- Preheat the oven to 350 degrees F (175 degrees C). Cut 2 sheets of parchment paper to fit on a baking sheet.
- Place 1 sheet of parchment on a flat work surface. Gently place 1 sheet of phyllo dough on top. Brush lightly with butter right up to the edges, being careful not to tear the sheet. Place another sheet of phyllo on top. Press down to remove any air pockets, and brush with butter. Repeat 3 more times. On the 5th sheet, brush with egg white instead of butter. Sprinkle with 1/2 of the bagel seasoning.
- Cut the phyllo into 40 squares, or into the shape of your choice, using a pizza cutter. Slide the whole parchment sheet onto the baking sheet.
- Bake in the preheated oven until lightly browned, 6 to 8 minutes. Keep a close eye on them, as they tend to brown quickly. Remove parchment sheet from baking sheet and let cool.
- Repeat process with remaining ingredients. Let cool and serve immediately, or store at room temperature in a sealed container.

GRILLED CHEESE WITH EVERYTHING BAGEL SEASONING

- Mix together the cream cheese and scallions until well combined.
- Melt the butter in a large skillet over medium heat. Add the bread slices and toast until lightly browned on one side; remove to a cutting board, toasted-side up (the toasted sides will become the insides of your sandwich). Spread all four slices with scallion cream cheese, then sprinkle with Everything Bagel Seasoning. Top two of the slices with mozzarella, sliced tomato and red onion. Press the capers into the cream cheese on the other two slices. Form sandwiches.
- Add a bit more butter to the skillet if it seems dry. Place the sandwiches in the skillet, cover with a lid and cook until toasted on the bottom, 3 to 5 minutes. Flip the sandwiches and cook, covered, until toasted on the reverse side and the mozzarella is melted, about another 2 minutes. Sprinkle with a pinch of salt, cut in half and serve.

- For the brioche: In the bowl of a stand mixer fitted with the dough hook, whisk the yeast and sugar together with the warm milk. Allow to sit for 5 to 7 minutes in a warm, draft-free place while the yeast blooms and forms a foamy raft on the surface. When this happens, your yeast is alive and ready to go.
- Whisk the eggs into the yeast mixture until thoroughly combined. Add the all-purpose flour, bread flour and salt. Start the mixer on low speed and mix for 2 minutes, until the dough begins to come together into a shaggy mass. Increase the speed to medium and mix the dough for 2 more minutes more to activate the gluten.
- Add the softened butter 1 tablespoon at a time, allowing each addition to completely incorporate before adding the next. The dough will get very sticky. Continue mixing until the dough is shiny and smooth, 3 minutes.
- Transfer the dough to a well-greased large bowl, and cover with plastic wrap or a kitchen towel. Allow the dough to rise in a warm, draft-free place for 1 hour.
- After 1 hour, remove the plastic and scoop the dough onto a lightly floured surface. Punch down the dough by pressing it firmly with your hands until it deflates back to its original size. Spread it out slightly and fold the dough into thirds like a business letter, bringing the top half over the center and the bottom half up and over the center. Place the dough back into the greased bowl, seam side down. Cover with plastic wrap and allow to chill in refrigerator for 6 hours or overnight.
- Remove the chilled dough and punch down once more. Divide the dough into 4 equal pieces, then divide each piece into 6 smaller pieces for a total of 24. Fold each piece of dough in towards itself and shape into a tight ball.
- For the filling: Mix the Parmesan and bagel seasoning together in a medium bowl. Put the Gruyere in a separate bowl.
- Grease a 12-cup bundt pan with a layer of butter or shortening. Sprinkle with a layer of the Parmesan seasoning mixture, about 1/2 cup, followed by a layer of Gruyere, about 1/2 cup.
- Dip each dough ball in the melted butter and roll in the Parmesan mixture to coat completely. Place each dipped dough ball in the prepared pan. Once you have a layer in the bundt pan, sprinkle with another 1/2 cup Gruyere, then continue topping with another layer of dipped brioche balls. Continue this process until you have 3 layers of dough balls. Top with any remaining Gruyere and Parmesan seasoning mixture.
- Cover the pan loosely with plastic wrap or a kitchen towel and allow to proof in a warm place until puffy and doubled in size, about 40 minutes. Preheat the oven to 350 degrees F.
- Bake until golden brown, 35 minutes.
- For the dipping sauce: Add the cream cheese to the bowl of a stand mixer fitted with the paddle attachment. Beat the cream cheese on medium-low speed until completely smooth. Add the sour cream, lemon zest, parsley, dill and a pinch of salt. Mix until smooth. Garnish with scallion greens.
- Turn the monkey bread out onto a platter while still warm and serve with the dipping sauce.

- Make the dough: Add the water, olive oil, maple syrup, and sourdough starter to a medium bowl. Use clean hands or a rubber spatula to stir until the starter is dissolved.
- Add the bread flour, white whole wheat flour, salt, dried onion, and dried garlic and mix with your hands until there are no dry spots. Continue to vigorously mix for 3-4 more minutes, until cohesive.
- Set a bowl of water nearby. Dip your hand in the water to prevent sticking. Use your wet hand to stretch the dough from the edge of the bowl upwards, then fold toward the center. Repeat a total of 8-10 times, rotating the bowl slightly after each fold.
- After the folds, carefully lift the dough up, flip it over, place it back in the bowl, and tuck the edges underneath. Scrape down the edges of the bowl, then cover with the kitchen towel and let rest in a warm place for 45 minutes. Repeat the stretching and folding process 2 more times, waiting 45 minutes after each folding session before beginning again. After finishing the folds, let the dough rest at room temperature for 2½ hours. You should see signs of fermentation in the form of an increase in volume and a soft, pillowy feel to the dough. Cover the bowl and place the dough in the refrigerator for 12-18 hours.
- Make the everything seasoning mix: Combine the sesame seeds, poppy seeds, fennel seeds, caraway seeds, red pepper flakes, and coarse salt in a wide, shallow bowl. Mix until evenly distributed.
- After the dough has rested overnight, lightly flour a work surface. Carefully turn the dough out on the surface and arrange into a rough rectangle, being careful not to flatten the dough and lose the trapped gas. Cut into 4 equal pieces.
- Use floured hands to shape each piece of dough by folding the top two corners toward the center, then rolling into a tight log. Pinch the ends closed.
- Place the everything seasoning mixture and a baking sheet lined with parchment paper nearby. Wet a clean kitchen towel and place on a plate. Carefully roll a dough log on the wet towel, then in the everything seasoning mix to coat entirely, then place on the baking sheet. Repeat with the remaining dough, spacing the loaves at least 2 inches apart.
- Let the dough proof for 1½-3 hours (depending on temperature), until puffed and a finger poked into the dough slowly pops back.
- Place a Dutch oven or a cast iron combo cooker in the oven. Preheat the oven to 500°F (260°C).
- Once the oven is preheated, carefully remove the pan from the oven. Use a bread lame, razor blade, or sharp knife to score the top of 2 of the dough logs to allow steam to escape while baking. Use a spatula to carefully transfer the scored mini loaves to the hot pan. Cover and return to the oven. Bake for 15 minutes, then uncover, reduce the oven temperature to 475°F (245°F), and bake for another 15-20 minutes, until amber brown. Increase the oven temperature to 500°F (260°C) and repeat the process with the remaining 2 loaves. Note: If you don't have a Dutch oven or a combo cooker, preheat the oven to 450°F (230°C). Score all 4 loaves, then bake on the baking sheet for 30-35 minutes, until golden brown.
- Transfer the loaves to a wire rack and let cool completely before slicing.
