CHEDDAR BAY BISCUIT SAUSAGE BALLS
Sausage balls are a standard, savory appetizer perfect for so many different occasions. Giving them a little lift using cheddar bay biscuit mix takes them over the top, and will make them the quick & easy star of any party or gathering they're served at.

Steps:
- Add the biscuit mix and sausage to a large mixing bowl. Mix them together until evenly incorporated.
- Add the cheese to the mixture, and mix again until all the cheese is also evenly incorporated.
- Line two large baking sheets with parchment paper. Roll the sausage mixture into roughly 1 1/2 inch balls.
- Place the balls on the parchment, roughly spacing them out about 1/2 inch apart from each other. Repeat until all the mixture's been rolled into balls & added to the prepared baking sheets.
- Bake the sausage balls at 350 degrees for 25 minutes.
- Cover a clean surface with a double layer of paper towels. Transfer the cooked, still hot sausage balls from the baking sheets to the paper towels to drain off/soak up any excess grease.
- Serve when still warm, but cool to the touch.

FIRECRACKER CHEDDAR BAY SAUSAGE BALLS
I came up with this recipe on Thanksgiving morning for breakfast, and all of them were eaten in less than 30 minutes. My family said this was the absolute best sausage balls I had ever made. They are moist, not dry at all, cheesy, buttery, and a little spicy. Just delicious! I hope your family enjoys them as much as mine.

- 1. Preheat oven to 400 degrees. Mix dry biscuit mix with packet of seasoning that comes with the mix, red chili flakes, and shredded cheese with wire whisk.
- 2. Using your hands, break up the pound of sausage into the mix, then add buttermilk. Incorporate all ingredients together, and again, I do this with my hands so not to over mix.
- 3. Drop 1 inch balls onto a baking sheet sprayed with cooking spray or lined with parchment paper. Bake for 10-15 minutes or until lightly brown, remove from oven and brush on melted butter. Return to oven for 3-5 minutes more, or until golden brown. Enjoy the best sausage balls you will ever bake!
MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- Preheat oven to 400ºF.
- In the bowl of an electric stand mixer fitted with a dough hook, combine biscuit mix and seasoning packet, sausage, cream cheese, and cheddar cheese. Mix until everything is incorporated into the sausage.
- Shape into 1-inch balls. Place on a parchment-lined baking sheet. (Can freeze at this point)
- Bake for 15-20 minutes, until golden brown.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir the ground beef with the onion in the hot skillet until completely browned, 7 to 10 minutes; drain any excess fat. Stir the black beans, chili powder, cumin, and salt to the beef mixture; cook and stir until hot, about 5 minutes. Pour the mixture into the prepared baking dish. Arrange the tortillas atop the beef mixture.
- Mix the tomatoes with green chile peppers and cream of mushroom soup together in a bowl; spread over the tortillas. Top with the Cheddar cheese.
