FOCACCIA (USING BREAD MACHINE FOR THE DOUGH)



Focaccia (Using Bread Machine for the Dough) image

This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

Yield 1 loaf of Italian Flat Bread, 4 serving(s)

Number Of Ingredients 8

2 teaspoons dried yeast
3 cups bread flour
1 teaspoon salt
1 tablespoon sugar
1 teaspoon rosemary (dried)
1 teaspoon oregano (dried)
1 tablespoon oil
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
  • (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
  • Then, knead the dough lightly (in the bowl) for about 1 minute.
  • On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
  • Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
  • 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
  • YUM!
  • Bake at 225°C for about 15 minutes or until golden brown!

This dough recipe makes enough for three focaccias, so bake one loaf tonight and freeze the remaining dough. This can be topped with sautéed ramps or roasted potatoes, or simply brushed with good salt and olive oil. Baking it in a cake pan will allow for a nice-looking, gently domed loaf. Yield 3 balls of dough (for 9-inch focaccias)

Number Of Ingredients 6

3 3/4 teaspoons active dry yeast
3/4 cup extra-virgin olive oil, more as needed
11 grams kosher salt (1 tablespoon)
10 grams sugar (2 teaspoons)
515 grams all-purpose flour (about 4 cups), more as needed
130 grams whole wheat flour (about 1 cup)

Steps:

  • Place 1 1/2 cups lukewarm water (105 to 115 degrees) in a large bowl or the bowl of a stand mixer. Sprinkle yeast over it. Let stand until foamy, about 5 minutes.
  • Stir oil, salt and sugar into yeast mixture. Stir in all-purpose and whole-wheat flour until a soft dough forms (you may need to add more all-purpose flour).
  • Turn dough out onto a floured surface. Knead until it is smooth and elastic, about 10 minutes, or knead in a stand mixer with a dough hook attached for about 5 minutes. If using a stand mixer, finish dough by hand, on a floured surface, for 1 minute. Add more all-purpose flour if dough feels very sticky (you want damp but not unworkable dough).
  • Oil a large bowl. Place dough in bowl and turn to coat it lightly with oil. Cover bowl with a dish towel. Leave in a warm place until dough has doubled in size, about 1 hour.
  • Divide dough into 3 equal-size balls. Tightly wrap in plastic any you are not planning to use right away and freeze. Transfer remaining balls to a baking sheet and cover loosely with a towel. Let rest for 20 to 30 minutes.

Number Of Ingredients 9

1 medium russet potato, peeled and quartered
1 1/2 tsp instant yeast
3 1/2 c all purpose flour (or 17.5 oz if you weigh)
1 c warm water, divided
2 Tbsp olive oil, plus extra for pan and topping
1 1/4 tsp salt
2 Tbsp olive oil, extra virgin
2 Tbsp fresh minced rosemary, or your favorite herbs
1 tsp coarse sea salt or kosher salt

Steps:

  • 1. FOR THE DOUGH: Bring 1 quart of water to a boi in a small saucepan. Add peeled, quartered potato and simmer for 20-25 minutes until tender. Drain the potato, cool until you're able to handle it. Then press it through a ricer or the large holes of a box grater to measure 1 1/2 cups total. Potato should be lightly packed when measuring.
  • 2. While potato cools, use a standing mixer bowl and add yeast, 1/2 cup of the warm water and 1/2 cup of the flour Mix well with a wire whip. Cover bowl with plastic wrap and let sit for 20 minutes. Mixture will be bubbly.
  • 3. Add the remaining ingredients of flour, oil, salt and the last 1/2 cup of the warm water. Mix on low speed using the paddle attachment until dough comes together in the bowl. Switch out to the dough hook and mix on medium/medium high speed for approximately 5 minutes. Dough will be very wet. Remove the dough hook and cover the bowl again with plastic. Let rise in a warm place for 1 hour.
  • 4. Prepare a 15 1/2 x 10 1/2 inch rimmed cookie sheet by drizzling a couple of tablespoons of olive oil. Generously oil the pan and the sides. Transfer the wet dough into the pan and begin shaping the dough to fit the pan. Note, dough can rest for 10 minutes to relax the gluten. Cover the pan with a large damp towel or plastic wrap that is lightly sprayed with PAM to prevent sticking. Let rise in a warm spot until the dough is puffy and has doubled, anywhere from 45 minutes to 1 hour.
  • 5. When dough has doubled, carefully remove the wrap and using wet fingers, dimple the dough all over. Sprinkle on olive oil lightly and make sure it pools in some of the holes. Next sprinkle on the herbs or other toppings. Finally, give the dough a good sprinkle of sea salt.
  • 6. Adjust oven rack to the middle of the oven and preheat to 425 degrees farenheit. When ready, bake the bread for 15 minutes. Turn the pan around and finish baking the bread for 6-10 minutes more or until bread is golden brown. Remove from oven, transfer to a wire rack and cool. Serve warm. Wrap the cooled bread in plastic and foil and freeze if you like, or use it for the next day.
  • 7. Try slicing a square in half and adding your favorite meats or cheeses. Make a panini sandwich or a simple grilled sandwich if you like. Delicious!

PIZZA DOUGH FOCACCIA (ABM)

I got the pizza dough recipe from my Breadman Breadmachine book. I made a 2 lb. dough. I put the ingredients into the machine in the order as I have listed them. I added fresh and dried herbs, a small piece of pimento from a jar, some kalamata olives as well as some minced garlic and Romano cheese. I cut everything up fairly fine. I also sprinkled some fresh ground smoked black pepper on this. The possiblities for this are endless, depending on what you like. You could probably divide this in half and make two smaller focaccias if you wish, though, the cooking time might be different with a smaller focaccia.

1 1/2 cups warm water (100-115'F)
2 tablespoons olive oil
2 teaspoons salt (I used the large crystal sea salt)
3 1/4 cups all-purpose flour
1 cup spelt flour (I used sprouted)
2 teaspoons raw sugar
2 teaspoons yeast (I used the red star from the little brown jar)

Steps:

  • Put all the ingredients into the bread machine in the order given.
  • Turn it on to your dough setting.
  • When the dough is finished remove it from the bread pan and place on a lightly floured counter and pat it into a circle about 1/2 inch thick.
  • Place on your oven peel (or a baking pan) that you've sprinkled with corn meal.
  • Dimple the top of the dough with your finger and brush with olive oil. Add whatever toppings you want.
  • At this point, heat your oven to 400'F. and put your oven stone or pan you're going to cook the focaccia on into the oven to heat up.
  • Let the dough rise for about 15-20 minutes.
  • Once the focaccia has risen slide it off the peel onto the oven stone and bake until golden brown. It took 20 minutes in my oven.
  • When done, remove with your pizza peel and set on a metal wrack to cool.

This recipe from Nick Stellino makes 2 large, thin pizza crusts or 1 crust and one loaf of bread, etc. It's a great, versatile dough. The same toppings used on a pizza usually work in the bread. Times are for making 2 pizza crusts up to the point of adding toppings.

1 1/2 cups water, at 110 degrees f
3/4 tablespoon fast rising yeast
1 teaspoon sugar
4 cups bread flour or 4 cups unbleached all-purpose flour
1 teaspoon salt
3 tablespoons olive oil

Steps:

  • Add yeast and sugar to water, whisk and set aside until foamy.
  • Add yeast mixture and oil to flour; mix and turn out onto lightly floured surface; knead 5 minutes (10 minutes if under stress or worried).
  • Place in oiled bowl, loosely covered with plastic wrap or clean towel; allow to rise in warm place until doubled in size, 45-60 minutes.
  • Divide dough in half and roll out 2-12"to 15" pizzas; or 1 large 9" focaccia (using all of the dough); or 1 pizza and 1 small 5" focaccia; or 2 small focaccia.
  • Bake topped pizza at 500° for 10-12 minutes.
  • Focaccia: After first rising, knead desired ingredients into dough; suggestions are herbs, cheese, olives, sun-dried tomatoes, artichokes, garlic, onions or pesto.
  • Pat and stretch dough into small or large rounds; place on oiled cookie sheet, cover with towel and let rise in warm place again until doubled.
  • Just before putting bread in oven make indentations in the surface with your fingertips; if desired brush with olive oil and sprinkle with coarse salt; other suggestions are sesame seeds, beaten egg, flavored oils, pepper, sesame oil, rosemary or basil.
  • Bake on cookie sheet or pizza stone until golden brown at 475°, 10-25 minutes depending on size and ingredients.

4 cups all-purpose flour
1 tablespoon fresh yeast, crumbled
3/4 cup white wine
2 tablespoons extra-virgin olive oil
1 teaspoon salt
2 cups lukewarm water

Steps:

  • Mound the flour on a smooth work surface, and create a well in the middle of the flour.
  • Break up the cubes of yeast with your hands and add it to the well, along with the white wine, olive oil and a portion of salted lukewarm water.
  • Work the flour slowly, adding the rest of the salted lukewarm water as needed until it turns into a uniform dough.
  • Cover the dough and let rest to rise for about 20 to 30 minutes at room temperature.
  • Preheat the oven at 450 degrees F. Oil the bottom of a pizza pan and stretch out the dough until the pizza covers the whole pan. Add as little or as much of your favorite toppings before baking it until the crust is golden brown and the toppings are bubbling, golden, or cooked through (depending on your ingredients), approximately 20 minutes.

This recipe was created to prepare Miniature Olive Focaccias with Marinated Peppers.

Number Of Ingredients 8

3/4 cup warm water (105°F.-115°F.)
1 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
2 1/4 to 2 1/2 cups all-purpose flour
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons olive oil
3 tablespoons chopped pitted Kalamata or other brine-cured black olives

Steps:

  • In bowl of a standing electric mixer fitted with dough hook stir together water, yeast, and sugar and let stand 5 minutes, or until foamy. Stir in 2 1/4 cups flour, salt, pepper, oil, and olives and knead dough, scraping down dough hook occasionally and adding enough of remaining 1/4 cup flour to form a soft, slightly sticky dough, about 3 minutes.
  • Transfer dough to a lightly oiled bowl, turning to coat, and let rise, covered with plastic wrap, in a warm place until doubled in bulk, about 45 minutes. Dough may be made 1 day ahead and chilled in bowl, covered with plastic wrap.
