PEACHES FLAMBE



Peaches Flambe image

Number Of Ingredients 5

- 1 quart vanilla ice cream, 4 cups
- 1/2 cup peach preserves
- 3 tbsp. orange juice
- 16 oz. pkg. frozen sliced peaches, thawed
- 1/3 to 1/2 cup brandy

Steps:

  • Spoon ice cream into 6 dessert dishes; put in freezer til serving time. Just before serving, in chafing dish or medium skillet, mix preserves and orange juice; cook over medium heat til bubbly. Add peaches; heat thoroughly. To flame, heat brandy in small pan or ladle; carefully ignite. Quickly pour over peach mixture; serve at once over ice cream. Serves 6

1 tablespoon butter
1 tablespoon brown sugar
¼ cup orange juice
1 large banana, cut into 1/4-inch-thick slices
1 tablespoon rum
1 cup vanilla ice cream

Steps:

  • Melt butter and brown sugar together in a skillet over medium heat until caramelized, 3 to 5 minutes. Pour in orange juice; mix well for 2 minutes. Stir in banana slices until evenly coated with orange juice mixture.
  • Pour rum into the skillet. Light rum carefully using a long match. Shake skillet back and forth until flames die down, about 30 seconds. Cook for 1 minute more.
  • Divide vanilla ice cream between 2 bowls. Spoon banana mixture over ice cream.

This tropical fruit flambé is a very warm, soft, and sweet treat but you must have skill and determination.

¼ cup apple juice
2 tablespoons brown sugar
1 medium ripe mango, peeled and sliced
2 medium ripe bananas, peeled and sliced
6 large strawberries, sliced crosswise
¼ teaspoon ground cinnamon
¼ cup dark rum
1 ½ scoops vanilla ice cream

Steps:

  • Set a large pan on the stove over medium-high heat. Pour apple juice into the pan and add brown sugar; let it simmer until golden and bubbling, about 4 minutes.
  • Put mango, banana, and strawberry slices in the pan with cinnamon. Stir to cover fruit with the sauce and cook for 3 minutes.
  • Remove pan from the heat and add rum. Place back on the heat and use a long lighter to set it on fire. Once the flame has gone out, cook for 1 more minute.
  • Divide fruit evenly between 3 bowls and top each with 1/2 scoop ice cream.

BANANA FLAMBE

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 tablespoons brandy
2 glasses filled half way with vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream
2 whole strawberries (remove the stem and make a small hole for the cubed sugar)
2 sugar cubes

Steps:

  • In a large saucepan over medium heat, melt the sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur.
  • Continue to cook for about 2 minutes. Remove from the heat once again, then add the brandy. Once you put the pan back in the heat, it should flambe. Remove the pan from the heat and start spooning the flambeed banana into the ice cream glass. Add the chocolate syrup and the whipped cream. On top of the whipped cream, right in the center, place the cleaned strawberry, then place the sugar cube in the center of the strawberry. Pour a little bit of the brandy on top of the sugar and carefully ignite it with a match.

For best effect use a chafing dish and flambe at the table. Otherwise be quick from the stove to the table (don't trip) dim the lights and voila, ooohs and ahhs from everyone. Very luscious dessert and wonderful with the cold ice cream and the hot sauce. Romantic too!

4 scoops vanilla ice cream (1 Pint)
4 bananas, peeled, cut lengthwise and into thirds
1/4 cup butter or 1/4 cup margarine
1/4 cup raw sugar
1/2 cup fresh orange juice
2 tablespoons fresh lime juice
2 tablespoons Kahlua
1/4 cup light rum

Steps:

  • Put scoops of Ice cream in four dishes and keep in the freezer until serving.
  • Just before serving melt butter (margarine) in a 10 inch skillet over medium heat Stir in the sugar.
  • Add Orange juice & Lime juice.
  • Cook stirring frequently until the sauce has thickened 6-8 minutes.
  • Add Kahlua.
  • Add bananas to the sauce, cook turning the bananas gently, heat just through and turn in the sauce so they are all coated evenly.
  • Heat the rum in a small saucepan over low heat for about 1 minute or until just warm (Do not allow to bubble).
  • Pour rum over the hot banana mixture, immediately ignite (use a long match).
  • Stir with long handle spoon until flame subside.
  • Place bananas around the ice cream and spoon sauce over all.
  • Serve immediately.

A delightful after dinner dessert, this fruit flambe can be spooned over ice cream or enjoyed just as it is. Danaka's Palace in Toronto developed this recipe in honour of Canada's greatest Prime Minister, Pierre Elliot Trudeau. Mr. Trudeau visited Danaka's Palace frequently, whether in an official capacity, or just in town to attend a theatre. I am far from being a famous politician, but I do attend theatres frequently. This particular recipe has a permanent home in my collection of "fast and easy to prepare"; my guests enjoy the selection of fruit used to produce this dessert. Increase the recipe logically to serve more guests.

1 ounce butter
2 ounces brown sugar
2 ounces orange juice
1 ounce pineapple juice
4 slices oranges
2 slices grapefruits
4 slices peaches
6 pineapple chunks
6 fresh strawberries
1 tablespoon maraskina liqueur
1 tablespoon Grand Marnier
1 ounce cognac

Steps:

  • Melt the butter in a flambe pan.
  • Add sugar and stir over medium heat until the mixture begins to caramelize.
  • Add the orange and pineapple juice and bring to a boil.
  • Add the pieces of fruit and stir to blend well with the caramel.
  • Pour in the Maraskina, Grand Marnier and Cognac and flame.
  • Allow the liquid to thicken slightly, but do not overcook the fruit.
