These potatoes have a nice Mediterranean flair to them, with the lemon, garlic, and herbs. These are so delicious out of the oven topped with plenty of feta cheese.

5 pounds potatoes, cut into wedges
6 cloves garlic, minced
¾ cup olive oil
1 cup water
¼ cup fresh lemon juice
sea salt to taste
ground black pepper to taste
1 ½ tablespoons dried oregano
1 teaspoon chopped fresh mint
1 (8 ounce) package crumbled feta cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
  • Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.
  • Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. If the dish appears dry, pour another 1/2 cup water into the dish. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.

1 1/2 lbs potatoes
2 tablespoons butter
1 egg, beaten
3 ounces feta cheese, diced fine
salt and pepper
2 tablespoons finely chopped parsley
flour (for dipping)
oil (for frying)

Steps:

  • Peel and dice the potatoes and boil until tender.
  • Drain and return to the hot pot to steam dry for a minute.
  • Mash thoroughly.
  • Mash in the butter, then the egg.
  • Mix in the feta cheese.
  • Season with salt and pepper and stir in the parsley.
  • Form into patties and dip in the flour.
  • Fry in hot oil until golden brown on both sides, approx 3-5 minutes.

The best part is no more boiling water and crowding your stovetop. Instead, we put all the ingredients together in one dish and then bake it in the oven. Cooking the dish covered helps simmer and steam the potatoes at the same time, making them smooth and fluffy when mashed. The baked feta bubbles and melts into the potatoes to lend a subtle and delicious tanginess.

6 tablespoons unsalted butter, cut into cubes, plus more for the dish
4 pounds russet potatoes, peeled, quartered lengthwise and sliced into 1/4-inch-thick pieces
2 cups half-and-half
Kosher salt and freshly ground black pepper
One 7-ounce block feta cheese
1/2 cup sour cream
1 tablespoon chopped chives

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-by-2-inch (3.75-quart) casserole dish with butter.
  • Put the potatoes in the prepared casserole dish, add the half-and-half and stir to combine. Spread the potatoes in an even layer and place the block of feta in the center, on top of the potatoes. Season with 1 tablespoon salt and a few grinds of pepper and dot the butter over the potatoes. Cover the casserole with aluminum foil and bake until the half-and-half is simmering, the cheese is bubbling and the potatoes are cooked through and very tender when pierced with a small sharp knife, about 1 hour and 20 minutes.
  • Remove and reserve the aluminum foil. Use a potato masher to mash the ingredients in the casserole dish until well combined, smooth and fluffy. Fold in the sour cream and season with salt and pepper. Cover the mashed potatoes with the reserved foil and return to the oven until warmed through, about 10 minutes. Top with the chopped chives and a few grinds of pepper.

1 lb potato
4 ounces feta cheese
4 spring onions or 1 onion, tennis ball- size,chopped
3 tablespoons chopped fresh dill or 1 1/2 tablespoons dried dill
1 tablespoon lemon juice
1 egg, beaten
flour (for dredging)
olive oil
salt & freshly ground black pepper

Steps:

  • Boil the potatoes in their skins in lightly salted water until soft.
  • Drain, peel the potatoes while warm, place in a bowl and mash.
  • Add the feta cheese crumbled, the spring onions or the onion, dill, lemon juice and egg.
  • Season with salt and pepper (not too much salt: the feta cheese is fairly salted already).
  • Stir well.
  • Cover the mixture and chill about 30 minutes.
  • Divide the mixture in walnut-size balls, and flatten them slightly so they look like little thick cookies (it helps to have a bowl with water on the table to clean the hands after making several patties: they get very sticky!).
  • Dredge with the flour.
  • Heat some oil in a frying pan (like 3 tablespoons) and fry the patties until golden brown on each side.
  • Keep adding little oil when needed.
  • Drain on kitchen paper and serve warm.

a drop of rapeseed oil, for the baking sheet
700g potatoes, peeled and cut into chunks
1 lemon, zested, half juiced
6 spring onions, very finely chopped
2 tbsp chopped mint
3 tbsp chopped parsley
100g feta, crumbled
1 large egg
6 tbsp wholemeal flour
½ tsp smoked paprika
320g tomatoes, cut into wedges
1 cucumber (about 320g), diced
1 red onion finely chopped
12 Kalamata olives, quartered
1-2 tbsp finely chopped mint
2 tsp lemon juice
2 tsp extra virgin olive oil

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and oil a non-stick baking sheet. Bring a pan of water to the boil, add the potatoes and cook for 15-20 mins until tender. Drain very well, then return to the pan and mash with lots of black pepper, the lemon zest and juice, the spring onions, mint and 2 tbsp of the parsley. Stir through the feta.
  • Beat the egg in a shallow bowl, then mix the flour, paprika and remaining 1 tbsp parsley in another. Shape the potato mixture into eight cakes, then carefully coat all over in the egg, then the flour mix, reshaping them if you need to. Arrange the cakes on the baking sheet and bake for 15 mins until starting to turn golden. Use a palette knife to carefully turn each one over and bake for another 10-15 mins until golden.
  • Meanwhile, toss half the salad with half the lemon and oil. Serve with four cakes and chill the remainder for another day, tossing the remaining salad with the rest of the lemon and oil just before serving. Will keep, covered, for up to two days in the fridge. To reheat the cakes, cook on a baking tray at 200C/180C fan/gas 6 for 15-20 mins.
