- 1.)Mix all dry ingredients together. I usually mix with my hands, that way you can really rub it all together. Of course, make sure your hands are freshly washed. "Yes mom." You can freeze the dry ingredients together for up to two months if you make extra, just let it sit out in a bowl for a few hours and it'll be just as new. 2.) Mix all the wet ingredients together separate from the dry. 3.) Place the wet mixture in a bowl next to the bowl of dry. Don't mix. 4.) Take whatever you have to fry and dip it in the wet then dry and repeat if you want it extra thick.
BAKED FISH WITH COCONUT BREADING & FRUIT SALSA
Steps:
- Fish: beat egg with salt and cayenne pepper. Mix coconut and breadcrumbs, add S&P. Drag fish fillet in cornstarch, then coat with egg. Then press both sides of fish in breading. bake at 350 degrees for 20-25 minutes. Salsa: Combine kiwi, lime, jalapeno, papaya, onion, avocado and red pepper
EXTRA CRISPY BREADING FOR CHICKEN OR FISH
If you like extra crunchy breading, this is great! It is a nice alternative to the cornflake smashing mess. Try to find potato flakes that are not super thin and light or the breading will not be as crispy (avoid instant). Pre-seasoned potato flakes work well to save time if you wish. I like to put pepper and lime on chicken breast strips before breading and serve them with honey mustard or on a wrap. The possibilities are endless!

- Place flour and fish pieces in a plastic bag and shake to coat well. Remove fish and place on a plate. Discard excess flour.
- Place the first six ingredients in the empty plastic bag and shake to mix.
- Beat eggs and milk together in a bowl.
- Dip flour-coated fish pieces in egg wash, then place into the bread crumb mixture in the bag and shake to coat well. It's easiest to do one at a time.
- Fish can either be baked in the oven (425 degrees for approximately 5 to 10 minutes depending on the type and thickness of fish) or pan-fried approximately 1 to 1 1/2 minutes per side.

- All the ingredients are based on how much fish or shrimp you need to batter. These are all rough estimates of what was used in the batter. No wet ingredients are involved at all.
- Mix together. Heat up enough oil to cover the bottom of a frying pan. Dredge or shake the fish in the batter. Fry until flaky.
- Leftover batter-Hushpuppies
- Take the leftover batter and add some sugar, a little more flour, and milk. Buttermilk is the best, but regular or evaporated milk will do in a pinch. Don't forget to add water to the evaporated milk. Mix the leftover until it's a thick batter. Then spoon it into the hot oil to make hush puppies. They really come out more flat than round, but they are delicious. It's also a great way to use the rest of the batter. They are a sweet and savory delicious hushpuppy.
