FAST AND EASY TORIZZA

This is my moms recipe. This is a very quick and easy recipe. Its like 10 mins tops if your meat topping are already cooked. Its fun for the kids to put on their own toppings. I like to make torizza when I for get to take something out for dinner in time. Very simply and fast to make. Thanks mom :)

1 jar(s) pizza sauce
1-2 c mix bag of shredded pizza or taco cheese
5-8 large flour tortillas
1 can(s) cooking spray
3-6 Tbsp full of your favorite choice of pizza toppings

Steps:

  • 1. Cooking spray- spray your cookie sheet or flat baking pan with cooking spray lightly. Pre heat your oven to 350.
  • 2. Flour tortillas, pizza sauce- spread pizza sauce on tortillas and place on pan. ( you can use any size flour tortillas )
  • 3. Cheese- add your choice of shredded cheese first. ( shredded pizza or taco cheese mix works great) don't over do the cheese because the tortillas are thin. Just enough so you can still see some pizza sauce.)
  • 4. Toppings- your choice of pizza toppings..the sky is the limit. Just don't over do it.. a few tablespoons full depending on how big your tortillas is. Bake for 4-5 mins in the pre heated oven. Some ovens take 7-10 mins to bake. It cooks quick.. you torizza will be done when tortillas are a little crisp, but not to hard and cheese is melted. I personally like using cooked ground italian sausage-drained, diced roma tomatoes, black olives & cheese. pepperoni & cheese canadian bacon, pineapple and red onions & cheese cooked ground hamburger-drained, yellow onions, fresh bacon bits & cheese veggie- green and red peppers, onions, mushroom & cheese
  • 5. Home made pizza sauce 1 can 6oz-tomato paste 1/8 cup- olive oil 1/3 cup- water 1-2 Tbsp- minced garlic or 1/2 tsp of garlic powder or dried minced garlic (if your dried seasoning has salt in it, leave out the salt at the end of this recipe) 1/2 tsp- italian seasoning or 1/4 tsp each of oregano & basil 1/2 tsp- salt or sea salt ( some like their pizza sauce a little sweet..just add a small ( very small) pinch of sugar or use sweet basil) Mix all in a small bowl.

Inspired by California Pizza Kitchen's now-discontinued Greek pizza, as well as the Manhattan bar Our/New York's also-discontinued tortilla pizzas (affectionately called "tortizzas" by the patrons who remember them), this quick lunch or light dinner builds on a sturdy base of crispy, cheesy flour tortillas. A fresh mix of cucumbers, tomatoes and avocado, mounded atop the tortillas, makes you feel like you're eating a salad with your hands. Feta delivers sharpness and creaminess, as does the simple garlicky yogurt sauce that drapes each tortizza. A drizzle of honey at the end might sound out of place here, but it really brings together all the flavors, and is a popular dipping sauce for pizza in South Korea.

3 to 4 Persian or mini seedless cucumbers, scrubbed and cut into 1/2-inch dice (about 2 cups)
2 ripe medium tomatoes, cut into 1/2-inch dice (about 2 cups)
1 1/2 teaspoons kosher salt (Diamond Crystal)
8 (6-inch) soft flour tortillas
2 cups shredded low-moisture mozzarella
2 teaspoons dried oregano, za'atar or Italian seasoning
1 cup plain yogurt
1 large garlic clove, finely grated
1 tablespoon fresh lemon juice
2 teaspoons honey, plus more for drizzling
1 cup crumbled feta
1 ripe Hass avocado, halved and thinly sliced
1/2 cup packed fresh flat-leaf parsley leaves and tender stems

Steps:

  • Place racks in upper and lower thirds of oven and heat oven to 400 degrees. Line two large sheet pans with parchment paper.
  • Toss the cucumbers, tomatoes and 1/2 teaspoon salt in a colander set in the sink and toss to combine. Let sit to drain excess liquid, about 10 minutes.
  • Meanwhile, arrange the tortillas on the sheet pans, four per pan, and sprinkle each with the mozzarella and dried oregano. Bake until the cheese is melted and lightly browned, and the tortillas' edges are crispy but still pale, 8 to 10 minutes.
  • While the tortillas are baking, make the yogurt sauce: In a small bowl or measuring cup, whisk together the yogurt, garlic, lemon juice, honey and the remaining 1 teaspoon salt.
  • To serve, evenly divide the drained cucumbers and tomatoes among the tortillas. Top each with feta, avocado and parsley, and spoon the yogurt sauce over everything, leaving some back to serve on the side. As a final flourish, lightly drizzle the tortizzas with honey. You can eat these flat like mini pizzas or folded like tacos.

2/3 cup warm water (110°F)
1/4 ounce active dry yeast (not rapid rise; 2 1/4 teaspoons)
1 teaspoon sugar
1 3/4 cups unbleached all-purpose flour, plus more for dusting
1 1/4 teaspoons kosher salt
1 tablespoon extra-virgin olive oil, plus more for brushing

Steps:

  • Combine water, yeast, and sugar in a bowl; let stand until foamy, about 5 minutes. Add flour, salt, and oil, and stir until a ragged dough forms. Transfer to a lightly floured work surface.
  • Knead with floured hands until dough is smooth, elastic, and tacky but no longer sticky, about 5 minutes. Transfer to a bowl brushed with oil, turning dough to evenly coat. Cover with plastic wrap and let stand in a warm, draft-free place until doubled in volume, 30 to 45 minutes.
