Traditional cranberry sauce is nice, but this jazzed-up version is several steps above. It travels well, and all the women in my family serve it. The apricot preserves, lemon and toasted walnuts make it different. -Dee Buckley, Salado, Texas

Yield 3-1/2 cups.

Number Of Ingredients 6

2 cups sugar
1 cup water
1 package (12 ounces) fresh or frozen cranberries
1/2 cup apricot preserves
1/4 cup lemon juice
1/2 cup chopped walnuts, toasted

Steps:

  • In a large saucepan over medium heat, bring sugar and water to a boil. Simmer, uncovered, for 10 minutes. Stir in the cranberries. Cook until berries pop, about 15 minutes. , Remove from the heat. Stir in preserves and lemon juice. Transfer to a bowl. Serve warm, at room temperature or chilled. Stir in walnuts just before serving.

2 (12 ounce) packages fresh cranberries
2 cups orange juice
2 cups white sugar
2 oranges, zested
1 cup walnuts, chopped

Steps:

  • Combine cranberries, orange juice, sugar, and orange zest in a saucepan over medium heat. Bring to boil, reduce heat, and simmer for 10 minutes. Remove from heat and let cool. Stir in walnuts. Refrigerate 8 hours to overnight before serving.

1 can(s) (16-ounce) whole-berry cranberry sauce
1/3 c strawberry preserves
1 1/2 Tbsp sugar
1/4 tsp ground cinnamon
1/2 c coarsely chopped walnuts (or pecans), toasted
1 Tbsp pineapple juice (unsweetened)

Steps:

  • 1. Combine all ingredients (except nuts) in a saucepan.
  • 2. Cook over medium heat, stirring often, just until thoroughly heated.
  • 3. Remove from heat; stir in nuts.
  • 4. Cover and chill until ready to serve. Serve with turkey, pork tenderloin, or ham.
  • 5. Note: One recipe will fill one 12 ounce Ball jar. The photo of mine wrapped with a ribbon is one batch, and it fills the jar just to the top. You could divide this into smaller jars as well. Either way, it makes a fabulous and much appreciated gift for the holidays.

1 orange
2 cups fresh or frozen cranberries (about 8 ounces)
3/4 cup sugar
1/4 cup chopped walnut pieces

Steps:

  • Finely grate the zest of half of the orange into a medium saucepan, then squeeze in all of the juice. Add the cranberries, sugar and walnuts and cook over medium heat, stirring occasionally, until the mixture thickens and the cranberries start to pop, about 10 minutes. Let cool.

12 ounces fresh or frozen cranberries
¾ cup white sugar
1 (12 ounce) jar orange marmalade
1 tablespoon lemon juice
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place cranberries in a shallow 1 1/2 quart baking dish. Sprinkle with sugar, cover with foil and bake for 35 minutes.
  • Remove from oven and sprinkle with walnuts. Re-cover and bake for 10 minutes.
  • Remove from oven and stir in marmalade and lemon juice. Mix well. Cool to room temperature. Cover tightly and refrigerate at least 3 hours before serving.

No one will be able to detect the red wine in the recipe. It just adds this wonderful fruitiness and a very deep flavor. The peppercorns may sound odd, but they add a wonderful spiciness that is complemented by the cinnamon. If you are skeptical abotu using them, you can leave them out. This is my first year to cook Christmas dinner and this is the cranberry sauce recipe I plan to use! It beats all the others I've made in the past.

1 cup dry red wine
1 1/2 cups sugar
1 cinnamon stick, halved
1 slice orange zest, 1 inch thick
3 black peppercorns (optional)
1 cup walnuts, coarsly chopped
1 lb fresh cranberries or 1 lb frozen cranberries (thawed)

Steps:

  • Combine the first 5 ingredients and one cup water in a medium saucepan.
  • Bring to a boil, and cook 1 1/2 minutes.
  • Add cranberries and walnuts and reduce heat to medium-low.
  • Simmer, stirring frequently, until berries burst and the mixture is reduced to 4 cups, about 15 minutes.
  • Place in an airtight container and let cool completely.
  • Remove the cinnamon stick, zest and peppercorns.
  • Refrigerate until ready to serve.
  • Especially tasty with ham and turkey, but also delicious chicken and beef!
  • Enjoy!

1 cup chopped apple
1 cup chopped walnuts
1/2 cup raisins
1/4 cup Grand Marnier
1/2 orange, juice of
1/2 lemon, juice of
1 teaspoon cinnamon
1 teaspoon nutmeg, freshly grated

Steps:

  • Combine the sugar and water in a large saucepan and bring to a boil.
  • Add the cranberries and return to a boil, then lower the heat so that the liquid simmers.
  • Add the apples, walnuts, raisins, Grand Marnier, orange and lemon juices, cinnamon, and nutmeg, and cook for 10 to 15 minutes.
  • Remove the pan from the heat and let the sauce cool.
  • Serve in a side bowl with turkey or any preferred holiday dish.

2 cups sugar
1 cup butter, cubed
1/4 cup evaporated milk
1 teaspoon vanilla extract

  • Preheat oven to 375°. Grease a 13x9-in. baking pan., In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Gradually beat in water. In another bowl, whisk flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. Fold in cranberries and walnuts (batter will be thick)., Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. This is a great cranberry sauce for the holidays. The recipe was given to us at a company Thanksgiving party over 15 years ago. We have made it a few times over the years and found it to be a hit always. The sweetness of the combination, Textures of the walnuts and zest of the orange not only make it good for Thanksgiving dinner but one of our guests used it as a topping for plain cheese cake and WOW! Have to try!

1 lb fresh cranberries
1 cup pure maple syrup
1 cup raspberry-cranberry frozen juice concentrate
1 cup walnuts
1 orange, zest of
1 orange, juice of

Steps:

  • Wash cranberries.
  • Mix in heavy sauce pan the cranberries, maple syrup, cranberry-raspberry concentrate (do not add water), zest and the juice from the orange.
  • On High heat bring to a boiling point then reduce to medium heat for 10 minutes or till the cranberries pop-up.
  • Then add the walnuts and remove from heat.
  • Mix well and chill.
  • Can be prepared a day or two in advance.
