CHICKEN FAJITA PIZZA SAUCE AND TOPPINGS



Chicken Fajita Pizza Sauce and Toppings image

Number Of Ingredients 24

1 whole bone-in, skin-on chicken breast
Olive oil
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon tomato paste
2 cups tomato puree
1 1/2 tablespoons mild chili powder
2 teaspoons Hungarian paprika
2 teaspoons ground cumin
1/4 teaspoon Mexican oregano
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1/2 red bell pepper, thinly sliced
1/2 orange bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 red onion, sliced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Assembly:
1 (16-ounce) pizza ball, store-bought or homemade
1/2 cup shredded mozzarella cheese
1/2 cup shredded Cheddar
Special Equipment: pizza stone

Steps:

  • Chicken:
  • Preheat the oven to 350 degrees F.
  • Put the chicken breast on a baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Put in the oven and roast until cooked through, about 35 minutes. Remove the chicken from the oven to a cutting board and let cool. Once cool enough to handle, shred the chicken meat with a fork and set aside. Cook's Note: Can be done the day before.
  • Turn the oven temperature up to 400 degrees F.
  • Put a pizza stone in the oven to preheat for 1 hour, for best results. Remove the pizza dough from refrigerator and let come to room temperature, so it will be easier to work with.
  • Heat a medium saucepan over medium-high heat and coat the bottom with the olive oil. Once hot, add the garlic and saute until fragrant. Add the tomato paste and stir to toast. This will add depth of flavor. Stir in the tomato puree, chili powder, paprika, cumin, and oregano and bring up to a simmer. Cook for 10 minutes, stirring occasionally, for the flavors to marry together. Season, to taste, with salt and pepper.
  • Thinly coat a large saute pan with olive oil and heat over a medium-high heat. When the oil is hot, add the peppers, onion and garlic. Saute until the onions are translucent, about 4 to 5 minutes, stirring occasionally. Season with salt and pepper, to taste. Remove and set aside.
  • To assemble:
  • Flour the counter top and roll out the pizza dough to a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle on the tomato sauce to lightly cover the bottom of the pizza. Sprinkle with the chicken, vegetables, and the cheeses.
  • Bake the pizza until crisp and golden, about 20 minutes. Remove from the oven, then slice and serve.

2 pounds sirloin steak (cut into bite-sized pieces)
2 Tablespoons olive oil
1 Tablespoon chili powder
2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 red bell pepper (cut into bite-sized pieces)
1 green bell pepper (cut into bite-sized pieces)
1 yellow bell pepper (cut into bite-sized pieces)
1 onion (cut into bite-sized pieces)
2 avocados (halved and pitted)
1 cup fat-free sour cream
2 teaspoons minced garlic
2 Tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat grill to high heat.
  • Cut steak into bite-sized pieces and place in a medium-sized mixing bowl.
  • Pour olive oil over steak and toss until evenly coated.
  • In a small bowl, combine chili powder, cumin, salt, pepper, paprika, garlic powder and onion powder.
  • Sprinkle seasoning on top of steak and toss to coat; set aside.
  • Cut peppers and onion into bite-sized pieces.
  • Thread alternating steak, peppers, and onions onto skewers.
  • Grill for 8-10 minutes, turning throughout cooking, until you meat reaches desired doneness.
  • To make the avocado sour cream, add avocado, sour cream, minced garlic, lime juice, salt and pepper to a blender. Blend until smooth.
  • Serve grilled skewers with avocado sour cream, for dipping.

1 1/3 cups thinly sliced green pepper rings
1 cup sliced red onion, separated into rings
1/2 cup shredded reduced-fat monterey jack cheese (2 ounces)
2 tablespoons sliced ripe olives
1 (15 ounce) can pinto beans, rinsed and drained
1 medium tomatoes, cut into 8 wedges
1/2 cup nonfat sour cream
1/2 cup light mayonnaise
1/3 cup skim milk
3 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon balsamic vinegar
2 large garlic cloves, minced

Steps:

  • Combine all ingredients for Cilantro-Lime sauce, and stir well with a whisk. Cover sauce, and chill.
  • Combine first 6 ingredients olive oil to black pepper in a medium bowl. Add chicken; toss to coat. Place a large nonstick skillet coated with cooking spray over medium heat until hot. Add chicken mixture; sauté 8 minutes or until chicken is done. Set aside.
  • Divide lettuce and next 6 ingredients (lettuce through tomato) among 4 bowls; top with chicken mixture. Serve with Creamy Cilantro-Lime Sauce.

1/2 cup mayonnaise
1/2 cup milk
2 tablespoons lime juice
1 garlic clove, roughly chopped (I use chopped garlic in the jar, Polaner brand)
1 bunch cilantro, roughly chopped
1/4 cup green chili salsa

Steps:

  • Place ranch dressing mix, mayo, milk, lime juice, garlic, and green salsa in a blender.
  • Blend the sauce until smooth.
  • Add the cilantro and continue to blend until smooth.
  • Place in refrigerator for several hours to allow it to thicken and the flavors to come together.

  • 1. Process on high in blender till smooth. Use to make fajitas, Mexican lasagna or any other dish in which you need a mild sauce with tons of flavor!

CHILI TACO / BURRITO / FAJITA SAUCE

My husband's family has a different way of eating tacos and burritos than my family, and I like the change! It really gives you something different than your average taco/burrito/fajita and is economical and tasty at the same time. Someone rated this as being too sweet even though their isn't any added sugar in this recipe, they said because of the tomato juice...which is surprising to me, but you can try using tomato sauce instead if you too think tomato juice is sweet. Serving suggestions: load your plate or burrito with fresh veggies, cheese and optional sour cream and guacamole and ripped up pieces of tortilla and ladle over the sauce and eat!

1 (1 1/2 liter) can tomato juice or 1 liter tomato sauce
1 (28 ounce) can diced tomatoes (I used diced tomatoes with spices)
1 (275 g) can red kidney beans (drained)
1 (275 g) can of mixed beans (drained)
1 large onion, diced finely
2 garlic cloves, pressed and diced
1 lb ground beef
2 tablespoons chili powder
salt and pepper

Steps:

  • In a large pot, ground the beef over medium low heat till all the pink is gone, (use oil if you need to, to prevent sticking).
  • Season with salt, pepper.
  • Add diced onions and garlic and sauté till translucent.
  • Add chili powder, beans, tomato juice and diced tomatoes; mix well.
  • Bring to a boil over medium-lo, stirring occasionally to prevent scorching.
  • Take 1 or 2 cups of the mixture and puree it. This will give a thicker sauce and it will give a nice full bodied taste to the sauce as well.
  • Reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Serve hot and enjoy!
