3 tablespoons cider vinegar
3 tablespoons raspberry jam
1 tablespoon vegetable oil
3 cups torn escarole or leaf lettuce
2 small pears, cored
1 tablespoon chopped hazelnuts (filberts)

Steps:

  • In small jar with tight-fitting lid, shake dressing ingredients. Set aside.
  • Arrange escarole on 6 individual salad plates. Thinly slice pears; arrange slices over lettuce. Sprinkle hazelnuts over salads; drizzle with dressing. Serve immediately.

1 tablespoon whole-grain mustard
1 lemon, juiced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 large head escarole, washed and hand torn

Steps:

  • Whisk together the honey, whole grain mustard, lemon juice, and then stream in the olive oil. Season with salt and pepper and toss with the escarole.

Steps:

  • Make lemon-basil oil:
  • Mix 1/3 cup olive oil, a strip of lemon zest, 8 torn basil leaves and a pinch of salt; infuse 2 hours. Soak 1/2 thinly sliced red onion in water for 10 minutes to mellow the bite. When ready to serve, toss 1 head chopped escarole, the onion slices, 2 sliced celery stalks, 3/4 cup chopped green olives and a few tablespoons olive juice, 2 segmented lemons and 1/4 cup each toasted pine nuts and golden raisins in a serving bowl. Discard the zest from the infused oil, drizzle over the salad and season with salt and pepper.

1 1/2 teaspoons Dijon mustard
3 tablespoons red-wine vinegar
1/2 cup plus 1 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
4 slices peasant or sandwich bread, crusts removed
1 head escarole, stem end removed
1 ripe Bosc pear
3 stalks celery, trimmed and cut crosswise into 1/4-inch-thick slices

Steps:

  • In a small bowl, whisk together mustard and red-wine vinegar. Slowly whisk in the olive oil; season with salt and pepper. Set vinaigrette aside.
  • Heat the broiler. Toast the bread slices until golden brown on both sides, 2 to 3 minutes per side. Set toast aside.
  • Separate the escarole leaves, and rinse well under cold running water; pat dry. Roughly chop leaves, and transfer to a large bowl.
  • Cut the pear in half lengthwise; using a melon baller, remove core, seeds, and stem. Thinly slice pear halves lengthwise; add to bowl.
  • Add celery pieces, and drizzle the vinaigrette over the salad. Toss gently to combine. Divide among four salad plates; serve with toast.

This Poached Chicken, Pear, and Walnut Salad is a rendition of a Waldorf salad. Its lighter and crisper, featuring bitter escarole leaves, creamy shaved Pecorino Romano, and Bosc pear slices.

1 carrot, cut into thirds
1 stalk celery, cut into thirds
1 clove garlic
Coarse salt and freshly ground pepper
2 8-oz boneless, skinless chicken breast halves
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
4 large escarole leaves, torn
1 Bosc pear, sliced
1 shallot, thinly sliced
1/2 cup toasted walnuts, coarsely chopped
3 tablespoons (1/2 oz) shaved Pecorino Romano

Steps:

  • In a large pot, add carrot, celery, and garlic and cover with water by two inches. Bring to a boil. Season with salt. Reduce to a simmer and add chicken, flipping halfway, until cooked through, 15 to 18 minutes. Remove and let cool. Slice.
  • Whisk vinegar and oil; season with salt and pepper. Drizzle half vinaigrette over chicken slices. Divide escarole, pear, shallot, and walnuts among four plates. Top with chicken and Pecorino.
  • Season with salt and pepper. Drizzle with remaining vinaigrette.

1 head escarole, leaves separated and washed and spun dry
1 small head butter lettuce, leaves separated and washed and spun dry
1 small onion, peeled and slice thin
12 ounces marinated artichokes
1/2 firm pear, washed and sliced with a vegetable peeler super thin
1/4 cup dried cherries, rough chopped
1/4 cup pine nuts
4 ounces goat cheese, sliced I used Blueberry coated cheese use what you favor
2 ounces goat cheese
1 -3 garlic clove, roasted if you have
2 teaspoons prepared stone ground mustard
2 anchovies (optional)
salt
black pepper
2 -4 drops hot sauce
3/4 cup mayonnaise
2 tablespoons white balsamic vinegar
2 -4 basil, leaves

Steps:

  • Place escarole and butter lettuce in a large salad bowl.
  • Drain artichokes reserving 1 tablespoon of the marinade. Place it into blender. Add the dressing ingredients to the blender and blend till smooth.
  • Season to your likings by adding more vinegar or seasonings. chill while preparing salad.
  • Toss salad with artichoke hearts, onion slices and pear slices.
  • Top with cherries and toasted pine nuts.
  • Cool and scatter on salad.
  • Placed sliced goat cheese on salad. Or crumble the cheese over salad.
  • Pour over salad and enjoy.
