The oil you use will make all the difference: the peanuttier the better; an obscure brand from the ethnic section of the supermarket is usually a better bet than one of the cheaper, mass-market varieties.

2 teaspoons chopped fresh ginger root
3 cloves garlic, thinly sliced
¼ teaspoon crushed red pepper flakes
½ cup soy sauce
½ cup chicken broth
4 tablespoons peanut butter
1 ½ pounds boneless pork loin, cut into strips
2 tablespoons peanut oil for frying
1 onion, chopped
¾ cup cashew nuts
2 cups frozen mixed stir-fry vegetables

Steps:

  • In a large bowl, stir together the ginger, garlic, red pepper flakes, soy sauce, broth, and peanut butter. Stir in pork to coat. Set aside.
  • Heat oil in a wok or large skillet over medium-high heat. Stir in onions, and cook about 1 minute. Stir in cashews. Cook until unions are soft and translucent. Pour in pork and marinade. Cook until pork pieces are done, about 10 minutes. Stir in mixed vegetables, and cook 5 minutes more.

4 cloves garlic
1 Tbsp. minced ginger
5 oz. white mushrooms
4 green onions
2 Tbsp. peanut butter (creamy works best)
3 Tbsp. soy sauce
1 tsp. sriracha (or more)
1 Tbsp. honey
1 Tbsp. rice wine vinegar or lemon/lime juice
1 tsp. olive oil
16 oz. ground pork
1/4 tsp. salt
6 oz. spinach

Steps:

  • Cook rice as directed on package. Mince garlic. Peel ginger and mince. Chop mushrooms. Thinly slice green onions.
  • Make peanut sauce: whisk together peanut butter, soy sauce, sriracha (add more if you like spice!), honey, and rice wine vinegar.
  • Heat large pan over medium-high heat. Add olive oil to pan and when hot, add pork to pan. Break up with a wooden spoon for about 1 minute, then add mushrooms, garlic, and ginger to pan. Season with 1/4 tsp. salt. Cook, stirring occasionally, for about 5 minutes.
  • Add spinach to pan, toss with pork and cook for about 1 minute, until wilted.
  • Serve with peanut sauce, sliced green onions and sesame seeds.

2 cups water
1 package chicken-flavored ramen noodles
1 teaspoon sesame oil, plus
1 tablespoon sesame oil
2 tablespoons rice vinegar
2 tablespoons smooth peanut butter
2 tablespoons soy sauce
2 tablespoons light brown sugar, firmly packed
1 teaspoon fresh ginger, peeled and grated
1 clove garlic, minced
4 dashes Tabasco sauce
1/4 cup vegetable oil
2 cups boneless pork loin, 1 x 1/2 inch strips
6 green onions, cut on the diagonal into 1/2 inch wide slices
1/3 cup honey-roasted peanuts

Steps:

  • Heat the water to boiling in a medium saucepand and add the ramen noodles.
  • Let the water come back to a boil, drain the noodles, toss them with 1 tsp of the sesame oil, and set them aside In a blender or food processor, combine the ramen flavor packet with the vinegar, peanut butter, soy sauce, brown sugar, ginger, garlic, Tabasco, 2 Tbs vegetable oil and process until smooth.
  • Set the sauce aside or refrigerate until ready to use.
  • In a wok, heat the remaining 2 Tbs vegetable oil and 1 Tbs sesame oil over high heat until almost smoking.
  • Add the pork and stir fry it until it is cooked through.
  • Add the green onions, toss them with the pork, and then stir in the drained ramen noodles.
  • Pour the peanut sauce the pork mixture, continue to stir fry the pork and onions for another minute to heat the sauce through.
  • Sprinkle with peanuts, and serve immediately.

1 pork tenderloin (400-450g/14oz-1lb)
1 tbsp cornflour
5 tbsp light soy sauce
2 tbsp Chinese black rice vinegar or balsamic vinegar
2 tbsp golden caster sugar
1 tbsp Chinese rice wine or dry Sherry
vegetable oil , for stir-frying
4 tbsp unsalted peanuts
400g Brussels sprouts , trimmed then halved, or quartered if large
thumb-sized piece ginger , shredded
3 garlic cloves , thinly sliced
½ tsp chilli flakes or a few whole small dried chillies
1 tsp sesame oil , to serve
sticky rice , to serve

Steps:

  • Trim any silvery sinew from the pork, then slice the meat into thin medallions. Mix the cornflour with 2 tbsp of the soy, add the pork and toss to coat. Set aside for 5 mins. Stir together the rest of the soy, the vinegar, sugar, rice wine and 2 tbsp water. Let the sugar dissolve.
  • Heat 1 tsp oil in a wok or frying pan. Fry the peanuts for 1-2 mins, stirring often, until toasted and golden, then set aside in a dish. Add 1 tbsp oil to the pan, and stir-fry the pork for 3-4 mins until golden but not completely cooked through. Set aside.
  • Wipe out the pan if needed, then add another 1 tbsp oil and stir-fry the sprouts over a high heat for 5 mins, adding 1 tbsp water at the end to provide a shot of steam. They should be bright green and just tender, but not soft. If the pan seems dry, add another 1 tsp oil, then tip in the ginger, garlic and chilli. Sizzle for 1 min, then add the sauce, pork and any resting juices. Simmer for a few mins until the sauce thickens and the pork is cooked through. Scatter with the nuts, drizzle over the sesame oil and serve with rice.

3 tablespoons reduced-sodium teriyaki sauce

  • Drain pineapple, reserving juice; set aside. In a large skillet, stir-fry pork in oil until no longer pink.
