1 (9 inch) unbaked deep dish pie crust
¾ cup white sugar
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground ginger
¼ teaspoon ground cloves
2 eggs
1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

Steps:

  • Preheat oven to 425 degrees F.
  • Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
  • Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Well, after looking for this recipe on here and not having any luck, I decided to find it and post it. In my opinion, this is the best pumpkin pie. Make your own graham cracker crust or buy an already prepared one.

3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon (See note)
1/2 teaspoon ground ginger (See note)
1/4 teaspoon ground cloves (See note)
2 large eggs
1 (15 ounce) can libby's 100% pumpkin puree
1 (12 ounce) can Carnation Evaporated Milk
1 unbaked 9-inch deep dish pie pastry
whipped cream (optional)

Steps:

  • Note: Substitute 1-3/4 teaspoons pumpkin pie spice instead of cinnamon, ginger, and cloves; the taste will be slightly different.
  • Preheat oven to 425 degrees Fahrenheit.
  • Mix sugar, salt, cinnamon, ginger, and cloves in small bowl.
  • Beat eggs in large bowl.
  • Stir in pumpkin and sugar-spice mixture.
  • Gradually stir in evaporated milk.
  • Pour mixture into pie shell.
  • Bake at 425 degrees Fahrenheit for 15 minutes.
  • Reduce temperature to 350 degrees Fahrenheit.
  • Bake for 40 to 50 minutes or until knife inserted near center comes out clean.
  • Cool on wire rack for 2 hours.

  • Top with whipped cream before serving for best results!
  • Do not overcook; overcooking leads to pie cracking in the middle.
  • Try to bake the day you will serve the pie. Cooking in advance can make the crust soggy. If you have to bake a day before serving, pop the pie in the oven for 5 to 10 minutes and it should bring the crust back to life!

1/2 recipe Deep-Dish Pate Brisee
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 ounces) Libby's 100 percent pure pumpkin
1 can (12 ounces) evaporated milk, preferably Nestle Carnation
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 425 degrees. On a lightly floured work surface, roll pate brisee into a 12-inch round. With a dry pastry brush, sweep off the excess flour; fit dough into a 9-inch deep-dish glass pie plate, pressing it into the edges. Trim to a 1-inch overhang all around. Crimp edge as desired. Prick bottom of dough all over with a fork; set aside.
  • In a small bowl, mix together, sugar, cinnamon, salt, ginger, and cloves. Beat eggs together in a large bowl. Add sugar mixture and pumpkin; stir to combine. Stir in evaporated milk until well combined.
  • Pour mixture into pie shell and bake for 15 minutes. Reduce temperature to 350 degrees; bake until filling is set, 20 to 30 minutes. Transfer to a wire rack and let cool 2 hours. Serve with whipped cream, if desired, or transfer to a refrigerator until ready to serve.

For the crust:
1¼ c. graham cracker crumbs
1¼ c. sugar, divided
1/3 c. plus 4½ T. butter, softened and divided
For praline filling:
½ c. brown sugar, packed
½ c. chopped pecans
For pumpkin pie filling
3 eggs, separated
1 c. sugar, divided
1¼ c. solid packed pumpkin (1 can)
½ c. 2% milk
½ t. salt
½ t. ground ginger
½ t. cinnamon
½ t. nutmeg
1 envelope unflavored gelatin
¼ c. cold water
Whipping cream for garnish

Steps:

  • Pre-heat oven to 375º. Combine graham cracker crumbs, ¼ c. sugar, and 1/3 c. butter. Press into bottom of 9-inch pie plate and bake for 5 minutes. Meanwhile, cream 4½ T. butter with brown sugar and chopped pecans. Drop mixture onto baked crust. Return to oven and bake 6 minutes, or until mixture melts. Remove from oven and smooth mixture evenly over crust and allow to cool. In a bowl, beat egg yolks with ½ c. sugar until thick. Add pumpkin, milk, and all spices. Mix until blended. Add mixture to saucepan over medium heat until mixture thickens (be careful not to get plopped), about 10 minutes. Leave in pan. In a small bowl, dissolve gel into cold water. Stir into hot pumpkin in sauce pan. Remove from heat. In a large bowl, beat egg whites until foamy. Gradually add ½ c. sugar and beat until stiff but not dry. Gently fold pumpkin mixture into the egg whites. Pour into prepared pie crust. Refrigerate until ready to serve. Serve with whipped cream.

1 1/2 C canned pumpkin
1 2/3 C evaporated milk

Steps:

  • Mix filing ingredients until smooth. Pour the filling into unbaked pie shell and bake at 425 degrees for 15 minutes, then lower temp in oven to 350 degrees and bake another 35 minutes or until custard is firm.
