3 pounds russet potatoes (about 6 medium)
Kosher salt and freshly ground pepper
3 tablespoons distilled white vinegar, divided
3/4 cup mayonnaise
2 tablespoons whole-grain mustard
1 cup finely chopped celery (from 3 stalks)
1/2 cup sliced cornichons (from about 20)
1/3 cup finely chopped scallions (from 3)

Steps:

  • Peel potatoes. Slice lengthwise into 1-inch-thick planks. Lay flat and slice again into 1-inch-thick strips. Stack strips together and cut crosswise into even cubes.
  • In a large pot, cover potatoes with at least 2 inches of water and season generously with salt. Bring to a boil, then reduce heat to medium-high and continue boiling until potatoes are tender and easily pierced with the tip of a knife, 8 to 9 minutes. Drain and transfer to a bowl. Toss with 2 tablespoons vinegar; season with salt and pepper. Let cool completely, about 30 minutes.
  • Meanwhile, whisk together mayonnaise, mustard, remaining 1 tablespoon vinegar. Stir in celery, cornichons, and scallions. Gently fold mayonnaise mixture into cooked potatoes; season with salt and pepper. Serve, or refrigerate in an airtight container up to 1 day (bring to room temperature before serving, about 30 minutes).

3/4 cup mayonnaise
1/2 cup sour cream
1/2 cup plain yogurt

4-1/2 teaspoons Dijon mustard
1 teaspoon prepared horseradish
2 garlic cloves, minced
1/2 teaspoon celery seed
1/2 teaspoon salt
1/4 teaspoon pepper
Dash onion salt
Dash garlic powder
4 hard-boiled large eggs, coarsely chopped

Steps:

  • Place potatoes in a saucepan and cover with water; bring to a boil over high heat. Cook for 20-30 minutes or until tender; drain and cool slightly. Slice potatoes into a large bowl. , In a small bowl, combine the mayonnaise, sour cream, yogurt, onions, pickles, mustard, horseradish, garlic and seasonings. Pour over potatoes and toss to coat. 5 pounds medium red-skinned potatoes
1 medium white onion, finely grated
1/2 cup distilled white vinegar
1 teaspoon sugar
1/2 teaspoon coarse salt
Pinch of freshly ground black pepper
1 cup mayonnaise, preferably Hellman's
1 cup buttermilk
1/3 cup sliced cornichons
1/4 cup chopped flat-leaf parsley, for garnish (optional)
Hard-boiled eggs sliced, for garnish (optional)
Freshly ground white pepper

Steps:

  • Fill a large pot with about 2 inches water and add a pinch of salt. Set steamer basket in pot; make sure water doesn't seep through holes. Bring to a boil, and then reduce to a rapid simmer.
  • Add potatoes to steamer basket. Cover and steam until tender when pierced with the tip of a paring knife, 20 to 25 minutes. Remove potatoes and allow to cool slightly. Peel potatoes, and slice into 1/4-inch-thick slices.
  • Combine onion, vinegar, sugar, salt, and pepper in a large bowl. Add potatoes and use a large rubber spatula to gently combine, trying not to break up potato slices. Let stand for 10 minutes. Add mayonnaise, buttermilk, and cornichons. Add mixture to another bowl and repeat process of transferring potato mixture from one bowl to another to mix gently until well combined and creamy. Refrigerate for at least 2 hours; the mixture will thicken as it stands. Garnish with parsley and/or sliced hard-boiled eggs, if desired. Season with salt and white pepper.

6 large hard-boiled eggs, divided
8 large red potatoes or 8 large yukon gold potatoes, washed well, do not peel
5 green onions or 4 scallions, chopped small
10 large radishes, chopped into small cubes
4 large celery ribs, chopped small
1/2 cup chopped gherkins or 1/2 cup dill pickle
2 cups Miracle Whip (no subsitutes)
1 teaspoon dry mustard
2 tablespoons Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons finely chopped fresh dill weed
1 tablespoon granulated sugar
2 tablespoons cider vinegar
3 tablespoons gherkin pickle juice
1/2 teaspoon granulated garlic powder
2 teaspoons celery seeds (optional)
1/2 teaspoon Hungarian paprika, for sprinkle
4 sprigs fresh parsley (to garnish) (optional)

Steps:

  • Punch a hole in the small end of the eggs using an egg piercer.
  • Place eggs in a saucepan and cover with cold water; bring to boil. Reduce heat and simmer for 15 to 20 minutes. When cooked, drain and cover with cold water to cool.
  • When cooled,peel, rinse under cold water and set aside.
  • In the meantime, scrub potatoes and add to a large saucepan or cooking pot. Cover with cold water and bring to boil. Reduce heat, cover and cook for about 15 minutes just until the potatoes are fork tender. Do not overcook.
  • Drain potatoes and let cool slightly.
  • When cooled enough to handle, remove any skins using a paring knife and discard.
  • Cut potatoes into about 1/2 inch cubes and add to a large mixing bowl.
  • Using an egg cutter, cut 4 hard boiled eggs and add to bowl.
  • Chop green onions, both green and white parts and add to bowl.
  • Dice radishes to about 1/4 inch cubes and add to bowl.
  • Dice celery into 1/4 inch cubes and add to bowl.
  • Add chopped gherkins to bowl.
  • Gently mix the ingredients to blend.
  • In a mixing bowl, add Kraft Miracle Whip Mayonnaise, dry mustard, Dijon mustard, salt, pepper, chopped dill weed, sugar, cider vinegar, pickle juice, granulated garlic powder, celery seed and mix well to blend.
  • Add mixture to the large bowl and gently mix the ingredients until well mixed and coated.
  • The potato salad should be quite moist, not dry and if necessary, add more mayonnaise to suit your taste.
  • Transfer potato salad to a nice serving bowl.
  • Cut the remaining 2 hard-boiled eggs into quarters and place on the top of the potato salad decoratively.
  • Sprinkle over with Hungarian Paprika.
  • Place a few sprigs of fresh parsley to decorate.
  • Refrigerate potato salad for a least one hour before serving.
  • Refrigerate any unused potato salad and it should be used within 3 days.

8 medium russet potatoes, scrubbed but not peeled
1/2 cup white onion, finely chopped
1 apple, chopped
2 stalks celery & leaves, very thinly sliced
4 dill pickles, chopped
1 tablespoon sweet pickle relish, heaping
2 teaspoons sugar
1 tablespoon cider vinegar
1 tablespoon pickle juice
1 tablespoon extra virgin olive oil
2 teaspoons yellow mustard (such as French's)
1 cup mayonnaise (such as Hellman's or Best Foods)
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons parsley, finely chopped, divided use
5 hardboiled egg, divided use
fresh tomato, slices for garnish (or grape tomatoes or cherry tomatoes)
fresh torn lettuce leaf, for garnish
paprika, for garnish

Steps:

  • In a large covered pot, bring potatoes to a boil in enough salted water to cover by at least 1 inch. Lower heat to a simmer, and cook about 25-30 minutes or until potatoes are tender when pierced with a fork, but still firm. (Cooking time will vary according to the size and freshness of the potatoes).
  • Drain potatoes in colander, and briefly run cold water over the potatoes. Transfer drained potatoes back into the empty covered pot and set on a very low flame for just a minute or two, being careful not to scorch them. This will help to dry the potatoes and to ensure that they are not wet or soggy. Return potatoes to colander, and let them cool to the touch.
  • Peel and then slice the potatoes into one inch pieces.
  • In a large bowl, stir together the onions, apples, celery, dill pickles, sweet relish, and one tablespoon of the chopped parsley.
  • In a separate bowl, whisk together the sugar, vinegar, pickle juice, olive oil, mustard, mayonnaise, and the salt and pepper. Pour over the onion mixture, stirring well to coat evenly.
  • Add the potatoes and 3 chopped hardboiled eggs. Fold and stir gently to combine. Transfer to a wide and shallow serving dish.
  • Garnish with 2 quartered hardboiled eggs, tomato slices, and the torn lettuce. Sprinkle with remaining parsley and the paprika.
  • Cover and keep refrigerated until serving time.

2 eggs
1/2 c sugar
1/4 c white wine vinegar
1 - 1 1/2 c mayonnaise
1 Tbsp yellow mustard
1 tsp salt

2 - 2 1/2 lb red skinned potatoes - or white, peeled, cut in half
2 c celery, thinly sliced
1/2 c red onion, chopped
5 - 6 hard cooked eggs, cut into wedges, or chopped
1/2 c green onions - sliced
1/2 c diced red pepper ( optional )
pickles, minced ( optional )

Steps:

  • 1. Dressing: Whisk eggs in small saucepan. Whisk in vinegar and 2 tablespoons water. Bring to boil over medium high heat. Boil for 3-4 minutes or until thickened, stirring constantly. Pour into medium bowl, whisk in mayonnaise, mustard, salt and pepper. Cover and refrigerate until well chilled.
  • 2. Cook potatoes in large pot of boiling water for about 20 minutes or until just tender. Drain and cool. Cut into 1 inch pieces. In large serving bowl,( I use my trifle bowl ) gently toss potatoes,pickles if using, celery, red onion, eggs, peppers if using, green onions with the dressing. You can garnish with some extra green onions. Chill until serving.
  • 3. I sometimes add about 1/2 tsp of prepared horse radish also..gives it a bit of zing... Double the dressing recipe for a larger crowd. I usually make a 5 pound bag of potatoes when making this. Enjoy!
