PORTUGUESE COD FISH CASSEROLE



Portuguese Cod Fish Casserole image

An excellent cod fish dish. You must soak the salted cod over night and change the water at least twice. This is an easy fish meal with my mom's original ingredients.

2 pounds salted cod fish
5 large potatoes, peeled and sliced
3 large onions, sliced
¾ cup olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 ½ teaspoons crushed red pepper flakes
1 teaspoon paprika
3 tablespoons tomato sauce

Steps:

  • Soak salted cod in cold water overnight or for a few hours. Drain water, repeat. Heat a large pot of water until boiling. Cook cod for 5 minutes; drain and cool, leaving cod in large pieces. Set aside.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8x11 casserole dish, layer half the potato slices, all of the cod, and all of the onions. Top with remaining potato slices. In a small bowl, mix together olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce. Pour evenly over casserole.
  • Bake in preheated oven for 45 minutes, or until potatoes are tender.

"IT'S A KEEPER!" FISH STICK CASSEROLE



There are several versions of this recipe, this is how I make it. My nephews LOVE it! It tastes like cheesey fish sticks, potatoes and a slight taste of creamy tartar sauce all baked into one! :) **If you don't like tartar sauce, simply omit the sweet pickle relish. But we LOVE it just like this! :)

1 (2 lb) bag frozen hash brown potatoes (the cubes, not the shredded)
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 (10 3/4 ounce) can cheddar cheese soup, undiluted
1 cup mayonnaise (do not sub light)
2 tablespoons sweet pickle relish
1 tablespoon spicy brown mustard
1/2 small onion, chopped fine
8 ounces shredded four-cheese Mexican blend cheese
18 mrs. paul select cuts frozen fish sticks

Steps:

  • In lg.
  • bowl, stir together all ingredients except for half of the cheese and the fish sticks.
  • Spread into 13x9 baking dish.
  • Top with frozen fish sticks in 3 rows of 6 longways.
  • Sprinkle evenly with the rest of the cheese, spreading, making sure some of it gets down in between and around fish sticks.
  • Bake at 350•, uncovered, for about 35-40 minutes.
  • Serve with coleslaw and garlic bread.

  • Preheat oven to 350 degrees.
  • Melt butter and blend in the lemon juice and sour cream.

½ cup salted butter
3 tablespoons all-purpose flour
¾ cup fish stock
¾ cup milk
½ (12 ounce) package shredded Cheddar cheese, divided

4 (4 ounce) fillets white fish
1 (14.75 ounce) can salmon, drained and flaked

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12x7-inch casserole dish.
  • Slice potatoes 1/8 inch thick and place on a microwave-safe plate. Microwave on high until barely soft, 3 to 5 minutes; set aside.
  • Melt butter in a saucepan over medium-low heat. Whisk in flour and stir until the mixture becomes paste-like and light golden brown, 2 to 4 minutes. Increase heat to medium and gradually whisk fish stock and milk. Bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth, about 10 minutes. Stir in 1/2 of the Cheddar cheese, nutmeg, and pepper. Remove from the heat.

8 cups potatoes, peeled & quartered
3 whole garlic cloves
6 cups salt cod fish, cooked and shredded
6 large hard-boiled eggs, quartered
1 cup green olives
2 onions, halved
3 garlic cloves, smashed
3/4 cup olive oil
3/4 cup white wine
1 teaspoon ground cumin
1 tablespoon paprika
1 teaspoon garlic powder
2 tablespoons ketchup
1 teaspoon piri piri hot sauce (to taste)
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper
parsley, chopped (to decorate) (optional)

Steps:

  • Preheat the oven to 350°F.
  • Cut the potatoes into quarters and boil in salted water with 3 whole garlic cloves, just until tender (do not overcook). Drain and place in a large bowl. Rinse the olives, then add to the bowl with the potatoes.
  • Shred the cooked cod fish into bite sized pieces, then add to the bowl.
  • Heat the oil in a small pan, add the onions and garlic and simmer for 5 minutes. Remove from the heat then let sit for 5 minutes. Remove the onions and garlic and discard.
  • Add all of the spices and the wine to the oil and simmer for 5 minutes. Taste and adjust any seasonings if needed. Pour into the bowl, then gently toss everything to combine.
  • Pour the mixture into the casserole and then decorate the top with the boiled eggs.
  • Cover the dish with foil paper, then bake for approximately 30 minutes, or just until the casserole is hot.
  • Sprinkle the chopped parsley just before serving if desired, and serve with extra piri piri hot sauce on the side.
  • Note: Prepare the salted cod fish by soaking it in water in a pot in the fridge for 24 hours, changing the water twice. Drain the fish, then fill the pot with fresh water. Bring the water to a boil, then reduce the temperature and simmer for 10 minutes. Drain the water then shred the fish once cooled.

This tastes a lot better than it sounds and is a real family pleaser. It is also a good potluck meal--and believe me, everyone is always shocked when they ask for the recipe and discover I used fish sticks. Another great find from Quick Cooking magazine.

2 cups skim milk

3 tablespoons margarine

Steps:

  • Cook pasta in water until done.
  • Preheat oven to 350 and grease a 2 quart baking dish.
  • Melt margarine in a small fry pan. Saute mushrooms.
  • Remove pan from heat and stir in flour, make sure all flour is moistened by the margarine.
  • Stir in broth and stir until no lumps.

2 tablespoons cornstarch
4 tablespoons vinegar
3 tablespoons soy sauce
1 cup water
500 g Japanese eggplants
1 green pepper (I use Cubanelles)
2 jalapeno peppers (optional)
4 stalks celery
4 green onions
1 tablespoon toasted sesame oil
1 tablespoon vegetable oil
400 g mild boneless white fish
1 tablespoon minced ginger

Steps:

  • Preheat the oven to 400°F.
  • Mix the brown sugar, cornstarch, vinegar, soy sauce and water, and set aside.
  • Cut the eggplants into 1" dice and the remaining vegetables into slightly smaller dice.
  • Saute the eggplant in a mixture of half each of the two oils until soft.
  • Place them in a lasagne pan with the fish, cut in chunks, and the ginger.
  • Saute the remaining vegetables in the remaining oils until soft, and add them to the casserole.
  • Mix the sauce up well and pour it over.

1/4 cup white wine
1 large onion, thinly sliced

2 tablespoons olive oil
1 (8 ounce) bag fresh spinach
1 (4 ounce) package low-fat cheddar cheese, shredded
1/4 cup egg substitute (Egg Beaters)
1 medium yellow onion, finely chopped
1/2 cup celery, finely chopped
2 medium potatoes, cooked and mashed
1/2 teaspoon black pepper

  • Preheat the oven to 350°F.
  • In a large skillet saute together the fish filets, onion, celery and black pepper in the oil for approximately 10 min; set aside to cool slightly.
  • Cook the spinach in a little water until limp; drain, squeezing out as much water as you can and set aside to cool.
  • In a bowl combine the potatoes, the fish filet mixture and the egg substitute.
  • Butter a 2 quart casserole dish and then begin assembling the casserole.
  • First a layer of fish mixture, then a layer of spinach; then sprinkle with half of the cheddar cheese.
  • Next, a layer of the remaining fish mixture, then the remaining spinach, then the remaining cheddar cheese.
  • Bake in the preheated 350°F oven for 25-30 minutes.
  • Variation: if you don't recognize the fish 'hake' -- you may substitute cod, flounder, haddock, pollock or tilapia in it's place.
  • Variation: you can also swap out the cheddar cheese for another type such as mozzarella or monerey jack.

6 basil leaves, cut in fine strips
5 tablespoons dry breadcrumbs
5 tablespoons grated fresh parmesan cheese
2 tablespoons olive oil or 2 tablespoons butter
3 crushed garlic cloves

Steps:

  • Fish:.
  • If your fish fillets are large, you need to cut them in half (vertically). They should be easy to be rolled.
  • Drizzle lemon juice over the fish. Season with salt and pepper. Spread the cream cheese onto the outer shiny side of fish.
  • Roll up fillets. Season with salt and pepper.
  • Vegetables:.
  • Into a buttered heatproof casserole add quartered mushrooms.
  • Place tomatoes on top of mushrooms.
  • Add 1 tbsp of parsley and 1 tbsp of basil to the tomatoes and mushrooms.
  • Place rolled fish on top of tomatoes and mushrooms.
  • Place optional shrimps between fish rolls.
  • Provencal Topping:.
  • Mix all ingredients except oil/butter.
  • Cover the fish with Provencal topping.
  • Drizzle with oil or sprinkle with butter flakes.
  • Bake for 20 minutes in a 220°C / 430°F preheated oven.
  • Serve with buttered boiled potatoes sprinkled with chives.

I had leftover fish and dry potato slices and left over homemade salsa so I threw it all together cleaning out the frig and wow turned out great so wrote it down so I will be able to recreate it. I grow garlic chives and they are the best just simmered in butter over noodles YUM. I assembled it before running out and put it in the oven when I got home.

1 (6 ounce) can tuna or 1 (6 ounce) can leftover fish, diced
2 cups sliced potatoes
1 cup sour cream
1 1/2 cups cottage cheese
1/2 sliced chives
1/2 onion, diced
2 tomatoes, diced
4 ounces cream cheese
2 cups milk
1 teaspoon cajun seasoning
1/3 lime, juice of
1/2 jalapeno, diced
2 cups mozzarella cheese

Steps:

  • Put all ingredients except mozzarella in a large covered cassarole stir sprinkle mozzarella on top cover 375 oven for 40 minutes.

Need a change from boring, basic fish? My family loves this recipe. I have been told it is "to die for". I have made it several times (changing the type of fish fillets). My favorites are salmon and walleye. 2 lbs of fillets is an estimate. You will need enough fish to line the bottom of a 9 by 13 cake pan.

2 lbs salmon or 2 lbs walleyed pike fillet
1/2 large sweet onion, sliced thin
1 1/2 cups fresh mushrooms, sliced
2 tablespoons butter
1 (8 ounce) can crab
1 (8 ounce) can cream of mushroom soup
1/2 cup swiss cheese
1/2 cup cheddar cheese
2 pinches dry basil
salt
pepper
garlic powder
Lawry's Seasoned Salt
1/4 cup milk or 1/4 cup white wine
25 Ritz crackers, crushed
2 tablespoons parmesan cheese, grated

Steps:

  • Sautee onions and mushrooms in butter.
  • Add some Lawry's Seasoning Salt.
  • Sautee until onions are tender and transparent.
  • Add the soup, cheeses, salt & pepper to taste, Lawry's Seasoning to taste, garlic powder to taste, basil, crab, milk or wine.
  • Simmer until creamy.
  • Line fish in a single layer in a greased 9 by 13 pan.
  • Sprinkle some salt on the fish.
  • Pour cheese mixture over the fish.
  • Sprinkle enough crushed crackers to cover the sauce.
  • Top off by sprinkling grated parmesean cheese over the top.
  • Bake uncovered in a 350 degree oven for 30 to 40 minutes(or until fish flakes with a fork).
  • Serve immediately.

3 cups soft bread cubes
1 onion, minced
1 pinch salt
1 pinch dried basil
1 pinch dried thyme
1 pinch ground savory
1 pinch dried marjoram
2 (10.75 ounce) cans condensed cream of mushroom soup
½ cup butter
½ cup milk
1 ½ pounds haddock fillets
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish.
  • Mix the diced bread, onion, salt and herbs together.
  • Combine the soup with milk, stirring until creamy.
  • In the bottom of the prepared dish, layer half of the fish, half of the bread mixture and half of the soup mixture. Repeat layers and cover top with cracker crumbs and dot with butter.
  • Bake uncovered in a preheated oven for 1 hour or until fish is flaky with a fork.
