fluffy.
- Drop chocolate mixture by the heaping teaspoonful onto prepared baking sheet. Chill in the refrigerator until firm, at least 4 hours.

- Take a chicken breast or two and shred it while it cooks.
- Still cooking add tomato sauce, onion, garlic, salt, oregano, pepper, canned corn, and of coarse chopped cilantro.
- Cook until sauce thickened a bit, and all of the chicken is shredded. Adjust to taste.
- Preheat oven to 350º F.
- Put all dough ingredients for the dough into a blender and beat until smooth. Adjust salt and pepper to taste.
- Grease and flour a 9 x 13 inch baking pan.
- Put the pie together for baking: pour half of dough mixture into pan. Add filling. Pour rest of the dough on top.
- Bake until a toothpick comes out clean (about 45 minutes).
- Let it cool, slice and serve with a nice green salad with vinaigrette dressing!
- Note: to the filling you can add 1 red bell pepper chopped. You can also change the recipe using tuna instead of chicken! If you like it hot, add a pinch of chili.

- Filling - Add chicken breast and chicken thighs to a large pan; cover with the water and add the garlic, and bay leaves. Season with salt and bring to a boil. Reduce heat to medium and cook partially covered until the chicken is cooked through, about 1 hour. Remove chicken from pan and let it cool down completely. Strain the broth and save it; you should have about 4 cups of broth left. Discard any skin and bones from chicken; shred into small pieces. Do not use a food processor. In a large sauce pan, heat the canola oil. Add the onion and cook until translucent, 3 minutes. Add the rosemary and chicken and cook for about 4 minutes, stirring occasionally. Add 3 cups of the reserved broth to the pan. Dissolve the corn starch in the remaining cup of broth. Reduce heat to medium and slowly add the corn starch to the pan, constantly stirring. Add the tomato paste and cook for about 3 more minutes, stirring. Season with black pepper. Turn off the heat and fold in the frozen corn, peas, olives, and hearts-of-palm. Finish with scallions and add more salt if necessary. Directions: Dough - Place butter, all-purpose flour, egg yolks, baking powder, and salt in a bowl and mix it well until all ingredients are well-incorporated. Do not knead the dough; it is not supposed to be really smooth. Cover and let it rest for 30 minutes. Cover the bottom and sides of a 10-inch cheesecake pan. Start pressing the dough on the bottom slowly moving it up and to the sides. Press the dough until really thin, about 1/8-inch thick. Remove the excess and save it. Make tiny holes all over the surface with the help of a fork Pre-heat oven to 375 degrees F. Slowly add 1/2 or up to 1 cup of all-purpose flour to the remaining dough and crumble it. FROZEN CHOCOLATE "FRANGO" MINTS
This recipe came from our yacht club news letter. We don't have a sailboat there anymore, but we are still members. I don't care so much about what's in the flier except for the recipes! This one is really nice, but must remain frozen. We use the name "Frango" loosely around this area. True Frangos were developed and sold by the now out-of-business local Frederick & Nelson Dept. Store. We miss them. I'm thinking of using orange extract, raspberry extract, there are many possibilities! This recipe calls for 18 cupcake liners, which in my opinion would make for HUGE Frangos, so I used candy foil liners. It will make about double if candy liners are used!

- Add melted chocolate and continue beating until thoroughly mixed.

FRANGO MINT CHIP COOKIES RECIPE

- Cream butter shortening and sugars until light, fluffy, and well-combined. Add eggs, vanilla and 1/4 cup grated Frango mints. Beat until creamy and well-blended. Sift flour, baking soda, and salt together in a separate bowl. Add sifted ingredients to beaten egg mixture, blending carefully. Beat for about 20 seconds. Fold in chopped nuts and 1 1/2 cups chopped Frango mints. Beat for 30 seconds. Drop heaping teaspoons of cookie dough on to greased cookie sheets, allowing at least 1-inch space between cookies. FRANGO MINT PIES
My mom gave me this recipe, which she got from my aunt who lives in Seattle. I guess Frango Mints are popular treats in the Northwest. They are called pies even though you make them using muffin tins. This dessert is one of my absolute favorites. As an option you can top each "pie" with vanilla wafer crumbs. We have never made them this way, but that is what the original recipe suggests as an option. They can be made ahead of time and last quite awhile in the freezer. Cook time includes freeze time.

- Cream butter with sugar. Add flour and vanilla. Add chopped pecans. Chill dough for one hour. Take 1 T. of dough and wrap around frango mint. Bake for 15 min. until light brown, let cool on baking pan for 5 min, then roll in confectioners' sugar and place on rack to cool completely.

HOMEMADE FRANGO MINTS
Frango mints are a brand of chocolate truffles 1st created for the Frederick & Nelson department stores. Traditionally flavored with mint & widely popularized by the Marshall Field & Company department store, now produced & distributed by Macy's department stores. Frangos were created in 1918; the company & Frango trademarks were both acquired by Chicago's Marshall Field's department store, which introduced its recipe in 1929. For many years, Frango mints were produced in large melting pots on the on 13th floor of the flagship Marshall Field's store on State Street in Chicago, IL.

- In a stand mixer, beat the sugar & butter until smooth. Scrape down the sides of the bowl. Add the egg, vanilla & mint; mix until combined.
- Melt the chocolate chips in the microwave or a double boiler & add to the sugar mixture. Spread in a greased 8" X 8" pan & cool in the freezer for 30 minutes.
- While the fudge is cooling, melt the dipping chocolate according to package directions. Cut the fudge into 1 1/2" rectangles & dip in the melted dipping chocolate.
- NOTE: You must refrigerate these because of the raw egg.
CHICKEN PIE (TORTA DE FRANGO)

- This is very typically Brazilian. Put the flour and the salt in a mixing bowl. Cut the butter into the flour until the pieces are about the size of peas. Add the beaten eggs and mix well. It will probably be too dry and so you will need to add a few drops of water at a time until the mass holds together in a ball. The dough should not be handled too much. Let it sit in the refrigerator for one hour. Put chicken breasts in a marinade of the salt and the lemon juice for 30 minutes. In a large frying pan, heat the cooking oil, fry the onion, garlic, and the chicken breasts and cook until golden. Add the tomato sauce, the bay leaf, salt and pepper to taste. Cover and let simmer for 10 minutes. Turn off the stove and remove the chicken breasts. Pull the chicken breasts apart with 2 forks until stringy. Put the pulled chicken back into the sauce. Add the boiling water along with the peas, olives, beaten egg yolks and the parsley. Mix well and let it continue to simmer for 30 minutes. Preheat the oven to 350 degrees. Roll out about half the crust on a floured surface and put in a pie or cake tin. Cut off the surplus and put in the filling. Roll out the other half of the crust and put on top. Decorate as in the photo and pinch the upper and lower crusts together around the edge. It is also more beautiful if you beat one more egg yolk and paint the top of the pie. Make a few slits in the top for the steam to escape.

INSTANT POT® BOBO DE FRANGO (BRAZILIAN CHICKEN STEW)
This creamy chicken stew is a big favorite of mine. I serve it with white rice and potato sticks! Some like to add chile peppers to make this a bit spicier but I prefer a salty, more savory stew. You can also add more broth or coconut milk to adjust the consistency. It should be thick but creamy. It should not be gummy. The use of table cream or creme de leite is not always traditional, but I love it!

- Season chicken with salt and lime juice, and set aside to marinate while prepping the vegetables.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add 2 tablespoons olive oil and saute chicken tenders until browned, about 5 minutes. Remove and set aside. Add remaining tablespoon olive oil and saute onion and bell pepper until soft and translucent, 5 to 7 minutes. Add garlic and saute until fragrant, about 1 minute. Turn off Saute function.
- Return chicken tenders to the Instant Pot®. Add chicken broth, yuca, and tomato, making sure chicken tenders are completely submerged in broth. Season lightly with salt. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Remove chicken tenders, shred with 2 forks, and set aside. Turn on the Instant Pot® and select low Saute function. Using an immersion blender, blend stew in the pot. Add coconut milk and table cream while blending. Season with salt and stir in shredded chicken chopped cilantro and palm oil.
- Serve garnished with additional cilantro.
