Steps:
- Mix hash brown potatoes, Cheddar cheese, cream of chicken soup, sour cream, onion, milk, seasoned salt, garlic, and 1/2 cup cheese-flavored crackers in a slow cooker.
- Cook on Low, stirring occasionally until cooked through, about 2 hours. Stir and top with remaining 1/2 cup cheese-flavored crackers.

EASY CHEESY POTATOES
This is a great side dish to any barbecue. Potatoes are grilled with peppers and onions in a foil package. It cooks on the grill along with your favorite barbecued main dish.

Steps:
- Preheat grill for medium-high heat.
- Coat one side of a piece of aluminum foil large enough to hold all the potatoes and vegetables with cooking spray. Place the potatoes, onion, and green bell pepper in the center of the foil, and season with salt and pepper to taste. Then place small pats of the butter or margarine over the vegetables.
- Carefully seal all the edges of the foil around the vegetables to form a packet. (Note: Double wrapping will help to prevent burning.)
- Place packet on the preheated grill, and grill for 20 minutes. Turn packet, and grill for 10 more minutes.
- Carefully open packet, check for tenderness with a fork. If tender, sprinkle the cheese over the vegetables and allow it to melt. Transfer to a platter, and serve with your main entree.

- Preheat oven to 375˚F and grease a 9x13 inch baking dish.
- If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
- Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
- Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
- Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

- Preheat oven to 350°F.
- Slice the potatoes very thin.
- Place half of the sliced potatoes in a oiled 2 quart casserole dish.
- Place half of the sliced onions on the next layer.
- On top of that sprinkle half of the salt, pepper, and dried parsley.
- Now place a layer of 1/2 cup of your cheddar cheese.
- Repeat the last four steps (3-6) making another layer of each.

- Scrub potatoes thoroughly.
- Cut potatoes into 1/4 inch thick slices.
- In a 1 1/2 to 2 quart casserole, combine potato slices and water.
- Microwave on high, covered, for 9 to 11 minutes or until potatoes are just tender, stirring after every 3 minutes.
- Drain potatoes well.
- Dollop cheese onto potatoes.
- Cook uncovered on high for 45-60 seconds until cheese melts.
- Gently stir cheese into potatoes.
