These are delicious, and very low in fat! I've served these with all sorts of dips, salsas, or hummus, and they always disappear-even before all the store bought chips or crackers. Feel free to experiment with the different spices shaken over the tops. Cumin is great for Mexican dips, but the Garlic Powder works really well too. Cayene pepper might be nice too if you like things a bit more spicy!

5 (6 inch) whole wheat pita bread
olive oil flavored cooking spray
3/4 teaspoon garlic powder (your choice) or 3/4 teaspoon onion powder (your choice)
salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees Cut each pita into 8 pieces, and then separate the pita"halves" to make 16 triangles per pita.
  • Spray baking sheet with olive oil cooking spray.
  • Arrange chips in a single layer on the baking sheet and lightly spray with cooking spray.
  • I usually need two baking sheets to fit all the chips in one single layer.
  • Sprinkle each tray with half of either the cumin, garlic powder, OR onion powder, depending on your preference.
  • Season with salt and pepper to taste.
  • Bake until chips are crisp, about 10-15 minutes.
  • The pita chips can be made ahead and stored in an airtight container for several days.

2 pita bread, white or 2 wheat, pocket-style
1 egg white
1 tablespoon olive oil
salt
any powdered seasoning

Steps:

  • Preheat oven to 350.
  • With scissors, cut pitas around the outside into 2 rounds each.
  • Whisk together egg white and olive oil.
  • Brush this onto the insides of the four pita rounds.
  • Season however you want.
  • I've used garlic powder, cajun seasoning, greek seasoning, cayenne pepper, curry powder- all delicious.
  • Stack the rounds and cut them into 8 triangles.
  • Spread in single layer onto baking sheet, seasoned side up, and bake for about 15 minutes, making sure they are no longer soft, but not too brown.
  • Store (I've never gotten around to this part) in an air-tight container or bag.
  • Mmmmmm, guilt-free snacking.

A deliciously sweet and spicy snack that can be eaten as is or served with your favourite dip. The kick of wasabi is nicely balanced with the sweetness of honey in this simple recipe. These are really good served with a bit of fat free sour cream for dipping. I also like them plain too.

4 pita pocket bread
2 tablespoons soy sauce
1/4 cup honey
1 tablespoon fresh lime juice
2 teaspoons wasabi powder
cooking spray

Steps:

  • Preheat oven to 400 degrees.
  • In a small jar/container with a lid combine the soy sauce, honey, lime juice and wasabi powder. Place the lid on the jar and shake vigerously, until everything is combined. (you may just wisk the ingredients, but i like this method better as it gets everything combined well)
  • Slice each pita into eighths and place in a large bowl. Drizzle the honey/wasabi mixture over the pitas and gently stir to coat each piece. (dont worry if they get a bit soft as they will dry out in the oven)
  • Place coated pita triangles on a sheet spritzed with non-stick cooking spray and bake until golden and crisp. 7 or 8 minutes usually does the trick, but keep an eye on them so they don't burn.
  • Serve with your favourite dips or enjoy as is!

1 lb ground chicken or 1 lb ground turkey
1/2 cup finely grated zucchini
1 egg, lightly beaten
1 tablespoon chopped fresh sage
1 tablespoon balsamic vinegar
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup mayonnaise
5 cloves garlic, peeled
2 tablespoons fresh sage
1 tablespoon extra virgin olive oil
2 teaspoons fresh lemon juice
4 split fresh kaiser rolls, toasted
4 slices sharp cheddar cheese (optional)
1 -2 large sweet potato
cayenne pepper (amount to taste)
1 -2 large sweet onion, sliced (I like Vidalias)
2 tablespoons butter
1 tablespoon olive oil
cooking oil (for deep frying; optional)

Steps:

  • Note on cooking time: you may be able to reduce the total amount of time spent cooking if you cook some items concurrently.
  • Prepare aioli (you can do this ahead of time): place mayonnaise, cloves of garlic, fresh sage, olive oil, and fresh lemon juice in a small food processor or blender.
  • Blend until smooth and creamy; set aside.
  • Mix together ground meat, zucchini, beaten egg, sage, vinegar, garlic, salt and pepper.
  • Form into 4 patties and refrigerate on waxed paper until time to cook.
  • Peel sweet potatoes.
  • Using a food processor or mandolin, shave potatoes on the thinnest setting (they should be about as thin as a potato chip).
  • Heat oil to a depth of several inches in a large skillet or use a deep fryer.
  • Cook sweet potato shavings in small batches until they are crisp (about halfway through cooking you may press them against the side of the fryer a little bit to reduce their flat shape).
  • If you wish to bake your chips instead of frying them, place sweet potato shavings in a large plastic bag with several tablespoons of oil (just enough to coat) and shake bag gently until shavings are lightly covered with oil.
  • Place shavings on an oiled baking sheet and bake at 350F for about 20 minutes, then turn chips and bake another 10 minutes or so or until crispy (watch them so they don't burn).
  • Drain on paper toweling, and immediately season with salt and a sprinkling of cayenne pepper.
  • Heat 2 tablespoons butter and 1 tablespoon of oil in a large skillet.
  • Cook onion slices over medium-low heat until caramelized; keep warm until needed.
  • Grill patties over medium-hot coals (make sure to use a fine mesh grate and oil it thoroughly to reduce sticking) or cook in a large skillet or griddle for 7-8 minutes per side or until cooked through.
  • Plate burgers on toasted kaiser rolls with sage aioli, grilled onions, and a few sweet potato chips (or may have chips on the side).
  • Using cheese on your burgers is optional, but I would recommend a sharp cheddar if you go with that.
  • Any extra aioli may be refrigerated and used as a dip for crudites, cooked vegetables, etc.

1/2 cup baby carrots
1 1/2 cups chickpeas, cooked and drained and rinsed if from a can
1/4 cup frozen spinach, defrosted and squeezed to get rid of excess water
1/4 cup fresh cilantro leaves
2 garlic cloves
2 tablespoons lemon juice
1/8-1/4 teaspoon salt, according to taste
1 teaspoon toasted sesame oil
1/4 cup extra virgin olive oil
4 pita breads
2 garlic cloves
3 tablespoons extra virgin olive oil
1 pinch salt

Steps:

  • Put the carrots into a food processor and blitz for about 30 seconds. You are really only looking to get them started in breaking up since they are harder than the rest of the ingredients.
  • Add the chickpeas, spinach, cilantro, garlic gloves, lemon juice and sesame oil. Also add the salt at this time but go with the idea that less is more and you can add the full amount if you need it.
  • Process for about a minute, just until everything is combined and chunky.
  • Continue to process while slowly pouring in the olive oil.
  • Keep processing until smooth. This took me about 5 minutes with a bit of pulsing action now and then but my machine isn't all that powerful.
  • Either serve straight away or chill until ready.
  • For Garlic Pita Chips:.
  • Preheat oven to 400 degrees.
  • Tear the pitas into rough chunks. I usually try to aim for triangles but the whole point is to be rustic looking so don't worry about whatever shape they end up being.
  • Pour the olive oil into a ziplock bags.
  • Crush garlic cloves and add them to the bag. These days, I actually grate the garlic with a microplane grater because it appears to get a bit more punch out of the garlic.
  • Swish the oil around in the bag to mix in the garlic.
  • Put the pita chunks into the bag, seal and shake well to get all the chunks coated in the oil.
  • Spread on a baking tray and scatter over the salt.
  • Bake for about 10 minutes or until they are starting to go golden and crisp up.
  • Serve with dip.
