3 c whipped sweet potatoes
1 Tbsp white sugar
1/2 c butter, melted
1 c heavy cream
5 eggs
3/4 c light brown sugar
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp cinnamon
1 tsp vanille
1 tsp salt

Steps:

  • 1. Preheat oven to 375 degrees F. Lightly grease a 2 quart souffle dish. Sprinkle dish with 1 tablespoon white sugar, shaking dish to evenly coat bottom and sides.
  • 2. In a large bowl mix the sweet potatoes, adding the butter, brown sugar, heavy cream, eggs, cloves, nutmeg, cinnamon, vanilla, and salt. Stir until mixture is smooth. Pour into prepared souffle dish.
  • 3. Bake the sweet potato mixture in preheated oven for 20 minutes. Lower oven temperature to 350 degrees F and continue bakeing the sweet potato mixture until edges are slightly browned, about 40 minutes more. Serve warm or at room temperature.

The easiest way to enjoy a sweet potato: Bake it. Butter, coarse salt, and cracked pepper flavor this potato, but the flesh takes well to many toppings, including sage butter and goat cheese or pecans, cinnamon, and brown sugar.

4 small (7 1/2 ounces each) sweet potatoes, scrubbed well
Classic, Savory, or Sweet Topping

Steps:

  • Preheat oven to 400 degrees. Place potatoes directly on middle rack, lining lower rack with foil. Bake until tender, 45 to 50 minutes. Slit potatoes lengthwise, and open. Fluff with a fork, and add topping.
  • Classic Topping: Divide 1/2 cup sour cream or creme fraiche among potatoes. Crumble 4 slices cooked bacon and sprinkle 2 tablespoons chopped chives over tops. Season with coarse salt and freshly ground pepper.
  • Savory Topping: Melt 1/4 cup unsalted butter over medium heat, swirling pan, until just beginning to brown. Swirl in 1 tablespoon chopped fresh sage. Divide sage butter and 2 ounces crumbled goat cheese among potatoes. Season with coarse salt and cayenne pepper.
  • Sweet Topping: Combine 1/2 cup toasted, chopped pecans, 1/4 cup unsalted butter, 1/4 cup packed brown sugar, and 1 teaspoon cinnamon. Divide among potatoes. Season with coarse salt.

Number Of Ingredients 9

4 carrots, peeled and cubed
3 lbs sweet potatoes, peeled and cubed
2 chicken bouillon cubes
6 tablespoons margarine
1/4 cup brown sugar
2 tablespoons juice, fresh juice in any flavor
1 teaspoon pumpkin pie spice
salt and pepper, to taste
granola cereal, for garnish

Steps:

  • In stock pot, place carrots, sweet potatoes and chicken bouillon cubes and cover with water.
  • Bring to a boil and simmer until vegetables are very tender about 20-25 minutes.
  • Drain leaving 1/3 cup of the cooking liquid.
  • Transfer to a blender or use hand mixer.
  • Add margarine, brown sugar, juice, pumpkin pie spice, salt and pepper.
  • Whip until mixture is light and fluffy.
  • Serve or freeze in bags or casserole dish.
  • You can freeze for up to 6 months.
  • To cook after freezing thaw, preheat oven to 350*F, cover and bake for 35 to 40 minutes.
  • After baking, I turn it into a dessert and add granola for a little crunch on top!
