A beloved family recipe that produces a sour cream pound cake that is slightly crunchy on the outside and dense, rich and moist on the inside.

1 pound Imperial margarine
3 cups sugar
6 large eggs
1 teaspoon vanilla extract
3 cups all purpose flour
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees. Grease a a 10-inch straight sided tube pan with the margarine wrappers.
  • In the bowl of a stand mixer, add the margarine and sugar. Beat the margarine and sugar on medium low speed for 3 to 4 minutes.
  • Add the eggs to the margarine and sugar mixture one at a time and beat until incorporated after each addition.
  • Add in the vanilla extract. Mix to combine.
  • Combine the flour, baking soda and salt in a bowl.
  • With the mixer on low, add the sour cream alternately with the dry ingredients. Mix until just incorporated.
  • Pour batter into prepared pan. Bake for 60 minutes and check to see if done. A long wooden skewer should come out clean when inserted into the cake. If the cake is not done, continue baking for up to 15 minutes and cover lightly with foil if the top is browning too much.
  • Remove the cake from the oven when done. Let cook on a baking rack for 15 minutes. Run a knife between the cake and the edge of the pan and unmold the cake. Tap the sides of the pan to help loosen the cake.
  • Place on a cake stand and cool completely before covering.

2 ½ cups white sugar
1 ½ cups butter, softened
4 eggs
3 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 cup buttermilk
1 teaspoon lemon extract
2 cups confectioners' sugar
¼ cup lemon juice
2 tablespoons butter, softened
1 tablespoon lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Beat white sugar and 1 1/2 cups butter together in a bowl with an electric mixer until light and fluffy, about 10 minutes. Add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next.
  • Sift flour, salt, and baking soda together in a bowl. Add 1/3 of the flour mixture to the butter mixture; mix well. Pour in 1/2 the buttermilk and beat until combined. Repeat adding the remaining flour mixture and buttermilk, beating well after each addition, and ending with the flour mixture. Stir lemon extract into batter. Pour batter into prepared tube pan.
  • Reduce oven temperature to 325 degrees F (165 degrees C).
  • Bake in the oven until a toothpick inserted into the center of the cake comes out clean, 60 to 75 minutes. Cool in the pan for 10 minutes before removing to a cake platter or plate.
  • Beat confectioner's sugar, lemon juice, 2 tablespoons butter, and lemon zest together in a bowl until glaze is smooth. Pour about half the glaze over the cake; let cool. Pour remaining glaze over the cake.

This is my Aunt Faye's recipe. It's a pound cake, but it's not heavy at all. It's loved by many.

CAKE
1 box duncan hines butter recipe cake mix
1 c cake flour
1 c sugar
1 c sour cream, room temp
1 stick butter, room temp
5 eggs, room temp
1/4 c oil
1/4 c water
1 tsp vanilla extract
1 tsp butter flavoring
1 tsp almond extract
GLAZE
2 c powered sugar
1/4 c lemon juice

Steps:

  • 1. Preheat oven to 350 degrees. Spray tube bundt pan generously with Baker's Joy.
  • 2. Mix ingredients for cake together until smooth. Do not overmix.
  • 3. Pour batter into pan and bake for 55 -65 minutes until done (Use the fork or tooth pick test). Allow to cool for about 10-15 minutes and invert to serving dish.
  • 4. While cake is cooling mix powdered sugar and lemon juice to desired texture. It is only a glaze, so it should been a thick nectar consistency.
  • 5. Pour glaze over cake a little at a time spreading with the back of a spoon allowing it to soak into the still warm cake.
  • 6. Serve warm or room temperature.....it doesn't matter!

3 c sugar, sifted
2 c flour, sifted
3 tsp vanilla

2 stick butter, softened room temperature
1 c butter flavored crisco
3 c sugar
6 large eggs, room temperature
4 c cake flour, (i used king arthur self rising)
1/2 c milk
1 bottle lemon extract(2 oz) 4 tablespoons
4 Tbsp cake enhancer king arthur (my addition)
1 Tbsp lor ann lemon emulsion, my addition
LEMON BUTTER GLAZE
1 stick butter, melted
2 c powdered sugar
2 tsp lemon extract
3-4 Tbsp lemon juice or milk

Steps:

  • 1. Preheat oven to 325 degrees F. These are some of the main ingredients. I used Butter Flavored Crisco for the shortening.
  • 2. Here is the Cake Enhancer that I used, 1 tablespoon per cup of flour.
  • 3. This is one of the pans that I used to bake the cake it has a 10 cup capacity and is called a CROWN BUNDT PAN. Always remember when filling the pans to leave at least a 1 1/2 to 2 inch space from the top of the cake pan to allow for the cake to rise during baking.
  • 4. This is the other 10 cup Bundt pan that I used it is called an ELEGANT PARTY BUNDT PAN. Spray both pans liberally with Bakers Joy and set aside till needed.
  • 5. Add the butter and shortening & cake enhancer to a large mixing bowl and cream together by gradually adding in the sugar a small amount at a time, and beating until mixture is smooth and no granules remain.
  • 6. Add the room temperature eggs, one at a time and beat well after each addition.
  • 7. Gradually add in the cake flour, alternating with the milk & lemon extract & Lor Ann lemon emulsion. Beat well. Add a few drops of yellow food color if desired for a more lemon colored batter. Beat until batter is smooth. Then divide evenly between the two prepared cake pans or one large pan.
  • 8. Place in preheated 325 degree F. oven and bake for 1 hour or until toothpick inserted into center of cake comes out clean.
  • 9. Remove from oven sit on metal rack for about 5-7 minutes then invert onto a large cake platter. This is the ELEGANT PARTY BUNDT PAN CAKE.
  • 10. This is the Crown Bundt Cake. I decided to leave them both plain after all, and served them with fresh fruit. GLAZE: MELT BUTTER IN SAUCEPAN OVER LOW HEAT;THEN ADD SIFTED POWDERED SUGAR AND STIR, ADD IN LEMON JUICE OR MILK AND LEMON EXTRACT & STIR UNTIL BLENDED, REMOVE FROM HEAT. POUR OVER CAKE AND LET DRIZZLE DOWN SIDES OF CAKE AS DESIRED. Using lemon juice instead of milk adds more of a tart lemony flavor to the glaze.
