This Hash Brown Casserole recipe is made with tender hash browns enveloped in the most flavorful rich, creamy cheese sauce spiked with melty Gruyere and cheddar all topped with buttery cracker crumbs or crispy corn flakes. This cheesy Hashbrown Casserole is a quick and easy and you can prep it entirely ahead of time, refrigerate, then bake until warm and bubbly at dinner time OR freeze for later! You can make the recipe as written or customize it with all sort of add-ins such as ham, bacon, sausage, veggies, etc. - the possibilities are wildly endless - and so is its deliciousness.

30-32 oz frozen shredded hash browns (defrosted, patted dry)
6 tablespoons unsalted butter (may sub half olive oil)
1/3 cup all-purpose flour
2 cups milk
2 cups low sodium chicken broth
1 tablespoon cornstarch
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
2 tablespoons chopped fresh chives (or 2 tsps dried)
2 tsp EACH chicken bouillon, dried parsley
1 1/2 teaspoons salt
1 tsp EACH onion powder, garlic powder
1/2 teaspoon pepper
2 cups freshly shredded sharp cheddar cheese
3 oz. (1 packed cup) freshly shredded Gruyere cheese ((may sub 1/2 cup Parm))
1 cup sour cream
1 cup freshly shredded sharp cheddar cheese
3 tablespoons unsalted butter (melted )
1 sleeve Ritz crackers (crushed )

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray; set aside.
  • Melt butter in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Reduce heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
  • Bring sauce to a simmer, whisking constantly, until thickened. Remove from heat and whisk in cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended. Stir in defrosted hash browns until completely combined.
  • Transfer hash browns to prepared baking pan and spread into an even layer. Evenly top with 1 cup shredded cheddar. Combine Ritz with melted butter and stir with a spatula until evenly coated. Sprinkle evenly over cheese.
  • Cover casserole with foil and bake at 350 degrees for 40 minutes, uncover and bake an additional 15 minutes or until hot and bubbly and cheese is melted. Turn oven to broil (without moving pan) and broil until topping is golden, 1-2 minutes, watching closely it doesn't burn.

This recipe from Alison Roman shows you how to make an ideal batch of the hashed variety that are aggressively crisp on the outside and creamy tender on the inside. To ensure ultimate crispness, be sure to rinse the grated potatoes with cold water until the water runs nearly clear and to use a very hot, well-seasoned pan. As with all potato dishes, remember to season well.

1 1/4 pounds russet potatoes (about 2 smallish-medium potatoes), peeled
1 small yellow onion, peeled
Kosher salt
Freshly ground pepper
3 tablespoons bacon fat or vegetable oil, plus more if needed
2 tablespoons unsalted butter
Hot sauce or ketchup (optional)

Steps:

  • Grate potatoes on the largest hole on a box grater into a medium bowl. Cover with cold water and drain; repeat once or twice, until water runs nearly clear. Taking small handfuls at a time, squeeze all the water from the potatoes and place in a dry medium bowl. Grate onion on the largest hole on a box grater and toss with potatoes. Season with salt and pepper.
  • Taking small handfuls at a time, squeeze all water from the potato-onion mixture. Heat 2 tablespoons reserved bacon fat or vegetable oil in skillet over medium heat, add 1 tablespoon butter and swirl together.
  • Add potatoes and onions and spread into a thin, even layer. Cook, without moving, until the potatoes are nearly cooked through and browned on one side, about 5 to 8 minutes. Using a spatula, flip sections of the potatoes to crisp on the other side. Add 1 tablespoon reserved bacon fat or vegetable oil and remaining 1 tablespoon butter and cook, without moving, until potatoes are browned on the other side, about another 5 minutes. Flip once or twice more (you don't have to be so careful here; just kind of stir them around) and continue to cook until most of the bits of potato are golden brown and crisped, about another 4 minutes.
  • Transfer potatoes to a plate. Serve with hot sauce (or ketchup, if you wish).

2 lbs frozen hash browns
1/2 cup chopped onion
1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
1 cup sour cream
1 1/2 cups grated cheddar cheese
3/4 cup melted butter or 3/4 cup margarine
2 cups crushed corn flakes

Steps:

  • Mix all ingredients well and transfer into a well greased or pammed shallow baking pan (I use a cake pan). Sprinkle on topping evenly.
  • Bake at 350°F 60-90 minutes (depending on if you use a shallow or deep pan).
  • This recipe will serve 10-12 people it can be made ahead and frozen in pan.
  • I have used this many times for brunches I have hosted a real time saver.

1 (16 ounce) container sour cream
2 cups shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 (30 ounce) package frozen shredded hash brown potatoes, thawed
2 cups corn flakes cereal
¼ cup salted butter, melted
1 pinch salt to taste

Steps:

  • Grease a 9x13-inch baking pan.
  • Mix sour cream, Cheddar cheese, and condensed soup together in a very large bowl. Fold in hash browns and mix thoroughly. Put mixture into the prepared baking pan.
  • Toss corn flakes in butter to coat. Spread mixture on top of hash brown mixture. Cover and keep in the refrigerator for 8 hours, to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven, uncovered, until bubbly and slightly browned on top, about 1 hour. Season with salt.

2 tablespoons unsalted butter
1 tablespoon canola oil
1 medium Spanish onion, diced
1 1/2 pound small Yukon gold potatoes
2 teaspoons paprika
Salt and freshly ground black pepper
1 1/2 cups grated aged white Irish Cheddar cheese
Chopped fresh chives

Steps:

  • Preheat the oven to 375 degrees F. Heat the butter and canola oil in a cast iron pan over high heat until the butter begins to sizzle. Add the onion and cook until soft and slightly caramelized. While the onions are caramelizing, put the potatoes in a large pot of cold, salted water, bring to a boil and cook until nearly tender, but a knife inserted into the centers still meets a little resistance, 10 to 12 minutes, or cooked through. Drain well and smash with the back of a wooden spoon. Add the potatoes to the onions packing it evenly with the back of a metal spatula to form a cake. Season with the paprika, salt and pepper and cook until the underside is golden brown, about 10 minutes. Invert a plate or baking sheet without sides over the pan and carefully invert the potato cake onto it. Carefully slide the potato cake back into the skillet and cook until the bottom is just set and pale golden brown, about 4 minutes. Spread the cheese on top, cover the pan with a lid and let melt. Transfer the potato cake to a cutting board cheese-side up and cut into wedges. Garnish with chopped fresh chives.

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.
