These simple breakfast pancakes can be made without flour - throw the ingredients in a blender, whiz it up and fry in a pan for breakfast in no time. Easy!

100 g porridge oats
100 g cottage cheese
2 large free-range eggs
1 teaspoon baking powder
olive oil or unsalted butter, for frying
1 avocado, optional
2 large free-range eggs, optional
chilli sauce, optional

Steps:

  • Put the oats, cottage cheese, 2 eggs and the baking powder in a blender and blitz until smooth with a tiny pinch of sea salt, adding a splash of water to loosen if it's too thick.
  • Heat a large non-stick frying pan over a medium-high heat with a small splash of oil or a small knob of butter.
  • Add the batter to the pan, a large spoonful at a time (you may need to do this in batches), and fry for 2 minutes, or until golden, flipping halfway.
  • Serve topped with sliced avocado, a fried egg and chilli sauce, if you like, or a combination of your favourite toppings.

6 eggs
1 tsp vanilla extract
1 tbsp cinnamon
1 tbsp olive oil
¾ cup cottage cheese (2%, or substitute 1 banana)
¾ cup rolled oats (uncooked)

Steps:

  • Lightly coat a skillet with nonstick cookie spray and warm over medium heat.
  • Add eggs, vanilla, cinnamon, olive oil, cottage cheese, and oats to your blender. Blend on high until smooth.
  • Pour ¼ cup of batter onto your preheated skillet. Let cook on one side until it is full of bubbles and the edges start to dry, then flip your pancake and cook for an additional minute. Repeat until all of the batter is gone.
  • Top hot pancakes with butter, maple syrup, or fruit. My personal favorite is peanut butter, bananas and maple syrup.

⅓ cup all-purpose flour
2 tablespoons vegetable oil
3 eggs, lightly beaten

Steps:

  • Combine cottage cheese, flour, oil, and eggs in a large bowl.

  • Blend ingredients in blender until smooth, stopping to occasionally scrape down side of blender as needed.
  • Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using scant 1/4 cup batter for each pancake. Cook until bubbles form on tops, then turn to brown other sides.
