DH & I love cabbage, but cabbage heads are very lrg here in Iceland & we grow weary of the endless leftovers when the meat of that 1st meal disappears. So I am always looking for a creative way to make a new & tasty meal of them. Today I decided to make a simple cabbage soup & searched for a recipe to use what I had on hand. Altho there are a ton of cabbage soup recipes on RZ, none of them were exact enough to make & review in good faith. Along the way, however, I found a unique recipe & decided to use its concept for my soup. That recipe was Recipe #305021 by Sue L & I just happened to have a cup of coconut milk I needed to use. Was it a pure coincidence or a sign of fate? I decided to look upon it as the latter & this recipe was born. The ingredients are all pre-cooked & the amts I listed are meant to be guidelines based on what I had to work with, so feel free to vary them to suit your particular needs or preferences. *Enjoy* !

1/2 head cabbage (lrg size, pre-cooked & cut in bite-sized pieces)
1 large onion (red or white, rough chopped & pre-cooked with cabbage above)
2 cups vegetable stock (or chicken stock or broth)
1 large carrot (cut in coins & cooked, may use baby carrots cut in 1/2 - 1-in pieces)
2 small potatoes (cooked & cubed, use more as desired)
2 smoked pork chops (boneless, cooked & cubed, or use = amt of ham)
1 cup coconut milk
salt & pepper (to taste)
2 teaspoons chives (fresh-snipped or dried, optional garnish)

Steps:

  • Using a blender or hand-held blender, puree half of the pre-cooked cabbage & onion mixture w/the vegetable stock (or chicken stock if using). Transfer the puree mixture to a Dutch oven.
  • Add the other half of the pre-cooked cabbage & onion mixture + the cooked carrot, potato & smoked pork cubes (or ham if using). Bring soup to the starting point of a gentle boil, reduce heat to simmer & simmer 6-8 minutes.
  • Add coconut milk, stir to combine w/soup & remove from heat. Taste & season w/salt & pepper per taste preferences. You are good to go, so serve it up w/crusty bread & butter & garnish top w/chives as desired.
  • Note 1: Unsweetened vs sweetened coconut milk? While Sue L's recipe specified unsweetened coconut milk, mine was lightly sweetened & I found welcome the bare hint of sweetness it gave to the flavour.
  • Note 2: Using the puree mixture w/the coconut milk makes this soup thick & hearty. If a more liquid texture is preferred, use additional stock to reach your desired consistency.

I had some leftovers from Recipe#410327, which were leftovers from Recipe#126488 By Chef#145352. So,I came up with what I think is a very good soup. Please remember to use the mentioned recipes to get the exact taste that I reached. I served this with a grilled cheese sandwich on the side. Shredded cheese and croutons are optional. 10 1/2 ounces water
2 leftover cabbage rolls

Steps:

  • Combine soup and water in a medium sauce pan.
  • Heat over medium heat.
  • While soup is heating, cut cabbage rolls into bite size pieces and add to soup.
  • Stir until cabbage roll mixture is heated through.
  • Pour into bowls, and top with optional cheese and croutons.

6 cups green cabbage, cut into large pieces
3 cups baby carrots
2 medium onions, wedged
3 potatoes, sliced
12 ounces cooked ham, cut (leftovers)
4 cups low-fat chicken broth
1 cup crushed pineapple, including juice

Steps:

  • Layer cabbage, carrots, onions, potatoes and ham pieces in crock pot. (add ham bone if you have one, remove it before serving).
  • Add chicken broth and pineapple.
  • Cook for about 4 hours on high or until potatoes are done.
  • This goes great with french bread.

In Romania, the dish, formally known as sarmale, is an anticipated treat for the holidays. Here's my deconstructed version of this thick and hearty soup using either ground bison or ground beef.

1 lb lean ground beef
1/2-1 lb ground lean pork
1/2 red onion, diced
1 (14 ounce) can stewed tomatoes, pureed in food processor (plain or Italian-style)
1 (14 ounce) can stewed tomatoes, whole (plain or Italian-style)
1 (10 ounce) bag coleslaw mix
1 (16 ounce) jar sauerkraut (found in the cold deli section)
8 cups water
8 teaspoons chicken bouillon
2 teaspoons tomato bouillon
salt & pepper
1 cup barley

Steps:

  • Brown ground beef, ground pork & onion in a skillet over medium high heat.
  • Pour meat into a large crockpot.
  • Add stewed tomatoes, coleslaw mx, sauerkraut, water, bouillon, salt & pepper.
  • Add the barley the last hour of cooking.
  • Slow-cook on low heat 4 to 8 hours.

This recipe has linguica (Portuguese) sausage in it! I love cabbage and sausage soups in the winter time, think this would be delicious then. Do not use dark ale or stout....it will be too bitter...only use a light wheat beer. To make this easier, buy a bag of shredded cabbage and carrots to equal the correct amounts. Adapted from Sunset.

12 ounces linguica sausage, sliced 1/4 inch thick
1 onion, peeled and chopped (6 oz.)
1 large garlic clove, peeled and minced
5 cups chicken broth, fat-skimmed
1 (12 ounce) bottle wheat beer (hefeweizen)
1 lb small red potato, scrubbed and quartered (1 1/2-inch wide)
1 1/2 quarts cabbage, finely shredded (8 to 12 oz)
1 cup carrot, sliced 1/4 in. thick
1 teaspoon coriander seed
1/2 teaspoon whole allspice
1/2 teaspoon peppercorn
2 tablespoons parsley, chopped
whole grain mustard

Steps:

  • In a 5- to 6-quart pan over medium-high heat, stir sausage often until lightly browned, 6 to 8 minutes. Spoon out and discard all but 1 tablespoon fat from pan.
  • Add onion and garlic to pan; stir often until limp, 3 minutes.
  • Increase heat to high. Add broth, beer, potatoes, cabbage, and carrots. Wrap and tie coriander, allspice, and peppercorns in cheesecloth; add to the pot. Cover and bring to a boil; reduce heat and simmer until potatoes are tender to bite, 10 to 15 minutes. Discard wrapped spices.
  • Stir in parsley. Ladle soup into bowls. Serve mustard alongside to add to taste.

3 tablespoons butter
3/4 cup finely chopped onion
1 1/2 lbs lean ground beef
4 cups grated cabbage (use medium grater)
3/4 grated raw carrot (use medium grater)
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon mace
1/4 teaspoon Worcestershire sauce
2 tablespoons water
pastry for double-crust pie
1 egg yolk
1 tablespoon water

Steps:

  • Heat butter in large sauce pan. add onion and cook gently until tender, about 5 mionutes. add meat and cook and stir until all redness disappears. add cabbage, carrot, salt, pepper, mace, worcestershire sauce and water. cover and simmer 15 minutes. uncover and continue cooking until all excess liquid cooks away. meat should be moist but not wet. cool.
  • heat oven to 425 f
  • roll pastry very thin into oblongs or squares (roll 1/2 at a time) and cut into 6-ince (15-cm) squares. you should be able to make 18 squares so be sure to roll very thin.
  • lay the pastry squares out on the counter and top each one with 1/4 cup (60 ml) of the meat mixture. moisten 2 adjacent edges of the square with water and fold pastry over to form a triangle, pressing together along edges wtih the tines of a fork. put on large cookie sheets. beat egg yolk and water together an dbrush over tops of turnover (not on edges).
  • bake 25 to 30 minutes or until very well browned. serve hot.

This is a simple yet wonderful recipe. It's from House & Garden Magazine 1964. I make it often in the winter. Looking at the ingredients you'd never guess how delicious it is. Everyone I serve this to loves it! By the way, I'm vegetarian so I use canned vegetable broth instead.

1 large head white cabbage, shredded
1 1/2 quarts hot beef bouillon or 1 1/2 quarts vegetable broth

Steps:

  • Melt butter in a heavy kettle. Stir in sugar and cook until browned. Do not scorch.
  • Add cabbage and cook 3 minutes, stirring constantly.
