2 cups all-purpose flour, plus additional for dusting
3 large whole eggs plus 1 large egg yolk
Kosher salt
4 tablespoons unsalted butter
8 ounces Parmesan, finely grated, plus more for garnish
2 ounces black truffle, finely shaved

Steps:

  • For the fresh pasta: Combine the flour, eggs and yolk in a food processor and pulse until a dough comes together. Transfer to a counter dusted lightly with flour and knead gently until the dough comes together and is smooth, about 1 minute. Wrap in plastic and refrigerate for at least 30 minutes and up to 24 hours.
  • Divide the dough into 4 pieces. With your hands, flatten and shape one piece of dough into a 1/2-inch-thick rectangle. Dust it lightly with flour and pass it through the widest setting on a pasta machine. (If the dough comes out oddly shaped, re-form into a rectangle.) Fold it into thirds, like a letter, and if necessary, flatten it to a 1/2-inch thickness. Pass it through the widest setting again with the seam of the letter perpendicular to the rollers. Repeat this folding and rolling step 10 to 12 times, dusting the dough with flour if it becomes sticky.
  • Without folding the dough, pass it through the next setting on the pasta machine. Continue to pass the dough through the machine, reducing the space between the rollers after each pass and lightly dusting the pasta with flour on both sides each time, until the pasta is about 1/16-inch thick and 3 inches wide.
  • Lay the rolled-out dough on a floured counter. Roll out the remaining dough in the same manner. Cut each piece of dough into 11-inch lengths. Cut the dough into fettuccine by hand, or by passing through the pasta machine on the fettucine setting.
  • For the black truffle sauce: Boil a large pot of salted water. Add the pasta and boil until al dente, about 3 minutes. Strain, reserving 2 cups of pasta water.
  • Add the butter to a large pan over medium heat and let melt. Add half the Parmesan and 1/2 cup pasta water and stir to combine. Add the pasta and toss to coat. Add the remaining Parmesan and stir to combine. If the sauce is too thick, add more pasta water. Divide pasta among 4 bowls. Top with shaved truffle and more Parmesan. Enjoy!

8 oz pasta
½ cup Parmesan cheese
1/2 stick salted butter
1 oz fresh black truffle
fresh parsley
salt and pepper to taste

Steps:

  • Bring a large pan of water to the boil, salt it generously (1 tbsp) and then cook the pasta until al dente. (Usually 1 minute less than the packet suggests)
  • Meanwhile grate the parmesan and set to one side.
  • Add the butter to a heavy based skillet and let it melt over a low heat.
  • Once the butter has melted grate in about 3/4 of the black truffle.
  • Stir well and then remove from the heat.
  • Reserve 1/2 cup of the pasta cooking water and then drain the pasta.
  • Stir the pasta into the butter, along with 1/4 cup of the reserved water. Stir gently over a low heat until everything is combined. Add more water if it starts to feel sticky.
  • Add the parmesan and serve immediately with fresh parsley garnish and more black truffle.

1 (16 ounce) package cheese gnocchi
⅓ cup finely chopped shallots
⅓ cup Pinot Grigio wine
1 clove garlic, finely chopped
½ cup salted sweet cream butter
1 teaspoon black truffle oil
1 cup finely grated Grana Padano cheese
1 tablespoon ground black pepper
½ teaspoon black truffle salt
3 thin slices shaved black truffle
1 tablespoon Grana Padano cheese, or to taste
black sea salt and ground black pepper, to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain gnocchi, and reserve and set aside 1/4 cup cooking water.
  • Bring shallots and wine to a boil in a large saute pan. Reduce heat slightly and simmer until reduced by half, 5 to 7 minutes. Add butter and cook until melted. Stir in truffle oil until well distributed. Add reserved cooking water, gnocchi, and Grada Padano cheese; toss until evenly covered and cook over medium-low heat until heated through and cheese has melted. Add pepper and truffle salt; toss well.
  • Transfer to a large serving bowl. Top with shaved truffles and remaining cheese and season with black sea salt and pepper.

6 ounces fresh fettuccine pasta
1 ounce fresh black truffle
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
1/4 teaspoon kosher salt
1 tablespoon heavy cream
1 ounce shaved parmesan cheese
1 chervil

Steps:

  • Bring a large saucepan of water to a boil and salt it. When the water has come to a full boil, put the fettucine into it and cook for 2 1/2 minutes.
  • While the pasta is cooking , heat a separate sauté pan to medium high heat and add the cream and a touch of the pasta water. When this is heated add the parmesan cheese, butter and salt to make a sauce, making sure to stir.
  • Add the cooked pasta to the sauté pan and toss until it is completely coated with the sauce.
  • With a pasta fork, twist the pasta and slide it into a small pasta bowl, using all of the sauce.
  • Garnish with the shaved cheese, chervil, olive oil and shave black truffles over the top.

8 ounces homemade fresh fettuccine
1/2 cup heavy cream
3 tablespoons butter
3 to 4 tablespoons mixed chopped fresh herbs such as tarragon, chives or Italian parsley

Steps:

  • Bring 2 quarts water to a boil with 1 tablespoon salt. Meanwhile, in a saucepan place the heavy cream and butter. Simmer over low heat for a minute or until slightly reduced and then season with salt and pepper. Keep warm over low heat. To the pot of boiling water, add the fettuccine, and bring water back to a boil. If pasta has just been made, cook for a few seconds after water returns to a boil, other wise cook until just slightly firmer than al dente, about 3 to 4 minutes. Drain fettuccine and add it to the cream sauce. Toss fettucine coating them with cream sauce. Add fresh herbs, salt, pepper and toss again, still over low heat, until sauce has thickened and fettuccine is well coated. Serve immediately.

Use white pepper for a cleaner presentation-especially if using white truffles. Economic variation using truffle oil (try any or all of the following options): Drain the pasta and coat with truffle oil before adding the sauce; saute chicken or another additional ingredient in truffle oil; and/or substitute butter with truffle oil. Slicing truffles: the thickness of the truffles greatly alters the flavour of the recipe. The average crowd pleaser is just thicker than paper thin. If paper thin, this will add a very delicate flavour (which you might find favourable if you're serving as an appetizer or side dish), so adjust spices according. Thicker shavings will have a very robust flavouring which is good for a main course or if you are adding any meats to the dish (try prosciutto, roasted chicken, or lobster), however you may want to limit the salt content to avoid making the flavour too savory. Serving a truffle dish: some foodies prefer to hold the truffles until service. Shave truffles as you serve each dish. In this case, shave the truffles very thinly. If using this method, you may want to add some truffle oil to the dish itself to ensure that the entirety of the dish is at least aromatic for those bites that may not catch a truffle shaving. Rescue: if the dish turns out with the flavour too heavy or too savoury, try adding a dash of sugar...works like a charm for me! (Experiment with a small separated portion first to make sure this is an effective cure.) Or toss in a small handful of pulled chicken pieces. May also be served cold.
