This quick and simple herb rub can be put into a mill and used to marinade or season meat and vegetables

3 tsp dried chilli flakes
3 tbsp dried thyme
2 tbsp dried rosemary
4 bay leaves , crushed
1 tsp celery salt
2 tbsp peppercorns

Steps:

  • Mix all the ingredients together in a bowl, then carefully transfer to a pepper mill or an airtight jar. Simply grind over your favourite meat before cooking, or over veg before roasting, for extra flavour.

This beef rub is great for beef, pork and lamb. Once you mix the spices they'll keep about 4 months in an airtight jar. When ready to use, just rub into the meat, wrap in plastic, and refrigerate the night before grilling.

2 ½ tablespoons dark brown sugar
2 tablespoons paprika
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 ½ teaspoons dried basil
1 teaspoon ground bay leaves
¾ teaspoon ground coriander seed
¾ teaspoon ground savory
¾ teaspoon dried thyme
¾ teaspoon ground black pepper
¾ teaspoon ground white pepper
⅛ teaspoon ground cumin
salt to taste

Steps:

  • In a small bowl, mix together the brown sugar, paprika, mustard powder, onion powder, garlic powder, basil, bay leaves, coriander, savory, thyme, black pepper, white pepper, cumin, and salt. Store in an airtight jar at room temperature until ready to use.

This rub adds flavour to meat dishes before cooking on the BBQ. I found it in a BBQ book by Annabelle White

1 piece fresh gingerroot
2 cloves garlic
2 tablespoons brown sugar
1 stalk lemongrass
1 tablespoon coriander seed
1/2 tablespoon clove
1/2 tablespoon ground cinnamon
6 whole black peppercorns
1 red chile, deseeded
1 teaspoon salt

Steps:

  • Place all ingredients in a blender and puree.
  • This rub will keep in the fridge for up to 3 weeks.
  • Rub over lamb beef, or chicken before cooking.
  • It is great on whole legs of lamb or sirlions.
  • Although I have put in the yield, I have never measured this, I just use it till it has all gone.
