QUICK AND EASY POTATO CASSEROLE
This casserole is made creamy and tangy by Cheddar cheese, sour cream, and cream of chicken soup. Quick-Easy-Delicious. Always a favorite.

Steps:
- Bring a large pot of salted water to a boil and add potatoes. Cook until tender, then drain water. While potatoes are cooking, heat a small skillet over medium heat. Melt butter and saute onion until golden brown. Set aside.
- Preheat oven to 350 degrees F (175 degrees C).
- Mash potatoes with cream of chicken soup and sour cream until smooth and creamy. Mix in onions, 3/4 cup cheese, salt, and pepper. Spoon into a 2 quart casserole dish and bake in preheated oven for 30 minutes. Sprinkle remaining 1/4 cup cheese over top and bake an additional 10 minutes. Serve hot.

Steps:
- Mix eggs, broth, , salt and pepper together.
- Put potatoes and onion, evenly over bottom of a greased casserole.
- Layer bacon and sun dried tomatoes. Pour beaten egg mixture over potatoes.
- Spread cheese over top. Cover with foil and bake at 350° F for 30 minutes.
- Remove foil and bake an additional 15 minutes until golden brown.
- Let set 10 minutes after baking before cutting and serving.
EASY POTATO CASSEROLE
This casserole goes over well whenever I take it to a gathering. Even though I have to double the recipe, it's still an inexpensive side dish for our large family of 10.

- In a large bowl, mash potatoes until smooth. Add butter, salt, pepper and enough milk to make a soft mashed potato consistency. Stir in 2/3 cup cheese, ham, onion and green pepper. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with remaining cheese.
