5 tablespoons butter
2 cups heavy cream
2 cups chicken broth or 2 cups vegetable broth
3 tablespoons minced garlic
1/2 cup diced onion
1 tablespoon cornstarch, mixed with small amount water
1 tablespoon minced fresh parsley
salt & fresh ground pepper
3/4 cup fresh shredded parmesan cheese

Steps:

  • Melt butter in large saute pan.
  • Add garlic and onions, saute until brown.
  • Add broth and cream and reduce for several minutes.
  • Slowly add the cornstarch/water mixture stirring until the sauce begins to thicken slightly.
  • Do not over thicken as the parmesean cheese will also act as a thickener.
  • Add the parmesan cheese, parsley, and salt & pepper.
  • Taste test and add more seasoning if needed.
  • Combine with fettuccini noodles and toss.
  • Serve immediately in warm bowl.

1 pinch ground black pepper
1 (3.5 ounce) jar prepared basil pesto

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettucine at a boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, melt 1 tablespoon butter in a deep skillet over medium heat. Add shrimp and garlic; cook and stir until shrimp turn pink, 2 to 3 minutes. Add remaining butter to the skillet and let melt. Stir in cream cheese and garlic powder until smooth, about 2 minutes. Stir in milk and Parmesan cheese until cheese is melted and sauce is smooth, about 2 minutes more. Season with pepper.
  • Fold pesto into the cream sauce. Drain fettuccine and toss with sauce.

1 1/4 cups grated parmesan cheese or 1 1/4 cups romano cheese
1/8 cup extra virgin olive oil
4 -6 garlic cloves
1/4 cup pine nuts or 1/4 cup almonds
8 ounces cream cheese
1/2 cup butter
1 cup milk
1 teaspoon garlic powder
1 lb cooked fettuccine

Steps:

  • Combine basil, 3/4 cup Parmesan cheese, oil, garlic cloves and pine nuts into a food processor or blender. Pulse until blended. Refrigerate at least 1 hour.
  • In large saucepan, over medium heat, combine cream cheese, remaining Parmesan, butter, garlic powder and milk, stirring constantly until smooth.

8 ounces already sliced portabella mushroom caps
1/2 cup butter
3 garlic cloves, minced
1 cup shredded parmesan cheese
1 teaspoon fresh coarse ground black pepper

2 tablespoons chopped fresh flat-leaf Italian parsley (or substitute w or Italian seasoning)

"Healthy alfredo sauce" is probably an oxymoron, but this is the way I always make a creamy sauce for pasta. It's obviously not an authentic alfredo, but we like it. I created this dish to use up some smoked salmon, and we totally enjoyed it. While I think you can adjust most of the ingredients here to your taste, I wouldn't mess with the smoked salmon or the capers, since they really are the dominant flavors.

1/2 cup low fat cottage cheese
1 tablespoon parmesan cheese, shredded
1 tablespoon flour
1/4 teaspoon black pepper, freshly ground

3/4 cup green bell pepper, chopped
1/4 cup onion, chopped
1 teaspoon olive oil
6 ounces smoked salmon, cut into bite-size pieces
1/2 cup cherry tomatoes, quartered

1 tablespoon fresh parsley, snipped
4 ounces fettuccine, uncooked (I used Florentine, which is 1/2 spinach and 1/2 egg pasta)
lemon pepper, to taste

Steps:

  • Boil and prepare fettuccine as directed on package instructions; drain and set aside.
  • (Before draining, reserve about 1/4 cup of pasta cooking water, which you can use later to thin the sauce or moisten the vegetables as you cook them, if necessary).
  • Place cottage cheese, 1 Tbsp parmesan cheese,flour, black pepper, lemon juice, garlic, and dill weed in a food processor bowl and pulse until smooth; set aside.
  • In a large nonstick pan or wok, heat oil over medium heat and saute green pepper and onion for about 3 minutes.
  • Turn heat down to low or low-medium and allow the pan to cool enough that the next ingredients won't burn.
  • Add tomatoes, capers, salmon, and sauce to the pan; stir and cook for 1-2 minutes or until heated through.
  • Add pasta and parsley and continue to cook on low for 1-2 minutes.
  • Remove from heat and serve, topping individual servings with pepper, lemon pepper, and parmesan to taste.

I got this recipe from "The Vegetarian Low-Carb Diet" book by Rose Elliott. Description from book: Cyndi's Vegan Alfredo Sauce, which I've adapted just slightly by using almonds instead of cashews, is wonderful: really creamy and delicious, and packed with protein. It's great with vegetable 'pasta' and I also like it with Roasted Vegetables and Roasted Cauliflower with Lemon. You can use it whenever you want to add some extra protein to a meal. If you can get daikon (a long, white radish), it makes lovely 'fettuccine' and is very low in carbs - but you can also use courgettes, turnips or kohlrabi, for varying, slightly higher carb counts.

olive oil
9 ounces firm tofu, drained and broken into rough pieces
1 garlic clove, peeled and crushed
2 ounces sliced almonds
4 sprigs basil
2 tablespoons lemon juice
3 1/2-5 fluid ounces water
salt & freshly ground black pepper

Steps:

  • Start with the sauce. Put the tofu and garlic into a food processor and whiz until smooth. Then add the almonds and basil and whiz again until as smooth as possible.
  • Add the lemon juice and enough of the water - or more - to got a creamy consistency. Season to taste with salt and pepper, transfer to a saucepan and set aside.
  • Bring half a saucepan of water to the boil. Meanwhile, cut the daikon into long, thin ribbons by running a swivel potato down the length.
  • Put the ribbons into the boiling water, bring back to the boil and cook for about 4 minutes, or until al dente. Drain immediately and return to the pan.
  • While the daikon is cooking, gently reheat the sauce.
  • To serve, either add the sauce to the daikon and mix well, or toss, the daikon in a little olive oil, serve out onto plates and pour the creamy sauce over the top.

1 1/2 pounds zucchini (spiralized (I use the ribbons blade on my spiralizer))
2 tablespoons extra virgin olive oil (divided)
Fresh minced parsley and/or fresh basil cut into ribbons
Extra drizzle of olive oil

Steps:

  • Make the sauce: Add the drained beans, garlic, almond milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon olive oil to the pitcher of a blender (high-speed blender is best). Puree, blending for about a minute until completely smooth. Taste and add additional salt and pepper if desired. You may also want to add more garlic if your garlic is mild and/or you reallllly love garlic.
  • Make and cook the zucchini pasta: Using a spiralizer, cut the zucchini into ribbons. Set a large saute pan over medium-high heat. Add 1 tablespoon olive oil and a pinch of salt. When hot, add the zucchini. Saute, stirring occasionally, until tender and reduced in size a bit, 2-3 minutes.
  • Add sauce! Pour the sauce over the top. Cook, stirring occasionally, until heated through, about 2 more minutes.
  • Top with herbs and a drizzle of olive oil if desired. Serve.
