1 tsp. vanilla
2 cups chilled whipping cream, unwhipped
1 9 oz. package nabisco famous chocolate wafers

Steps:

  • 1. Combine whipped cream and vanilla in a glass bowl. Beat with mixer until stiff peaks form.
  • 2. Spread just a tsp. of whipped cream onto each wafer. Stack wafers together. Then stand on edge on serving platter to make log.
  • 3. Frost with remaining whipped cream. Refrigerate at least 4 hours or overnight.
  • 4. Cut dessert diagonally into 14 slices. Store leftover cake (...if any =) ) in refrigerator.
  • 5. Decorate with mini chocolate chips, chocolate shavings, nuts, toasted coconut or (my favorite) just serve as is!

2 cups heavy cream
1/4 cup confectioners' sugar
1 1/2 teaspoons vanilla extract, or 1/2 teaspoon vanilla and 2 tablespoons orange liqueur
48 chocolate wafers, recipe follows
Cocoa or cookie crumbs for dusting
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch-processed cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) unsalted butter at room temperature
1 large egg

Steps:

  • Chocolate Wafers: Set 2 racks in the middle and upper third of the oven and preheat to 375 degrees F. In a food processor or the bowl of an electric mixer, thoroughly mix together the flour, cocoa, baking soda, baking powder, salt, and sugar. While pulsing on low speed, add the butter, then the egg. Process or beat until the dough is thoroughly blended and massed together. Drop rounded teaspoons of batter onto nonstick or parchment-lined cookie sheets at 2-inch intervals. With moistened fingers, round out the cookies and flatten them a little. Bake for 9 minutes, turning the pans once for even baking, until the cookies are set. Set the cookie sheets on a rack to cool.
  • In a mixing bowl, whip the cream to soft peaks, about 1 1/2 minutes. Add the confectioners' sugar and vanilla, and continue whipping until stiff but smooth, about 1 minute. Spread the wafers evenly with the whipped cream, about a 1/4 inch thick, and set in stacks of 8. Turn the stacks on their sides and line them up, one after the other, like the wheels on an eighteen-wheeler, 4 rows deep. Frost the top and sides with the remaining whipped cream to form a loaf. Refrigerate for at least 3 hours, until firm. To serve, dust lightly with cocoa or cookie crumbs. Slice with a serrated knife dipped in hot water.

1 cup heavy cream

1/2 teaspoon pure vanilla extract
20 Famous chocolate wafers
chocolate curls (to garnish)

Steps:

  • Whip the heavy cream with the sugar and vanilla until stiff.
  • Set aside 1 cup of mixture.
  • Spread wafers with remaining cream and arrange in stacks of five.
  • Chill for 15 minutes.
  • Lay stacks on edge to make one long roll.
  • Spread remaining 1 cup of cream on outside of roll.
  • Cover and chill for at least four hours or overnight.
  • Garnish with chocolate curls or shavings before serving.
  • To serve, cut DIAGONALLY.
  • Note- To make chocolate curls you can slightly warm a large candy bar of good quality chocolate in the microwave (only a few seconds should do) Slowly scrape back of bar with a vegetable peeler and transfer curls using a toothpick, to a baking sheet or large plate/ Refrigerate until firm/ For shavings, I like to thinly slice miniature Dove Dark Chocolate candies (about eight or so) and sprinkle on your dessert.

I no longer can buy Nabisco Famous Wafers in my area. I searched and found these on the King Arthur website. Stack the cookies, sandwiched between the optional filling, in the refrigerator overnight and they turn into a delicious cake-like dessert. These cookies will also make a good pie crust (see Recipe #424844).

1 cup granulated sugar
1/2 cup unsalted butter
3/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon espresso powder
1 large egg
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour
1/4 cup black cocoa
1/4 cup Dutch-processed cocoa powder
2 cups whipping cream or 2 cups heavy cream
2 tablespoons Dutch-processed cocoa powder
2 tablespoons sugar
1 teaspoon espresso powder

Steps:

  • Lightly grease (or line with parchment) two baking sheets, or more if you have them; you'll make 3 to 4 baking sheets' worth of cookies.
  • In a medium-sized bowl, beat together the sugar, butter, salt, baking powder, and espresso powder.
  • Beat in the egg and vanilla, then the flour and cocoa.
  • Cover the dough, and chill for 30 minutes.
  • While the dough is chilling, preheat the oven to 350°F
  • Roll the dough about 1/8" thick; use cocoa instead of flour to dust your rolling board and the dough.
  • Cut into 2 1/2"-round cookies. A biscuit cutter is handy for this.
  • Bake the cookies for 10 minutes. Watch them closely at the end of the baking time, and if you start to smell chocolate before 10 minutes has gone by, take them out.
  • When they're done, remove the cookies from the oven, and allow them to cool completely.
  • FILLING: Whisk together the heavy cream and other ingredients. When blended, whip until the cream holds a soft peak.
  • ASSEMBLY: Place one cookie on a small plate. Put about a tablespoon of whipped cream on top; our teaspoon cookie scoop, heaped up, works well here.
  • Top with a second cookie, using it to compress the whipped cream to about a 1/4"-thick layer.
  • Repeat with 4 more cookies, finishing with a layer of whipped cream.
  • Refrigerate from 4 to 24 hours before serving.
  • OTHER FLAVORING OPTIONS: To flavor 1 cup of cream, add one of the following combinations: *2 tablespoons confectioners' sugar + 3/4 teaspoon vanilla extract; *2 tablespoons confectioners' sugar + 1/8 teaspoon coconut flavor; *2 tablespoons confectioners' sugar + 1/8 teaspoon peppermint oil; *1 tablespoon granulated sugar + 1 tablespoon Dutch processed cocoa + 1 teaspoon espresso powder.

½ cup butter
½ cup white sugar
1 teaspoon vanilla extract
2 egg whites
⅔ cup all-purpose flour

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease 2 baking sheets.
  • Beat the butter, sugar, and vanilla with an electric mixer in a large bowl until smooth. Add the egg whites one at a time, allowing each to blend into the butter mixture before adding the next. Mix in the flour until just incorporated.
  • Drop teaspoonfuls of the dough onto ungreased baking sheets. Spread thinly with a spatula or the back of the spoon into a 3 inch circle.
  • Bake in the preheated oven until browned along the edges, about 5 minutes.
