ROASTED BUTTERNUT SQUASH AND FENNEL SOUP WITH CITRUS
Roasted butternut squash, fresh fennel, onions, and garlic are blended with spices, marmalade, and cream for a deliciously decadent soup that's the perfect starter for your holiday feast! My favorite way to garnish the soup is to whip up additional heavy cream until soft peaks form, then top each bowl with a small dollop. I then lightly drizzle each dollop with extra marmalade that's been melted in the microwave for 10 to 20 seconds.

Steps:
- Position rack in upper third of oven and preheat to 425°F. Mix brown sugar, cumin, salt, pepper, and cayenne in a small bowl. Toss squash, fennel, and grapes with oil and half of spice mixture on rimmed baking sheet and arrange in a single layer.
- Rub chicken thighs with remaining spice mixture and arrange, skin side up, on top of fruit and vegetables. Roast until skin is browned and an instant-read thermometer inserted into the thickest part of chicken registers 165°F, about 35 minutes; if chicken skin or vegetables start to burn, move pan to a lower rack to finish cooking.
- Divide chicken, fruit, and vegetables among 4 plates and top with mint.
FENNEL-CUMIN ROASTED BUTTERNUT SQUASH
Steps:
- Heat the oven to 400 degrees. Peel and seed the squash, then cut it into 1-inch chunks. Mound the squash on the baking sheet, then drizzle with several tablespoons of olive oil. Toss with your hands to coat evenly, then spread in an even layer. Roast for 15 minutes, then use a spatula to turn the pieces and roast for another 15 minutes, or until evenly browned. During the final 5 minutes of roasting, in a small dry skillet over low heat, toast the fennel and cumin seeds, stirring constantly, until fragrant, about 2 to 3 minutes. Remove the skillet from the heat and stir in 2 tablespoons of olive oil and the lemon juice. Season with salt and pepper. When the squash is done, transfer to a bowl. Drizzle the dressing over it and gently toss to coat. Serve warm.
