Sun's out, grill's out! At least that'll be your new motto once you get a taste of these Grilled Cilantro Lime Beef Skewers with Jalapeño Avocado Dipping Sauce. The tangy fresh flavor of the rich with the cooling jalapeño avocado dipping sauce is a summery combination no one can resist.

1-2 pounds flank steak, sliced into 1/4-inch thick strips
1/4 cup chopped cilantro
1/4 cup soy sauce
2 tablespoons lime juice
1/2 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
1 avocado
1/3 cup plain greek yogurt
juice from one lime
1/4 cup fresh cilantro leaves
1 jalapeños jalapeño
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl, whisk together 1/4 cup freshly chopped cilantro, soy sauce, lime juice, garlic powder, cayenne pepper and black pepper for the steak. Add sauce to a Ziplock bag, along with the flank steak. Refrigerate and marinade for 2 to 3 hours. In the bowl of a food processor, combine avocado, Greek yogurt, lime juice, cilantro, jalapeño, salt and pepper for the sauce. Puree on high until combined. Add to a small bowl and refrigerate until ready to serve. Soak wooden skewers in a shallow baking dish filled with cold water for 15 minutes. Pat dry with paper towels. Skewer one piece of thinly sliced flank to each wooden skewer. Heat grill or grill pan to high heat. Once hot, add beef skewers and grill until cooked to desired doneness. For medium rare, grill for 2 minutes per side. Serve skewers immediately with avocado dipping sauce.

1/2 cup apple cider vinegar
2 tablespoons sugar
Kosher salt
1 red onion, thinly sliced
1 bunch cilantro, roughly chopped
1 pound flank steak, trimmed
1 clove garlic
2 tablespoons red wine vinegar
Juice of 1/2 lemon
1/2 teaspoon red pepper flakes
1/2 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper

Steps:

  • Make the pickled red onion: Combine the cider vinegar, sugar and 1 teaspoon salt in a medium bowl and whisk to dissolve. Add the red onion and 2 tablespoons cilantro and stir to combine. Cover and set aside at room temperature, 1 hour.
  • Meanwhile, soak 20 wooden skewers in warm water, at least 20 minutes. Slice the flank steak against the grain into 20 strips, about 1/8 inch thick. Thread the meat accordion-style onto the skewers and set aside until ready to grill.
  • Combine the remaining cilantro, the garlic, red wine vinegar, lemon juice, red pepper flakes, 1/2 teaspoon salt and the olive oil in a blender and puree until smooth; transfer to a small bowl.
  • Heat a grill or grill pan to medium high. Season the steak with salt and pepper. Brush the grill with olive oil, then grill the skewers until marked, about 1 minute per side. Serve with the chimichurri and pickled onion.

1-1/2 pounds boneless beef top round steak
1 can (10 ounces) diced tomatoes and green chiles
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (15 ounces each) pinto beans, rinsed and drained
3 cups hot cooked rice
1/2 cup shredded cheddar cheese
6 tablespoons sliced ripe olives
6 tablespoons thinly sliced green onions
6 tablespoons guacamole

Steps:

  • Place round steak in a 3-qt. slow cooker. In a small bowl, combine the tomatoes, onion, garlic and seasonings; pour over steak. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat from slow cooker. Add beans to tomato mixture. Cover and cook on high for 30 minutes or until beans are heated through. When cool enough to handle, slice meat. In individual bowls, layer the rice, meat and bean mixture. Top with cheese, olives, onions and guacamole.

1 lb ground beef
1/4 cup diced onion
1/2 cup chopped green bell pepper
1 teaspoon chili powder
1/4 teaspoon pepper
1 teaspoon salt
1 (14 ounce) can diced tomatoes
1 (14 ounce) can corn
1 beef bouillon cube
1 cup water
1 cup Minute Rice (uncooked)

Steps:

  • Dissolve the beef boullion cube in the 1 cup of water.
  • Brown beef and drain.
  • To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
  • Bring to a boil.
  • Stir in rice and remove from heat.
  • Cover.
  • Let stand 5 mintues, fluff with fork.
