FOREVER SLAW VINEGAR COLESLAW



Forever Slaw Vinegar Coleslaw image

A basic coleslaw, dressed with a sweetened vinaigrette, called Forever Slaw because of it's long refrigerated shelf life.

Number Of Ingredients 10

1 (1 pound) bag tri-color coleslaw mix
1 cup chopped Vidalia or other sweet onion
1/2 cup chopped green bell pepper
3/4 cup white vinegar
1/2 cup vegetable oil
1/2 cup granulated sugar
1 teaspoon kosher salt
1 teaspoon celery seed
1 teaspoon dry mustard
Freshly cracked black pepper, to taste

Steps:

  • Combine the cabbage, onion and bell pepper in a large, lidded bowl. Bring dressing ingredients to a boil and pour over the coleslaw mix 1/3 at a time, stirring in between. Cover and refrigerate for 24 hours. Toss again and let come to room temperature before serving.
  • Cook's Notes: May substitute a large head of cabbage shredded. One medium head of cabbage is roughly 5 to 6 cups shredded. White vinegar is traditional for this, though you can use apple cider vinegar as well. Be aware that it will give a slight patina tinge of color to the slaw though.

1/2 c cider vinegar
1 c white sugar
2 1/2 c water
1 qt shredded cabbage
1/2 c chopped grn or red pepper
1 tsp salt
1/2 jar(s) pimentos (if desired)
3 ribs of celery--chopped fine
1 tsp mustard seed

Steps:

  • 1. BRING TO BOIL: SUGAR, WATER, MUSTARD SEED, VINEGAR MAKE THIS THE DAY BEFORE SERVING. COOL & REFRIGERATE OVER NIGHT
  • 2. SOAK 1 QT. SHREDDED CABBAGE, GRN OR RED PEPPERS, TSP SALT IN 2 C COLD WATER FOR 2 HRS. DRAIN WELL. ADD PIMENTOS IF DESIRED, CHOPPED CELERY.
  • 3. POUR COLD LIQUID OVER ALL THE NEXT DAY KEEPS FOR SEVERAL DAYS
