Time 1h35m

Yield 10

Number Of Ingredients 10

2 ¼ boneless pork chops
½ pound pork liver
3 tablespoons olive oil
2 cloves garlic, minced
1 onion, diced
salt and pepper to taste
2 tomatoes, diced
1 (15.5 ounce) can garbanzo beans, drained
1 (1.5 ounce) box raisins
2 potatoes, diced

Steps:

  • Bring a large pot of lightly salted water to a boil; add the pork chops and return to a boil. Cook the pork chops at a boil for 5 minutes, remove, and set aside to cool. Remove 1 cup of the broth from the pot and set aside for later use. Once the chops are cooled to the touch, cut into bite-size pieces.
  • Return the water to a boil; add the pork liver to the pot and cook at a boil until tender, 7 to 10 minutes. Drain and discard the liquid. Set the liver aside to cool; cut into bite-size pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the onion and garlic in the hot oil until tender, about 5 minutes. Stir the pork chops into the onion and garlic; cook and stir together for 5 minutes. Season with salt and pepper. Add the tomatoes and reserved broth; cover and cook for 10 minutes. Stir the pork liver, garbanzo beans, raisins, and potatoes into the mixture; cover and simmer until the potatoes are fork-tender, about 10 minutes.

FILIPINO MENUDO

Filipino Menudo image

Comfort food Filipino style! This is one of my husband's favourite Filipino dishes. I make this in big batches because it freezes well, and it tastes better the longer you keep it. It can stay for up to 2 weeks in the freezer. This can also be cooked in a slow cooker like the usual slow cooker stew.

Yield 10 serving(s)

Number Of Ingredients 17

1 kg pork tenderloin, cubed
3 medium potatoes, cubed
2 medium carrots, cubed
1/2 cup raisins
1 medium red bell pepper, diced
1 medium green bell pepper, diced
500 ml tomato sauce
100 g liver spread (originally, we use fresh pork liver but since it's very difficult to find a good liver, I substitute)
1 medium onion, chopped
2 garlic cloves, chopped
50 g grated romano cheese (Parmesan is also good)
2 bay leaves
1 cup Sprite (Yes, Sprite.)
4 tablespoons soy sauce
2 tablespoons lemon juice
1 lemon, zest of, only
ground black pepper

Steps:

  • Combine all marinade ingredients. Divide the marinade in halves. Save half. Add pork cubes on the other half with the bay leaf and marinate for at least 30 minutes.
  • Remove pork from the marinade, drip dry.
  • Sauté garlic and onion, add pork and the unused half of the marinade and bay leaf, simmer uncovered, reduce the liquid to half.
  • Add fresh pork liver if you prefer the fresh ingredient, cover and cook.
  • Add tomato sauce, liver paste (if this is what you're using), carrots, potatoes and raisins, simmer stirring occasionally.
  • Add peppers and adjust the seasoning.
  • Add the grated cheese, let it melt, stir and distribute evenly. Serve hot.

MENUDO (FILIPINO PORK OR BEEF STEW)

Menudo (Filipino Pork or Beef Stew) image

Menudo is a traditional stew from the Philippines that's a favorite "comfort food" for most families. Traditionally it's usually made with pork belly or pork shoulder, but this recipe uses either pork or beef ribs for a tastier flavor base. And it omits pork liver (that's traditional in most Menudo recipes), but the ribs add a...

Time 1h

Number Of Ingredients 16

2 1/4 lb boneless pork or beef ribs, chopped into small cubes
1 large onion, chopped
6 to 8 clove garlic, peeled and chopped
salt
black pepper
2 large plum tomatoes, chopped
2 Tbsp fish sauce
2 bay leaves (bay laurel)
1/2 c water
2 large potatoes, cubed
2 medium carrots, cubed
1 large red bell pepper, cubed (about the size of cubed carrots and potatoes)
1/2 c raisins
1/4 c ketchup
1 Tbsp brown sugar, if needed to offset tartness
cooked white rice (for serving)

Steps:

  • 1. Place the pork cubes in a large pan or Dutch oven and let it cook in medium heat until it changes its color. No need for any oil as the meat will release some of its fat in the process. Add the garlic and onions and sauté. Season with a little salt and pepper. Continue to cook until the pork has browned (but not fried all the way) and the onions have softened.
  • 2. Add the tomatoes and fish sauce and continue to sauté for a couple of minutes. Add the bay leaves. Cover and simmer on low until the pork is tender.
  • 3. When the pork is tender, add the water, potatoes and carrots. Cover, and cook until the vegetables are tender. Add the sweet peppers, raisins and the ketchup. Cook for another 5 minutes or just until the raisins are re-hydrated and the sauce is fully heated through.
  • 4. Adjust the seasoning to your taste. If it's a little tart, sprinkle some brown sugar to balance the taste. Don't make it too sweet as you have raisins to balance the sour and savory flavor of the other ingredients. It should just be a perfect balance of sweet, tart and salty! Have it with rice, of course!
