1 package (16 ounces) elbow macaroni
1 pound ground beef
1 jar (16 ounces) salsa
10 ounces process cheese (Velveeta), cubed
1 can (16 ounces) chili beans, undrained

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain. Drain macaroni; set aside., In a microwave-safe bowl, combine salsa and cheese. Microwave, uncovered, on high for 2-3 minutes or until cheese is melted. Stir into the skillet; add the macaroni and beans. Transfer to a greased 13-in. x 9-in. baking dish. , Bake, uncovered, at 350° for 30-35 minutes or until heated through.

4 cups cooked macaroni
2 cups seeded and chopped tomatoes
1 cup seeded and chopped cucumber
1/2 cup finely chopped red onion
1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
1 cup rice wine vinegar
2 tablespoons minced black olives
1 bay leaf
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1 clove garlic, minced
