This is the perfect recipe if you forgot to take out the chicken from the freezer. Every time I make this I am so happy with how tender and juicy the chicken is, as well as how perfect the rice comes out; fluffy, never mushy.

1 cup brown basmati rice, rinsed
2 ½ cups low-sodium chicken broth
1 tablespoon olive oil
1 teaspoon salt
2 carrots, sliced
1 shallot, sliced
1 clove garlic, sliced, or to taste
2 (8 ounce) frozen skinless, boneless chicken breast halves
2 teaspoons lemon pepper seasoning
¼ cup chopped cilantro

Steps:

  • Pour rinsed rice into the bottom of a multi-functional pressure cooker (such as Instant Pot®). Stir in broth, olive oil, and salt. Add carrots, shallot, and garlic. Place frozen chicken breasts on top, about 2 inches apart. Sprinkle lemon pepper seasoning over everything.
  • Close and lock the lid. Select Poultry function, or high pressure, according to manufacturer's instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Release any remaining pressure carefully using the quick-release method. Unlock and remove the lid. Check the temperature of the chicken breasts at the thickest section; an instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove the chicken breasts and fluff the rice with a fork. Place the rice and vegetables on a plate. Top with chicken breasts and sprinkle with cilantro before serving.

When I was 10 I asked my sitter for this recipe because her house smelled SO good while it was in the oven. I still make it for the same reason today. This is different from the other Forgotten Chicken recipes already submitted. I sometimes use boneless skinless chicken and I LOVE the 2 different cooking options!

1 (3 lb) chicken, cut up
1/2 envelope onion soup mix
1 can cream of chicken soup
1 package regular cook uncle bens long grain and wild rice blend
2 3/4 cups water

Steps:

  • Place rice in roasting pan.
  • Put chicken on top.
  • Sprinkle with onion soup mix.
  • Spoon cream of chicken soup over chicken and rice.
  • Pour the water over ingredients in roaster.
  • Sprinkle herbs from rice over the ingredients in roaster.
  • Cover.
  • Do not open or stir till cooking time is over.
  • Bake at 325 degrees for 2- 2 1/2 hours OR Bake at 200 degrees for 4 hours.

Boneless skinless chicken breasts
2 2 2 cups minute rice
1 1 1 pkg. onion soup mix
1 1 1 can of cream of chicken soup
1 1 1 can of cream of celery soup
1 1 1 can water (use the soup can)
1 2 "cream of" soups, 1 can of water, and 2 cups of minute rice (uncooked.) Pour into a buttered casserole dish.
Lay chicken breasts on top of rice mixture and sprinkle onion soup mix on top. Cover with tin foil. Don't forget that important step!
The rice on the outside edges should be slightly browned and crispy and the rice on the inside soft and moist. Serve with a side salad and a nice big slice of bread and you have yourself one tasty meal.

It is hard to mess up so if you forget it is in there don't worry, it is probably still okay! ◾2 cups Minute rice (I used brown rice)
◾1 can cream of mushroom soup

1 1/2 cups water
1 large chicken, cut into pieces
salt, to taste
pepper, to taste

  • Place rice in the bottom of a large greased casserole dish.
  • In a mixing bowl, combine both cans of soup with water.
