ASPARAGUS AND ENGLISH PEA CASSEROLE

An old recipe of my grandmother's. Salt and pepper the vegetables to taste as you are layering them if desired.

1 (16 ounce) can English peas, drained
1 (16 ounce) can asparagus, cuts drained
1 (8 ounce) jar sliced mushrooms, drained
1 can cream of mushroom soup
1/2 cup cracker crumb
1 cup shredded cheddar cheese

Steps:

  • In a greased casserole dish, layer half of the peas, asparagus cuts, mushrooms, soup, cracker crumbs, and cheddar cheese.
  • Repeat layers.
  • Bake at 350 degrees for 30 minutes.

1 (10 1/2 ounce) can cream of celery soup
3 hard-boiled eggs, chopped
1 (14 ounce) can English peas, drained
1 cup cheddar cheese, shredded
cracker crumb

Steps:

  • Mix all ingredients except cracker crumbs.
  • Place in casserole dish that has a cover.
  • Top with cracker crumbs.
  • Cover and bake at 350 degrees Fahrenheit for 30 minutes.

Very easy and tasty. To reduce carbs, rinse English peas with cold water and replace butter crackers with a sleeve of saltines. Can also add a small can of drained mushrooms for more flavor.

1 can(s) english peas with pearl onions, drained
1 jar(s) small drained pimientos
1 can(s) cream of celery soup
1 c cheddar cheese, shredded
1 pkg butter crakers, crushed
1 stick butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. Mix peas, pimientos, and celery soup.
  • 2. Pour mixture into greased 1 1/2 qt. casserole dish, cover with cheese.
  • 3. Mix melted butter and crushed crackers. Spread over top.
  • 4. Bake until bubbly. About 30 minutes

6 slices bacon
1 can (15 oz.) English peas
1 can (15 oz.) kernel corn
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 tablespoon pimento
1 can (8 oz.) water chestnuts, sliced
1 can (10 oz.) cream of chicken soup
1 container (8 oz.) sour cream
1 pkg (8 oz.) Kraft Shredded Cheddar Cheese
1 stick margarine
1 stack Ritz Crackers, crushed

Steps:

  • Preheat oven to 350°F. Chip bacon and fry until crispy. Drain on paper towel.
  • Drain the peas and pour into an 8 x 12-inch casserole dish. Drain the corn and spread over the peas.
  • Mix together the onion, bell pepper, pimento, water chestnuts, soup, sour cream, bacon, and cheese. Stir until well mixed. Spread over the peas & corn.
  • Melt the margarine in a medium size bowl, add the crushed crackers, and stir until crackers are all moistened. Spread the cracker/margarine mixture evenly over the top of the casserole.
  • Bake for 35-40 minutes, or until golden brown.

1 cup chopped celery
1/2 cup chopped onion
1/2 cup butter
1 can water chestnut, chopped
1 (10 3/4 ounce) can cream of mushroom soup
1 3/4 cups milk
buttered breadcrumbs

Steps:

  • Cook peas for 5 minutes.
  • While peas are cooking, saute celery, onions and water chestnuts in butter.
  • Add cream of mushroom soup, milk and peas to above saute ingredients.
  • Put in a 9x12 pan and top with buttered breadcrumbs.
  • Bake at 350 degrees for 30 minutes.

1 (8-ounce) can sliced water chestnut
1 (3/4-ounce) package Italian seasoning mix
1/2 stick butter, melted

Steps:

  • Mix all ingredients, except butter, and place in a large, oblong baking dish. Pour butter on top. Cover and bake at 350° for 45 minutes.
