½ (8 ounce) package cream cheese, softened
1 (4 ounce) package crumbled feta cheese, or to taste
⅓ cup frozen chopped spinach - thawed, drained, and squeezed dry
2 stalks scallions, white and green parts, thinly sliced
1 (3/4 pound) boneless salmon fillet
1 tablespoon olive oil, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a large baking dish with cooking spray.
  • Combine cream cheese, feta cheese, spinach, and scallions in a small mixing bowl. Mash ingredients until well blended.
  • Cut salmon fillet into 2 equal pieces. Brush the top of one piece with olive oil and place oiled side down in the prepared baking dish. Spread filling evenly over top; it will be about 3/4 inch thick. Place the second piece of salmon on the filling and brush the top with olive oil.
  • Bake in the preheated oven until fish flakes evenly with a fork and filling is hot, 20 to 30 minutes. The time will depend on the size and weight of salmon used; check progress at 20 minutes to determine if additional baking time is needed.
  • Remove from the oven and slice into 2 pieces to serve.

3 ounces cream cheese, softened
3/4 cup crumbled feta
2 scallions, thinly sliced, including the crisp part of the green
1/2 cup fresh spinach, chopped
3/4 pound salmon fillets, cut into 2 pieces
Olive oil

Steps:

  • Preheat the oven to 350 F degrees.
  • In a bowl, combine the cream cheese and feta, mashing and stirring with a fork until well blended. Add the scallions and spinach and combine well. Spread the mixture evenly over 1 salmon fillet. (The filling will be about 3/4-inch thick.) Top with the second salmon fillet. Brush both sides with olive oil, turning over carefully with a spatula, and place on a shallow baking pan. Bake for 20 minutes; test for doneness with a toothpick. To serve, slice carefully with a sharp, serrated knife.

1 salmon fillet (8 ounces)
2 teaspoons lemon juice
1/2 teaspoon Greek seasoning
1/2 cup quinoa, rinsed
1 cup reduced-sodium chicken broth
1 teaspoon olive oil
4 cups coarsely chopped fresh spinach
1 cup grape tomatoes, halved
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
1 tablespoon minced fresh oregano
1/8 teaspoon pepper
Lemon wedges

Steps:

  • Preheat oven to 375°. Place salmon on a foil-lined baking sheet, skin side down. Sprinkle with lemon juice and Greek seasoning. Bake until fish just begins to flake easily with a fork, 15-18 minutes., Meanwhile, in a small saucepan, combine quinoa, broth and oil; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and quinoa is tender, 12-15 minutes., To serve, break salmon into 1-in. pieces using a fork. 4 skinless salmon fillets (6 ounces each)
Coarse salt and ground pepper
1 tablespoon olive oil
2 bags (5 ounces each) baby spinach
1/2 cup feta, crumbled (2 ounces)
1/3 cup pine nuts
2 teaspoons fresh lemon juice

Steps:

  • Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.
  • Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain off excess liquid. Stir in feta, pine nuts, and lemon juice. Serve salmon with spinach saute.

1 1/2 lbs salmon fillets
200 g ricotta cheese
125 g feta cheese
1 teaspoon ground pepper
1 cup spinach
1/4-1/3 cup fat-free Miracle Whip
1/2 lemon, juice of

Steps:

  • Butterfly salmon fillet by inserting knife into side of fillet and running it lengthwise to cut salmon open like a bun making sure not to cut all the way through(salmon should remain in one piece).
  • In small bowl mix cheeses and pepper till smooth. Spread on one half of salmon. Layer spinach on top of cheese mixture and fold t op half of fillet over filling.
  • Spoon miracle whip on top of fillet and squeeze lemon juice over top.
  • Bake at 375F in a greased and covered casserole dish for 15-20 minutes until fish is cooked through and flakes easily with a fork.

1 cup ricotta cheese
1 cup crumbled feta
white pepper, to taste
salt, to taste
1 tablespoon Dijon mustard
1 cup packed baby spinach leaves, divided
extra virgin olive oil
fresh ground black pepper, to taste
fresh dill, to garnish
fresh oregano (to garnish)

Steps:

  • Preheat oven to 450°F.
  • Slice the salmon through the center almost to the other end so the salmon will lay open flat in one large piece.
  • Turn salmon over so gray underside is turned up.
  • Set aside.
  • In a bowl, combine the ricotta cheese and feta, mashing and stirring with a fork until well blended.
  • Season to taste with white pepper and salt.
  • Spread the salmon filet with the mustard.
  • Lay 1/2 cup of the spinach over the mustard.
  • Evenly spread the cheese mixture on top of the spinach.
  • Top with the remaining spinach leaves.
  • Gently roll the salmon up and secure with cooking twine.
  • Place salmon in a baking dish coated with olive oil.
  • Brush the top and sides of the fish with olive oil.

2 thick salmon filets, skin removed
1/2 c reduced fat feta cheese crumbles
1 c lowfat ricotta cheese
1 c fresh spinach, chopped
1 egg, beaten
1 tsp garlic powder
1/2 tsp pepper
1 small lemon

Steps:

  • 1. Preheat oven to 350 degrees. Grease a small baking dish (9x9 or equivalent).
  • 2. Rinse and pat dry the salmon filets. Cut a slit a little more than 3/4 of the way down the length of the filet....like you are making a letter "V". Place the filet in the baking dish, forming a circle (as best you can). You will place the stuffing in the center.
  • 3. In a medium bowl, combine the feta, ricotta, spinach, egg and seasonings. Mix well.
  • 4. Spoon half the mixture into each filet. Squeeze half the lemon juice over each filet.
  • 5. Bake for 15-20 minutes. Serve.

1 cup ricotta cheese
1 cup crumbled feta cheese
Salt and pepper to taste
1 tablespoon Dijon mustard
1 cup packed baby spinach, divided
Extra virgin olive oil
Chopped dill
Chopped oregano

Steps:

  • Butterfly salmon fillet through the center so that it lays open flat in one large piece like a book. Turn salmon over so gray underside is facing up and arrange on a clean work surface. In a bowl, mash together ricotta and feta until well blended then season with salt and pepper. Season salmon with salt and pepper then spread fillet with mustard and arrange half of the spinach over the top, leaving a 1-inch border around the edges. Evenly spread cheese mixture on top of spinach then top with remaining spinach. Starting from one of the long sides, gently roll up salmon and tie snugly with cooking twine at 1-inch intervals. 1 tablespoon coconut oil
1 medium yellow onion, diced
2 garlic cloves, minced
12-15 asparagus spears, cut in 1″ dice
1 cup dried sprouted trio quinoa, cooked according to directions
½ cup crumbled feta cheese
1 tablespoon chia seeds
⅓ cup slivered almonds
1½ cup fresh spinach leaves
2 hard boiled eggs, diced
2 tablespoon diced parsley
1 lemon
½ cup olive oil
Kosher salt and pepper to taste
1½ pounds skinned salmon
¼ teaspoon cayenne pepper
¼ teaspoon lemon pepper seasoning

Steps:

  • Preheat oven to 400 degrees and line a baking sheet with foil. Place salmon on sheet and sprinkle top of salmon with cayenne pepper and lemon pepper seasoning. Squeeze ½ of lemon over top. Let sit. In a medium skillet over medium heat, melt coconut oil. Add diced onions and cook stirring for 5 minutes, toss a pinch of kosher salt. Add garlic and stir for 30 seconds to heat. Add asparagus spears and cook 3-5 minutes stirring to cook. Will become vibrant green. Dump ingredients into large bowl. Place salmon in oven for 15 minutes on rack in middle of oven. Add quinoa to small saucepan of boiling water and a pinch of kosher salt, cover and turn down to simmer for 12 minutes. When quinoa is done, remove from heat and add spinach to top of quinoa put lid back on and let steam for 3-5 minutes, or until spinach starts to wilt. Add spinach and quinoa to asparagus and toss. Add chia seeds, ½ lemon juice, olive oil, almonds, feta cheese, parsley, egg and salt and pepper to bowl of asparagus. Toss to coat ingredients. Place a portion of quinoa in large bowl or plate and top with a salmon fillet.

1/2 cup KRAFT Greek Vinaigrette Dressing
12 sheets frozen phyllo dough, thawed
4 skinless salmon fillets (1 lb.)
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup chopped English cucumbers
1 Tbsp. chopped fresh dill

Steps:

  • Heat oven to 425ยบF.
  • Combine first 3 ingredients. Spray 1 phyllo sheet with cooking spray; top with 2 of the remaining phyllo sheets, spraying each sheet with additional cooking spray before using as directed. Place remaining phyllo sheets between sheets of plastic wrap; set aside until ready to use.
  • Place 1 fish fillet along one short side of phyllo stack; top with 1/4 of the spinach mixture. Fold over long sides of phyllo, then roll up, starting at fish-topped side. Repeat with remaining phyllo sheets, fish and spinach mixture. Place, seam sides down, on parchment-covered Baking Sheet; spray with cooking spray. Cut 3 diagonal slits in top of each wrap.
