BOURBON PECAN SMASHED SWEET POTATOES

Steps:
- Bring a medium pot of water to a boil. Add sweet potatoes and cook 12 to 15 minutes until very tender. Drain sweet potatoes in a colander. Return pan to medium heat. Add butter to the pan. When butter melts, add nuts and toast for 2 minutes. Add sugar and let it bubble. Add bourbon and cook out alcohol, 1 minute. Add orange juice and the cooked sweet potatoes. Smash with a masher and season the sweet potatoes with nutmeg, salt and pepper.
ESPRESSO-BOURBON STEAKS WITH MASHED SWEET POTATOES
A favorite recipe from National Cattlemen's Beef Association - The Beef Checkoff. We don't have steaks often, but this sounds so good that I might have to run out to the market for some tenderloins. I may also make this dish for my Christmas Eve dinner. This should "wow" my family and be a nice break from my traditional meal.

Steps:
- Combine all sauce ingredients, except pepper, in a small saucepan; bring to a boil. Reduce heat and simmer, uncovered 12-15 minutes or until sauce is thickened and reduced by about half, stirring occasionally. Stir in pepper. Keep warm.
- Prepare mashed potatoes by boiling potatoes in water with 1 teaspoons salt. Cover with water; bring to a boil. Cook 4-5 minutes or until potatoes are tender. Drain. Combine potatoes, 2 tablespoons butter, salt and pepper. Beat until mashed and smooth.
- Meanwhile, press coarsely cracked pepper on both sides of steaks. Place steaks on grill over medium coals. Grill, uncovered, 13-15 minutes for medium rare doneness, turning once.
- Evenly divide sauce onto 4 plates. Place steak on top of sauce. Serve with Mashed Sweet Potatoes and green beans (if desired).

Place steaks in skillet; cook 10 to 13 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. 3. Meanwhile, prepare Mashed Sweet Potatoes. 4. Evenly divide sauce onto 4 plates. Place steak on top of sauce. Serve with Mashed Sweet potatoes and green beans. Mashed Sweet Potatoes: Place 9 ounces peeled and cubed sweet potatoes and 1 teaspoon salt in large saucepan. Cover with water; bring to a boil. Cook 4 to 5 minutes or until potatoes are tender. Drain. Combine potatoes, 2 tablespoons butter, 1/8 teaspoon salt and 1/8 teaspoon black pepper. Beat until mashed and smooth. Test Kitchen Tips To broil, place steaks on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 13 to 16 minutes for medium rare to medium doneness, turning once. To grill, place steaks on grid over medium, ash-covered coals. Grill, covered, 10 to 14 minutes (over medium heat on preheated gas grill, 11 to 15 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
STEAKHOUSE MASHED SWEET POTATOES
My family and I were traveling through Southern California and we stopped at a random steakhouse and had mashed sweet potatoes JUST LIKE THESE. I guessed on the ingredients and they turned out fabulous.

Steps:
- Combine sweet potatoes, milk, brown sugar, vanilla and nutmeg in a large saucepan.
- Bring to a slow boil, reduce, cover and cook over low heat stirring the sugar & milk mixture onto the potatoes.
- Cook for approximately 30-45 minutes.
- Remove from heat, mash in a large bowl combining the sugar, milk vanilla mixture into the potatoes.
- For more buttery potatoes, add ½ teaspoon of butter while mashing.
- Shake ground nutmeg over potatoes to taste.
- If you want a slightly browned version, place potatoes in Pyrex pan and bake for 10 minutes at 350°F for a crispy outer layer.
