This is one of the more famous sandwiches straight out of the island of Cuba. This recipe came from my uncle who used to work at a restaurant in Pinar del Rio, Cuba and now works at a Cuban cafeteria here in Miami. This sandwich is best served with fried plantain chips and a cold mamey milkshake!

4 sweet bread rolls
½ cup mayonnaise
¼ cup prepared mustard
1 pound thinly sliced cooked ham
1 pound thinly sliced fully cooked pork
1 pound sliced Swiss cheese
1 cup dill pickle slices
2 tablespoons butter, melted

Steps:

  • Split the sandwich rolls in half, and spread mustard and mayonnaise liberally onto the cut sides. On each sandwich, place and equal amount of Swiss cheese, ham and pork in exactly that order. Place a few pickles onto each one, and put the top of the roll onto the sandwich. Brush the tops with melted butter.
  • Press each sandwich in a sandwich press heated to medium-high heat. If a sandwich press is not available, use a large skillet over medium-high heat, and press the sandwiches down using a sturdy plate or skillet. Some indoor grills may be good for this also. Cook for 5 to 8 minutes, keeping sandwiches pressed. If using a skillet, you may want to flip them once for even browning. Slice diagonally and serve hot.

First, comes the sweet buttery bread and then the Best Cuban Sandwich! It's loaded with Cuban pork roast, cheese, ham, and pickles.

4 Cuban Medianoche Bread rolls
3 tbsp butter
1 lb Cuban Roast Pork
8 slices sliced ham ((sweet cured or smoked, Serrano, or bolo ham - I used honey ham)
8 slices Swiss Cheese
Dill pickle slices
Mustard (optional I used a Dijon but a spicy brown would be great or just yellow too.)
*Sriracha (Optional)
4 pound Pork shoulder roast ((also known as a pork butt))
1 garlic clove
1 tsp salt
1 tsp black peppercorns
1 cup sour orange juice (I used 2/3 cup 100% orange juice (not from concentrate, 1 lime juiced and 1 lemon juiced))
1 cup minced onion
2 tsp dried oregano
1/2 cup olive oil (Spanish if you have it. I used Italian)

Steps:

  • Mash the garlic, salt and peppercorns into a paste, using a mortar and pestle or a food processor. Stir in sour orange juice, onion and oregano. Let mixture sit for 30 minutes.
  • Heat olive oil in a 2 quart saucepan until hot but not frying hot. You'll see some movement in the oil. Remove the oil from the heat and quickly AND CAREFULLY whisk the garlic-orange juice mixture until well blended. Let cool before using as a marinade.
  • Pierce the pork roast several times all over with a fork or sharp knife. Place it in a roasting pan and pour garlic mixture (save a little for basting while roasting) over pork. Cover and let sit in the refrigerator for two or three hours.
  • Preheat the oven to 375°F.
  • Remove lid from the pork and roast for 20 minutes. Reduce temperature to 225°F and roast until the meat is soft and you can pull it apart easily with a fork, about 2 hours and 20 minutes. Baste occasionally while roasting. I roasted mine to an internal temperature of 175°F. Remove from the oven and let rest 10 minutes before slicing.
  • Butter the inside of the top and bottom of the bread and spread the mustard. Put the pickles on the bread, followed by the roasted pork, ham, and cheese. Be generous!
  • Butter a hot griddle or pan. Place the sandwich on the pan and using a heavy skillet, bacon press or foil wrapped brick, or panini press, flatten the sandwich for approximately 3 minutes and then flip to the other side.
  • You don't want you pan so hot that your bread burns but it needs to be hot enough to melt your cheese. Cook until the bread is golden brown.
  • Slice the sandwich diagonally and serve immediately.

A taste of Miami on your dinner table! You can smell these sandwiches cooking all over Miami Beach. Taking a walk down there is something to experience. This recipe is a taste of heaven on a roll. This recipe makes 6 whole sandwiches and serves 12. They are large and should be cut in half. Recipe time does not include the 6-24 marination time for the roast pork. 1 1/4 lbs boneless pork chops or 1 1/4 lbs pork tenderloin
3 tablespoons garlic, minced
3 tablespoons parsley, minced
1 tablespoon paprika (preferably hot)
2 teaspoons ground cumin
1 teaspoon ground black pepper
1 teaspoon salt
2 tablespoons lime juice
2 tablespoons light corn syrup
2 tablespoons olive oil
6 cuban rolls (Authentic Cuban Rolls recipe)
1/3 lb smoked ham, thinly sliced
3/4 lb swiss cheese, thinly sliced
1 1/2 large dill pickles, sliced
1/4 cup butter, melted

Steps:

  • ROASTING THE PORK: Mix all of the marinade ingredients together (all of the ingredients except the pork), and rub this mixture over all surfaces of the pork. Cover well, and refrigerate for 6 to 24 hours.
  • Place the pork in a roasting pan or ovenproof dish, and roast it in a preheated 425°F oven for 30 to 40 minutes, basting occasionally with the pan juices, until cooked through. Remove the pork from the oven, and cool it completely before slicing thinly.
  • ASSEMBLING THE SANDWICH: Slice the Cuban loaves in half horizontally. Brush the cut surfaces of the rolls with olive oil or melted butter. Layer the sandwiches as follows: Swiss cheese, sliced pickle, ham, sliced roast pork, then additional cheese.
  • Now comes the somewhat challenging part. You want to grill these sandwiches, top and bottom, while at the same time flattening them slightly. This helps meld all of the filling ingredients. Heat two large skillets, or a griddle, to medium, about 325°F Lightly grease the griddle and/or skillets. Brush the bottoms of the sandwiches lightly with olive oil or melted butter. Place them in the greased pan(s). Brush the tops with oil or butter. Top them with a piece of parchment paper or foil, then a flat sheet pan, or other flat, non-meltable object-the point is to provide a flat surface for a weight. Place something heavy atop the pan-a teakettle filled with water makes a good weight, as does a clean brick wrapped in aluminum foil.
  • Grill the sandwiches for 5 to 7 minutes over medium heat, checking often to make sure the bottoms aren't burning. Adjust the heat downward if the bottoms are becoming brown after only a couple of minutes. Turn the sandwiches over and grill for several more minutes, until they're slightly crisp on both sides, and the cheese is melting. Remove from the heat, cut the sandwiches in 2, and serve warm.

Steps:

  • Cut off the ends of the Cuban bread, then slice in half.
  • Add mustard, then ham, then pork, then cheese, then pickles, then place the bun on top.
  • Place the sandwich on pan or griddle over low heat. Brush top with melted butter.
  • Press the sandwich with a panini press, or if you don't have a press use a heavy pot or pie dish and push down.
  • Cook 5-10 minutes on each side or until golden brown and cheese is melted.
  • Enjoy!
