16 ounces sour cream
(1) 10 oz can of rotel ((or any canned tomatoes with diced green chilis will work))
1 can corn ((she called for Mexicorn, but I didn't have it and it still tasted great))
3/4 cup shredded cheese

Steps:

  • Mix all the ingredients in a medium size bowl.
  • Allow it to chill for one hour.
  • Serve with your favorite chips.

A zesty version of ranch that will quickly become a favorite. Great for a topping on favorite Mexican dishes, a veggie dip, or a dip for chips.

1 (16 ounce) container sour cream
1 envelope Hidden Valley Ranch Dip Mix
1½ tsp chili powder
¼ tsp smoked paprika
¼ tsp regular paprika
¼ tsp onion powder
⅛ tsp cumin
pinch red pepper flakes
pinch cayenne pepper (optional)
⅛ tsp salt

Steps:

  • In a 1-quart mixing bowl or (carefully) in the sour cream container, combine the ranch packet, chili powder, smoked paprika, regular paprika, onion powder, cumin, red pepper flakes, cayenne pepper, and salt. Mix well and refrigerate for at least 1 hour.
  • Once dip has refrigerated and flavors have had a chance to mingle, serve with your favorite veggies or as a dip for potato or corn chips.
