2 c. ketchup
1 c. packed dark brown sugar
1 c. red wine vinegar
3 tbsp. Worcestershire sauce
2 tbsp. yellow mustard
2 tsp. hot sauce
1/2 tsp. kosher salt
Black pepper, to taste

Steps:

  • Whisk the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, hot sauce, salt and a few grinds of pepper in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, whisking occasionally, until the sauce has reduced slightly, about 20 minutes.
  • If not using right away, let the sauce cool, then store in an airtight container for up to 1 week.

This is a somewhat mild bbq sauce that I originally found in the Fanny Farmer cookbook and over the years have tweaked to make it what it is today. Optional additions are: rum, honey or if you really want a hotter sauce, swap out the chili powder and put in red pepper powder. I did that once not realizing that chili powder and red pepper powder are two different animals. Hot! Called that particular sauce, Snowball's Hellfire BBQ Sauce...everyone else liked it, but it was too hot for me.

1 - onion, small chopped
3 - garlic cloves, chopped or pressed
2 tablespoon(s) butter
1 teaspoon(s) salt
1/4 cup(s) brown sugar
2 tablespoon(s) chili powder
4 tablespoon(s) worcestershire sauce
4 tablespoon(s) vinegar
2 tablespoon(s) hot pepper sauce
1 cup(s) ketchup
2 cup(s) water

Steps:

  • In a medium sauce pan on medium heat, melt butter and add onion, garlic and salt. Let saute until onion starts to go translucent.
  • Add remaining ingredients and stir to blend and then let let it simmer, stirring occasionally until sauce has reduced a little and thickened. About 30 minutes to an hour. If you want a thicker sauce you can add about a tablespoon or two of corn starch. You can use right away, or store in air tight container. Will keep in the refrigerater about a month. We never have left overs of this sauce though.

2 tablespoons vegetable oil
1 medium onion, chopped (about 1 cup)
2 cloves garlic, smashed
3 cups ketchup
1/2 cup apple cider vinegar
1/4 cup packed dark brown sugar
1/4 cup steak sauce
1/4 cup Worcestershire sauce
3 tablespoons molasses
3 tablespoons yellow mustard
1/2 teaspoon ground celery seed
Kosher salt
1 to 2 teaspoons liquid smoke, optional

Steps:

  • Heat the vegetable oil in a medium pot over medium heat. Add the onions and garlic and cook, until the onions are golden, 6 to 7 minutes. Stir in the ketchup, 1 cup water, the vinegar, brown sugar, steak sauce, Worcestershire sauce, molasses, mustard, celery seed and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium-low and simmer until the onions are tender, about 15 minutes. Stir in the liquid smoke, if using. Strain the sauce, pressing on the solids to extract any liquid.

15 ounces tomato sauce ((1 standard can))
6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.
