Strawberry Spinach Salad with Candied Walnuts image

This classic salad goes with just about anything you're serving. The juicy berries add a pop of color to the greens, and the sweet, crunchy nuts are good enough to eat all on their own! -Susan Howell, Royal Oak, Michigan

1/2 cup sugar
1/4 cup water
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/4 teaspoon curry powder
2 cups walnut halves
SALAD:
1 package (9 ounces) fresh baby spinach
2 cups sliced fresh strawberries (about 1 pound)
1 medium cucumber, halved and sliced
VINAIGRETTE:
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons seedless raspberry jam
1 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup grated Parmesan cheese

Steps:

  • In a small heavy saucepan, combine the first 5 ingredients; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium heat. Cook 1 minute. Uncover pan; continue to boil and gently swirl pan until syrup turns a deep amber color, about 2-3 minutes. Immediately remove from heat and carefully stir in walnuts until evenly coated. Spread onto foil to cool completely. Break into pieces., In a large bowl, combine spinach, strawberries and cucumber. In a small bowl, whisk the first 6 vinaigrette ingredients. Drizzle over salad; toss to coat. Sprinkle with cheese and walnuts. Serve immediately.

¼ cup apple cider vinegar
¼ cup sugar
¼ cup vegetable oil
¼ teaspoon paprika
1 dash Worcestershire sauce
1 tablespoon butter
½ cup slivered almonds
1 quart strawberries
2 romaine hearts, chopped into bite size pieces

Steps:

  • In a bowl, mix the vinegar, sugar, oil, paprika, and Worcestershire sauce. Cover, and refrigerate at least 6 hours.
  • Melt butter in a skillet over medium heat. Stir in the almonds, and cook until golden brown. Remove from heat, and cool.
  • In a bowl, toss the strawberries, romaine, and almonds. Mix with the dressing just before serving.

1/4 cup shelled raw unsalted pistachios
1/4 cup chopped raw unsalted hazelnuts
2 tablespoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
1/2 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups baby arugula
2 cups baby kale
2 cups baby spinach
2 cups quartered and sliced radicchio
3 mandarin oranges, peeled and segmented
1/2 cup pomegranate seeds
1/2 cup dried cranberries
1/2 cup fresh blueberries
1/4 cup freshly grated Parmesan

Steps:

  • For the candied nuts: In a nonstick skillet over medium-high heat, toast the pistachios and hazelnuts until fragrant, 4 to 5 minutes. Add the brown sugar, salt, vanilla and 1 tablespoon water directly to the pan with the nuts and stir to coat them. Cook until the sugar has dissolved, about 1 additional minute. Transfer to a parchment-lined baking sheet and allow to cool, 12 to 15 minutes.
  • For the dressing: Combine the olive oil, vinegar, maple syrup, mustard, salt and pepper in a mason jar. Secure the lid and shake to combine. Set aside.
  • For the salad: Spread the arugula, kale and spinach over a large round platter, leaving space in the center of the platter (it should look like a holiday wreath). Top the greens with the radicchio. Arrange the mandarin segments over the greens. Sprinkle with the pomegranate seeds, cranberries, blueberries and cooled candied nuts.
  • Lastly, sprinkle with the Parmesan, creating the look of snow. Shake the dressing one more time and pour it into a serving bowl. Place the bowl in the center of the platter and serve.

Strawberry Nut Salad image

My mom gave me this recipe and it comes from a PTA cookbook which is at least 45 years old. Our family is now twice removed from those origins in Western Pennsylvania - first to NJ and now to Maine. Sometimes going back to your roots is a very good thing.

1 (6 ounce) box strawberry Jell-O gelatin dessert
1 cup boiling water
2 (10 ounce) packages frozen strawberries
28 ounces crushed pineapple (drained)
3 medium bananas (mashed)
1 cup coarsely chopped walnuts
1 pint sour cream (at room temperature)

Steps:

  • Day (or about six hours) before:.
  • In large saucepan, combine jello with boiling water, stirring until dissolved. Fold in strawberries with juice, drained pineapple, bananas and nuts.
  • Pour 1/2 of mixture into 13x9" baking dish for 1st layer. Refrigerate until firm (about 90 minutes).
  • Spread top evenly with sour cream. Gently spoon on rest of strawberry mixture and refrigerate. For best results, keep refrigerated until serving.
  • When I was shopping for the ingredients for this dish I realized that you could probably use other combos of fruit and jello flavors - I think I'll experiment next time. It could also be made to fit any diet by using artificially sweetened fruit and low fat sour cream.
