The lovely flavor & smooth texture of the avocado seem to be finding their way into more desserts as time goes by. Here is yet another by Yohanni Johns from "Dishes From Indonesia" that is so easy to fix & sounds divine! Enjoy! (Time does not include time for avocado mixture to chill in the freezer)

Number Of Ingredients 4

1 large avocado (peeled, pit removed & flesh mashed)
2 1/2 tablespoons lemon juice
2 tablespoons sugar
1 cup vanilla ice cream

Steps:

  • Using a hand-held mixer or immersion blender, add lemon juice & sugar to the mashed avocado flesh & mix well.
  • Combine avocado mixture w/ice cream & beat till smooth.
  • Place in a freezer to chill for 1 to 1 1/2 hrs & stir every 30 min, but do not freeze.
  • To Serve: Divide mixture between 4 sml dessert bowls & serve immediately.
  • NOTE: The recipe did not suggest a garnish, but to my surprise I discovered during ZWT that avocado & chocolate are just wonderful together, so I would add chocolate shavings to the top of ea dessert.

This is something I made up on the fly one day for breakfast to try and use up an overly ripe avocado. Freeze for 1 hour for a more ice cream-like treat.

1 ripe avocado - peeled, pitted, and diced
¼ cup heavy whipping cream
½ teaspoon liquid stevia
¼ teaspoon vanilla extract
¼ teaspoon ground cinnamon

Steps:

  • Mash avocado in a bowl. Add heavy cream, stevia, vanilla, and cinnamon; mix thoroughly.
  • Refrigerate avocado mixture for 1 hour before serving.

This recipe is being posted for ZWT II & my source is asianonlinerecipes.com. Since I have a special fondness for Tex-Mex fare, I'm no stranger to using avocado & this is amazingly simple. I must admit I've never made an avocado dessert & didn't even know you could. (Stated time does not include chilling time)

3 large avocados (fully ripe)
1 cup cream
caster sugar (to taste only)
rum (optional)

Steps:

  • Cut avocados in half lengthways. Remove seeds & reserve them. Scoop pulp from shells & mash smoothly w/a fork. Discard shells.
  • Add sugar to taste & stir in the cream.
  • Put in serving bowl, return seeds to the pulp, cover tightly w/plastic wrap & chill before serving. NOTE: The presence of the seeds in the puree is said to keep the avocado from discoloring, but the plastic wrap is always used as well.
  • To Serve: If desired, extra whipped & sweetened cream can be piped over the top of the dessert. While many favor adding rum for flavor, the delicate avocado flavor may be allowed to stand alone -- or -- the mixture can be divided & served both ways.
  • Personal Note: I would reserve the avocado shells & use them to serve this dessert.

This dessert is delectable! It makes for a very light dessert that everyone will be asking for seconds of.

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted margarine
8 ounces cream cheese
1/4 cup sugar
2 tablespoons milk
1 1/2 cups Cool Whip
2 (3 ounce) packages instant chocolate pudding mix
3 1/2 cups milk
1 1/2 cups Cool Whip

Steps:

  • Crust: Combine first three ingredients (graham, sugar and marg).
  • Press firmly into bottom of 13x9 pan.
  • Chill 15 minutes.
  • 1st Layer: Beat cream cheese, 1/4 cup sugar and milk till smooth.
  • Fold in 1 1/2 c. Cool Whip (1/2 a container).
  • Spread over crust.
  • 2nd Layer: Beat pudding with 3 1/2 cups of milk for 2 minutes.
  • Spread over cream cheese layer.
  • Chill hours or overnight.
  • 3rd Layer: Spread rest of Cool Whip over top, or before serving put dollop of Cool Whip on top of each piece.

Easy Rhubarb pudding type dessert. I have not tried this. It is for a board request. The 4 hour prep time is only meant for the chilling in the refrigerator :)

4 cups diced rhubarb
1/2 cup granulated sugar
1 1/2 cups water
1 (6 ounce) package strawberry gelatin
1/2 cup whipped cream

Steps:

  • Mix rhubarb, sugar and ½ cup water in saucepan.
  • Stir occasionally and bring to a boil.
  • Cover saucepan and cook for 8 ­ 10 minutes.
  • Continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
  • Remove from heat and add 1-cup cold water.
  • Allow to cool, then place in refrigerator to chill until partially set.
  • Remove from refrigerator and whip mixture with electric beater until fluffy.
  • Fold in whipped cream.
  • Garnish with fresh strawberries (whole or sliced).

½ cup milk
¼ cup white sugar
½ teaspoon vanilla extract

Steps:

  • Mash avocado with an electric mixer, or use a food processor. Blend in the milk, sugar and vanilla until smooth. Chill for about 20 minutes before serving.
