Based on Quaker Oats' Vanishing Oatmeal Cookies Recipe. I made them a few times, and I never thought they were quite good enough. They weren't fluffy enough and they didn't have nearly enough oatmeal! I found out one day when I ran out of white flour, that whole wheat tastes great in oatmeal cookies. I like to pulse the oats in the food processor a few times so they're extra fluffy, but instant oatmeal works very well.

Number Of Ingredients 13

1/2 lb butter, softened (I recomend Crisco butter-flavored shortening)
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
3/4 cup unbleached white flour
3/4 cup whole wheat flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
4 cups instant oatmeal
1 cup dried cranberries, plumped in warm water
1 cup walnuts, chopped

Steps:

  • Heat the oven to 350.
  • Beat together the butter, brown sugar, and granulted sugar until it's uniform.
  • Mix in the two eggs and vanilla.
  • In a seperate bowl, combine te white and wheat flours, baking soda, cinnamon, and salt.
  • Mix the flour mixture into the egg mixture.
  • Stir in the oats, cranberries, and walnuts.
  • Drop in heaping tablespoons onto a Pam'ed cookie sheet.
  • Bake for about 15 minutes until the cookie's have browned.
  • Cool on a wire rack.

1/2 cup (1 stick) plus 6 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, raisins, nuts, and chocolate chips; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
3/4 cup packed brown sugar
2 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
2 1/2 cups quick-cooking rolled oats
1 cup unsweetened coconut
1 cup corn flakes or 1 cup other non-sugar-coated cereal
3/4 cup M&M's plain chocolate candy
2 ounces semisweet chocolate, chopped

Steps:

  • In bowl, whisk together flour, baking soda, baking powder, cinnamon and salt; set aside.
  • In separate large bowl, beat butter, brown sugar and granulated sugar until light and creamy,1 minute.
  • Beat in egg and vanilla until combined.
  • Using wooden spoon, stir in flour mixture, oats, coconut, cereal, candy-coated chocolate pieces and semi-sweet chocolate until combined. (Dough will seem crumbly).
  • Form dough into 2 tablespoon balls and place 2 inches apart on parchment-lined cookie sheets.
  • Bake in top and bottom thirds of 350°F oven, rotating and switching pans half-way through,(to ensure even cooking) for about 12 minutes or until edges and tops begin to brown.
  • Remove from oven; press center of each cookie with bottom of glass tumbler; transfer to racks and let cool.

1 cup butter (2 sticks) or 1 cup margarine (2 sticks)
2 cups old fashioned oats
2 1/2 cups flour
2 eggs
1 1/4 cups flaked coconut
1 1/2 cups white sugar
3/4 cup light brown sugar
1 (10 -12 ounce) bag chocolate chips or 1 cup raisins
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Cream butter and sugars together. Add vanilla, eggs and spices.
  • Add rest of ingredients except for chocolate chips if using.
  • Mix well.
  • Add chocolate chips.
  • Drop large spoonfouls about 3" apart on large greased cookie sheet or ungreased parchment paper (works much better!).
  • Push tops down slightly with back of a spoon.
  • Bake in preheated oven at 350 for about 10-12 minutes or when edges are turning brown and centers are almost set.

My boyfriend and I wanted Oatmeal Raisin Cookies one night. While I like cranberries, bananas, chocolate, and raisins he wanted cherries, blueberries, and pecans. So, instead of making 2 different batches I just mixed everything in one big bowl! So yummy! Note...my boyfriend likes his cookies a little undercooked so I cooked his for 11 minutes, while I cook mine for 14 minutes.

3/4 cup Splenda Sugar Blend for Baking
3/4 cup brown sugar
1/4 cup applesauce
1 1/4 cups white flour
1/2 cup soy flour
1/4 cup flax seed meal
1 teaspoon baking soda

1/4 teaspoon nutmeg
1/3 cup Egg Beaters egg substitute
2 teaspoons vanilla
1/4 cup 1% low-fat milk
2 cups Quaker Oats (non-instant)

  • Mix the first 4 ingredients.
  • Add in the cinnamon, egg beater and vanilla and milk.
  • Mix the flours, meal, baking soda and cinnamon and nutmeg in a seperate bowl.
  • Add the dry ingredients to the wet ingredients.
  • add the milk.
  • Then add the oats, raisins and cranberries.
  • Using a scoop (no bigger than 1/4 cup serving) place these on a non-stick pan and bake for 10-15 minutes (depends on how goey in hte middle you want them) at 350 degrees.
  • Let cool for 10 minutes before eating.

I came up with this recipe when I looked through my baking drawer and saw small amounts of different cookie "add-ins". They travel well and were a big hit when I sent them to a soldier friend in Afghanistan.

1 c margarine or butter, softened
1 c brown sugar, firmly packed
1 c sugar
2 large eggs
1 tsp vanilla extract
2 c quick cooking oats
2 c flour
1 tsp baking soda
1 tsp baking powder
3/4 tsp salt
1/2 c golden raisins
1/2 c dried cranberries
1/2 c semi-sweet chocolate chips
1/2 c chopped walnuts
1/2 c coconut, flaked

Steps:

  • 1. Beat margarine, sugars, eggs and vanilla for 5 minutes.
  • 2. Combine dry ingredients, add slowly to creamed mixture. Stir in fruits, chips and nuts.
  • 3. Drop by teaspoons onto ungreased baking sheets. Bake at 350 degrees for 12-14 minutes. Cool on racks. Makes 4 1/2 dozen.
  • 4. NOTES: You can use any favorite combination of chips, dried fruit, nuts and/or coconut in these cookies, as long as the total amount adds up to 2 1/2 cups.
